ISO: How can I make Mexican Cornbread out of a Jiffy mix???
I have boxes and boxes of Jiffy corn bread mix. I'd like to make Mexican cornbread to go with tonight's Taco Salad for dinner. Any ideas? TIA

This is from my latest Taste of Home magazine. Made this and loved it and it was so moist! I did not have jalapenos, so, it worked out fine without for us.
About the onion, think I will either saute it the next time or finely mince it. (JMHO~just my humble opinion)
Mexican Corn Bread
I work at an elementary school, and a couple times a year we have a gathering where everyone brings a favorite dish to pass. A friend shared this delicious corn bread and it was a big hit. --Sandy G., Spring, Texas
2 packages (8-1/2 ounces each) corn bread/muffin mix
1 medium onion, chopped
2 cups (8 ounces) shredded cheddar cheese
1 can (14-3/4 ounces) cream-style corn
1-1/2 cups (12 ounces) sour cream
4 eggs, beaten
1 can (4 ounces) chopped green chilies
1/3 cup vegetable oil
1 tablespoon finely chopped jalapeno pepper*
In a bowl, combine corn bread mix and onion. Combine the remaining ingredients; add to the corn bread mixture just until moistened. Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Bake at 350° for 50-55 minutes or until lightly browned and the edges pull away from sides of pan. Serve warm. Refrigerate leftovers. Yield: 18-24 servings.
*Editor's Note: When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face.

Is this the recipe you are looking for? I'm sure there are other variations of the recipe...
MEXICAN CORNBREAD
2 boxes Jiffy corn muffin mix
1 c. cheddar cheese
1 can cream of corn
1/2 c. chopped onion
1/3 c. finely chopped jalapeno pepper (less if desired)
Fix Jiffy mix according to package directions. Add remaining ingredients. Mix. Pour into greased and floured 13x9 inch pan. Bake at 350 degrees until center is firm. About 20 minutes.

Here is another version with meat.
Mexican Corn Bread
2 T sugar
1/2 cup chopped onion sautied
3 boxes Jiffy Corn Bread Mix
3 eggs
1-1/2 cup milk
1 - 16 oz. creamed corn
1 small can diced chilies
1 # sausage
1 # grated cheddar cheese
Mix first seven ingredients and let set while frying sausage Pour 1/3 batter into ungreased 13 x 9 pan then top with crumbled sausage and grated cheese. Top with remaining batter. Bake 60 minutes at 350 degree

Heat oven to 350
Grease 8x8 pan
1 pkg Jiffy corn muffin mix
1 egg
1/3 cup milk
1 cup whole kernal corn
1 TBSP chopped pimento
1 TBSP diced green chili peppers
In small bowl blend ingredients. Pour into prepared pan and bake about 25 minutes.
