    Does anyone have a recipe for a cake made with soda pop? I over heard someone saying that it was wonderful. I can't remember the cake flavor,but the pop was vernors. She said it was wonderful.

    Friend of mine made one with lemon cake mix, poppy seeds and diet sprite(we are on WW). She made into muffins, they were very good and moist.

    I have never done this but My aunt does. She doesn't eat eggs so she uses a can of soda instead and she said she even uses diet sometimes I think. But i would be interested in these as well.

    Doctor Pepper's Cake


    1 cup butter
    1 cup Dr. Pepper soda pop
    4 tablespoons cocoa
    1 1/2 teaspoon cinnamon
    2 cups flour
    1 teaspoon salt
    2 cups sugar
    1/2 teaspoon salt
    2 eggs
    1/2 cup buttermilk
    2 teaspoons vanilla

    Doctor Pepper's Soda Pop Frosting:

    1/2 cup butter
    1/4 cup Dr. Pepper
    3 tablespoons cocoa
    2 cups powdered sugar
    1/2 cup chopped nuts
    1 teaspoon vanilla

    Melt butter and add Dr. Pepper. Mix all dry ingredients, add eggs, buttermilk, vanilla and Dr. Pepper mixture. Mix well. Bake at 350 degrees for 35 minutes in oblong cake pan.

    --Doctor Pepper Frosting-- Have butter at room temperature. Mix butter with sugar and slowly add Dr. Pepper and vanilla. Use mixer for best results. Add vanilla and nuts and mix. Ready for Dr. Pepper Cake.

    Pistachio Dream Cake

    1 (18 1/4 ounce) box light yellow cake mix
    1 (1 ounce) box instant sugar-free pistachio pudding mix
    1 (8 ounce) container nonfat plain yogurt
    3 egg whites
    1 teaspoon vanilla extract
    1 cup diet lemon-lime soda

    In a mixing bowl, combine dry cake and pudding mixes, yogurt, egg whites and vanilla; beat on low speed for 1 minute. Gradually beat in lemon-lime soda. Pour into a 13 x 9-inch baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 20 to 25 minutes or until a wooden pick inserted near the center comes out clean. Cool.

    1 1/3 cups cold skim milk
    1 (1 ounce) package instant sugar-free pistachio pudding mix
    2 cups light whipped topping

    Combine milk and dry pudding mix in a mixing bowl; beat on low for 2 minutes. Fold in whipped topping. Spread over cake. Store in the refrigerator.

    Diabetic Exchange: 2 starch

    1 box yellow cake mix
    1 box instant pineapple creme pudding
    1 (10 oz.) 7-Up
    3 or 4 eggs


    1 1/2 c. sugar
    5 tbsp. clear jell
    2 tbsp. strawberry Jello
    1 1/2 c. water


    1 (8 oz.) cream cheese
    1 (8 oz.) carton Cool Whip
    2 c. powdered sugar

    Mix cake ingredients according to directions on box, making sure to substitute water for 7-Up. Bake according to box directions also. Makes 3 layers. For glaze, combine all ingredients. Spread between cake layers and on top of icing. For icing, mix all ingredients until smooth. Frost.

    Southern 7-Up Cake

    1 (18.25 ounce) box yellow or pineapple cake mix
    4 eggs
    1 small box vanilla instant pudding
    3/4 cup vegetable oil
    1 (12 ounce) can 7-Up, at room temperature

    Beat all ingredients together well for 2 minutes with electric mixer. Pour batter into 3 (8-inch) layer pans or a 15 x 10-inch jellyroll pan that has been greased and floured. Bake at 325 degrees F for 25 to 30 minutes. Cool for 10 minutes, if in layer pans, and remove from pans to cool thoroughly on wire rack. Fill and frost.


    1 cup granulated sugar
    1 heaping teaspoon cornstarch
    4 eggs
    1/2 cup margarine
    1 (No. 2) can crushed pineapple
    1 1/2 cups flaked coconut
    1 teaspoon vanilla extract
    1 cup coarsely broken pecans

    Combine first 6 ingredients and cook over medium heat until thick. Remove from heat and add vanilla extract and pecans. Cool before spreading between layers and over cake. If using a 15 x 10-inch pan, leave cake in pan and spread frosting over top.

    Pepsi-Cola Cake
    with Broiled Peanut Butter Frosting

    2 cups flour
    2 cups sugar
    2 stick butter, melted
    2 tablespoons unsweetened cocoa
    1 cup Pepsi-Cola (with fizz)
    1/2 cup buttermilk
    2 eggs, beaten
    1 teaspoon baking soda
    1 teaspoon vanilla extract
    1 1/2 cups miniature marshmallows
    6 tablespoons butter
    1 cup dark brown sugar
    2/3 cup smooth peanut butter
    1/4 cup milk
    2/3 cup chopped peanuts
    To make cake:
    Preheat oven to 350 degrees. Grease and flour a 9x13x2-inch sheet cake pan. Combine flour and sugar in a large bowl. Combine melted butter, cocoa, and Pepsi and pour over flour and sugar mixture. Stir until well-blended. Add buttermilk, beaten eggs, soda, and vanilla. Mix well. Stir in marshmallows. Pour into prepared pan. Bake 40 minutes. Remove cake from oven and frost while still barely warm.
    To make frosting:
    Cream butter, sugar, and peanut butter. Beat in milk. Fold in nuts. Spread over cake.

    Place frosted cake under broiler about 4 inches from heat source. Broil just a few seconds, or until topping starts to bubble. WATCH CONSTANTLY AND BE CAREFUL NOT TO SCORCH FROSTING! Let cool at least 30 minutes before serving. Serves 8 to 10.

    Coca Cola Cake

    1 cup unsalted butter
    2 cups all-purpose flour
    1 3/4 cups granulated sugar
    3 Tbsp cocoa
    1 tsp. baking soda
    1 tsp. vanilla
    2 eggs
    1/2 cup buttermilk
    1 cup coca cola
    1 1/2 cups miniature marshmallows

    Combine all ingredients except cola and marshmallows in a large bowl, blend at low speed then mix for 1 minute at medium speed. Add cola. Blend well. By hand, stir in marshmallows. Pour batter into a greased 9x13-inch pan. Bake 350: for 40-45 minutes. Cool 30 minutes then spread with Cola Icing.

    Cola Icing

    1/2 cup soft butter
    3 Tbsp cocoa
    1/3 cup cola
    4 cups powdered sugar
    1 cup chopped, toasted pecan or walnuts

    Combine all except the nuts and beat until smooth. Stir in the nuts. Frost cake.

    Strawberry Soda Pop Shortcakes

    The cake batter is an adaptation of a family friend’s recipe.

    1 (2 layer) white or yellow cake mix
    1 (3 ounce) package strawberry flavored gelatin
    4 eggs
    1/3 cup vegetable oil
    1 (12 ounce) can strawberry flavored soda

    Combine all of the above ingredients into a large mixing bowl. Beat for 2 minutes on low speed with an electric mixer. Beat on medium speed for 2 minutes and pour batter into 12 greased and floured Texas sized muffin tins or mini bundt pans. Bake at 350 degrees for 15 to 20 minutes or until a toothpick tests clean. Let the cakes cool for 10 minutes then carefully turn out of the pans. Let cool on a wire rack and store tightly wrapped with plastic wrap in the freezer for up to a week. Serve the cakes with sweetened sliced strawberries and whipped cream.
    Makes 12 servings.

    Tip: Try other flavors for the shortcake such as raspberry, peach or lime to add variety

    I made this cake for Easter and we liked it. I am sure you could use the Vernors if you wanted to. I have had Vernors before and it is very strong. Much more so that Ginger Ale.

    I think the Sprite Pound Cake tasted better on the 2nd day.

    3 cups sugar
    3 sticks margarine or butter
    6 eggs
    3 cups all-purpose flour
    3/4 cups Sprite
    3 teaspoons lemon flavoring

    Cream sugar and margarine until smooth.
    Add one egg at a time and beat.
    Add flour and stir. Combining Sprite and
    lemon flavoring and mix into batter until smooth.
    Bake at 325 degree in a tube pan. I am not sure how long it took to bake.

    Orange Crush Pound Cake

    1 cup (2 sticks) butter, at room temperature
    1/2 cup shortening
    2 3/4 cups granulated sugar
    5 eggs
    1 cup Orange Crush or other carbonated orange drink
    3 cups cake flour
    1/2 teaspoon salt
    1 tablespoon orange flavoring
    1 teaspoon vanilla extract

    Preheat oven to 350 degrees F. Grease and flour a tube pan.

    Cream butter, shortening and sugar until fluffy. Add eggs one at a time, beating well after each addition.

    In a second bowl, sift flour and salt together. Add dry ingredients to butter mixture, alternately with orange drink. Add flavorings. Pour batter into tube pan and bake for 1 hour and 10 minutes or until cake is golden brown.

    Cool cake in pan about 10 minutes. Remove from pan and let cake cool completely on wire rack. Frost cake with icing.

    NOTE: Some cooks prefer the softer crust of a pound cake baked in an oven that is not preheated. If oven is not preheated, the baking time may vary slightly.


    1/4 cup (1/2 stick) butter, softened
    8 ounces cream cheese, softened
    1 box confectioners' sugar
    1 teaspoon orange flavoring

    Cream butter and cream cheese in mixer, gradually add sugar. Add flavoring and combine well.

    1 c. unsalted butter (room temperature)
    1 1/2 c. light brown sugar
    1 c. granulated sugar
    4 eggs
    2 t. vanilla
    1 t. rum extract
    1 c. Vernor's ginger ale
    1/2 t. salt
    2 1/2 t. baking powder
    1/2 t. baking soda
    1 T. cinnamon
    1/4 t. ginger
    1/2 t. freshly grated nutmeg
    1/2 t. cloves
    3 c. flour
    Preheat oven to 350°. Lightly grease a (9x13 inch) pan
    or a (10 inch)
    tube or Bundt pan. In a large bowl, cream together
    butter and sugars.
    Blend in eggs, vanilla and rum extract. Add Vernor's.
    In another large
    bowl toss together the dry ingredients. Add to the
    creamed mixture
    and mix well.

    Spoon into prepared pan. Bake until the cake springs
    back when
    lightly pressed (45 minutes for sheet pan and 60
    minutes for the tube
    or Bundt pan). Cool for 5 minutes before removing from
    pan. Cool
    thoroughly on a rack. Dust with confectioners sugar.
    The (9x13 inch)
    cake may be served from the pan.
