  • Looking for a ?cheesecake? recipe
    My mother made what she called a cheesecake in about 1954; she may have gotten the recipe out of a woman's magazine; it definitely was not a New York style - it had a graham cracker crust with some sprinkled on the top, and a light lemon flavor, and the filling had kind of a light & fluffy/creamy texture, not dense. Anybody have a recipe that might fit?

    Busy-Day Lemon Cheesecake

    Makes 1 pie
    1 8oz. pkg. Cream cheese (or Neufchatel), softened
    2 c. milk
    1 box Jello Lemon Instant Pudding
    1 8" ready-made graham cracker pie crust
    Graham Cracker crumbs (a Tbsp. or so) for topping


    1. Blend the softened cream cheese with 1/2 c. of the milk.
    2. Add the remaining milk and the pudding mix. Beat slowly with mixer until well mixed, about 1 minute.
    3. Pour into graham cracker crust.
    4. Sprinkle with graham cracker crumbs, then chill at least one hour before serving

    This is the one my SIL gave me YEARS ago and fits the discription:

    Cream Cheese Torte
    Mix 1 pkg. lemon jell-o with 1 cup hot water. Leave set till it starts to jell.
    Whip 1 can CHILLED evaporated milk till stiff.
    Add 1 softened pkg. (8 oz.) cream cheese. and 1 cup sugar. Add jello mixture slowly to incorporate.
    Pour over graham cracker crust. You may add topping if desired.

    This tastes just like the "cheesecakes" on the Ponderosa and Old Country Buffet dessert bars.
