Leftover Boiled Red Potatoes. How Do I Use Them?

    Our favorite way it to melt just a little butter in a pan and fry them. Season them with salt & peper. If you have some onion or instead of butter, bacon grease, oh my, this is soooo good.

    line pan with foil. drizzle butter on foil. spread potatoes on foil, sprinkle with salt and pepper, drizzle with butter, sprinkle on cheddar. more butter. add another layer of potatoes salt&pepper butter and cheese. bake. Delicious!

    One of the ways my family (as a child) served them was to dip the slices of cooked potato in a batter and deep fry them. In England they are called Collops, I think they call them Mo-Jos in the US.
