  • ISO: recipe with mashed potato and lasagna noodles.
    My grandma (Russian-German) used to make a dish with layered mashed potato, lasagna noodles, and a buttery cream sauce. It may have had other stuff, I can't remember. Also, she called it varinik or vadinik, something like that. Feeling nostalgic and would like to try to make this- anybody heard of it?

    This is the recipe I use from Company's Coming

    LAZY PEROGY CASSEROLE
    15 lasagne noodles
    Cook in boiling water til tender, drain then line a 9x13 pan.
    2c. cottage cheese
    1 egg
    1/4tsp. onion salt
    Combine then spread over noodle layer. Put another layer of noodles over this.
    1c. grated cheddar
    2c. mashed potato
    1/4tsp. salt
    1/4tsp. onion salt
    1/8tsp. pepper
    1c. butter or margarine
    1c. chopped onions
    Mix cheese with potato, salt, onion salt and pepper. Spread over noodles. Cover with another layer of noodles. Melt butter in pan and saute onions until clear and soft. Pour over noodles, cover and bake 30 minutes at 350. Let stand 10 minutes before cutting and serve with sour cream.

    LAZY PEROGY CASSEROLE
    15 lasagne noodles, the kind you have to cook.

    3 cups drained, finely chopped sourkraut
    1 med onion, diced
    6 slices of bacon, diced

    1 cup shredded cheddar cheese
    2 cups mashed potatoes
    1/4 tsp salt
    1/4 tsp onion salt
    1/8 tsp pepper

    1/4 cup butter or marg
    1 cup chopped onions

    Cook noodles, drain. Line bottom of a 9 by 13 inch pan with a layer of noodles. Use 5 noodles.
    Cook bacon till crispy and remove from pan. Drain all bacon drippings but a tablespoon or two. Saute the onion till almost tender. Add the sourkraut and saute for 20 min. Add the bacon to the sourkraut mix. Top the first layer of noodles with the sourkraut mixture.
    Cover with another layer of 5 noodles.
    In a bowl, mix cheddar cheese with potatoe, salt, pepper and onion salt. Spread over noodles. Cover with layer of noodles.
    Melt butter in a skillet. Saute onions until tender. Pour over noodles. Cover. Bake at 350 for 30 min. Let stand 10 min before cutting. Serve with sour cream.

    Thanks! That first one sounds pretty close. I remember sauteed onion, I think. Never heard it called perogy. Polish?

    VARENYKY (Ukrainian) OR Peirogies (Polish-Russian)

    Dough:
    Mix 4 cups flour with 2 tsp. salt. Add 2 eggs and 1 1/3 cup of cool water. Knead lightly and cover with a kitchen towel. Place aside.

    Fillings:

    POTATO:

    Mash 8 large cooked potatoes. Add 2 large chopped onions, which have been sauteed in butter or vegetable oil. Season with pepper and salt.

    CHEESE:

    Mix 4 cups farmer cheese, 8oz cream cheese, 2 eggs and salt to taste. You can add a little sour cream if the mixture is too dry.

    SAUERKRAUT:

    Rinse off 3 lbs. of sauerkraut with hot water to remove the salt. rinse with cold water and squeeze till dry. Chop very fine. Sautee 2 large onions in butter or vegetable oil and add the sauerkraut. Sautee in a covered pan for 10 minutes. Season to taste. Let cool.

    Potato and Cheese:
    1 tablespoon finely chopped mild onion
    2 cups of cold mashed potatoes
    1 to 1 1/8 cup of cottage cheese
    2 tbs. butter
    salt and pepper to taste

    Cook the finely chopped onion along with the butter until it is opaque and tender. Remove from heat and add the potatoes and cheese. Season to taste with pepper and salt. Fill the varenyky.

    Mushroom:
    1 finely chopped small mild onion
    2 to 3 tbs. butter
    2 cups chopped cooked mushrooms (Ukrainians prefer Boletus mushrooms, usually available dried on strings or in cups in any Ukrainian specialty store such as "Surma" in NYC)
    2 egg yokes
    salt and pepper to taste

    Cook the onion along with the butter until it is opaque and tender. Add in the mushrooms and cook together for about 10 minutes. Season to taste with salt and pepper. Remove from the stove and beat in the egg yolks. Cool the mixture thoroughly before filling the varenyky. Chopped dill may also be added for some extra flavor if desired.

    Fruit
    2 cups of any fruit such as pitted sweet cherries, pitted plums, any fruit in season, stewed pitted plums, or even a thick jam
    sugar
    ground cinnamon
    flour

    If you are going to use fresh berries such as cherries, sweeten the fruit to taste with sugar or cinnamon. If you are using pitted plums, fill them with some sugar and cinnamon as well. Add a sprinkling of flour to thicken the juices that will appear when the varenyky are filled with the fruit mixture. The flour will prevent the juices from leaking out. Once you have cooked the fruit-filled varenyky, sprinkle them with sugar and browned buttered crumbs, or use a quality sour cream with them.


    To Form the Varenyky:

    1. Roll the dough thin. Cut rounds with a cookie cutter or the open side of a water glass.

    2. Holding the round in your hand, place a spoonful of the filling in the center and fold in half.

    3. Press the edges to seal.

    4. Lay on a dry kitchen towel and cover.

    Cooking the Varenyky:

    1. Boil a large pot of water and drop them in a few at a time.

    2. Boil rapidly for about 4 minutes. (they should have risen to the top).

    3. Place them into a collander and rinse with hot water.

    4. Drain

    5. Place onto a plate and coat with either melted butter, sauteed onions with bacon, or a dollop of sour cream on the side.

    REMEMBER: NO BACON, SOUR CREAM, ETC ON CHRISTMAS EVE. But its fabulous the next day!!!!

    PIEROGI MAGIC

    12 lasagna noodles
    1/3 cup vegetable oil
    4 to 5 medium onions, finely chopped
    ½ teas. black pepper
    1 ½ cups shredded Cheddar cheese
    6 cups warm seasoned mashed potatoes (instant potatoes are fine)

    Preheat oven to 350F. Cook the noodles according to the package directions and drain; set aside. Meanwhile, in a large skillet, heat the oil over medium-high heat. Sauté the onions for 8 to 10 minutes or until golden brown. Reserve ½ cup onions for topping. Add the remaining onions, pepper, and cheese to the potatoes and mix well. Place 3 noodles on the bottom of a 9” x 13” baking dish that has been coated with nonstick vegetable spray. Spread the noodles with one-third of the potato mixture. Layer with 3 more noodles and continue until there is a total of 4 layers of noodles and 3 layers of potatoes (with a noodle layer on the top). Spread the reserved onions on top. Cover with aluminum foil and bake for 30 minutes or until heated through.
