How do you prepare purple cabbage?

  • How do you prepare purple cabbage?
    My neighbor gave me two heads of purple cabbage yesterday. How do you cook it? Like green cabbage? I've never fixed or eaten purple cabbage before. Can someone please help me? I don't want to throw it away.

    I make coleslaw with mine, in fact it is my favorite. The flavor is a little more bitey than green cabbage. I dress it with a creamy coleslaw dressing like Marzetti's or a vinegarette.

    This is a recipe from a restaurant in either Covina or West Covina California. I had some while there and asked on here if anyone had the recipe and this is what I got. I haven't made it yet but will soon. Hope you like it if you try it.


    North Woods Inn Red Cabbage Salad

    1/2 head red cabbage
    1/2 cup vegetable oil
    1/2 cup plus 2 Tbsp red wine vinegar
    3 Tbsp sugar
    2 tsp salt
    1 tsp Lawry's Seasoned Salt
    1/4 tsp black pepper
    3/4 tsp onion powder

    Shred cabbage so that it is irregular, with some finely shredded and some coarsely shredded, into a bowl. Add oil, vinegar, sugar, salt, seasoned salt, pepper and onion powder; mix well.

    Allow to stand several hours or preferably overnight (refrigerated) to allow the flavors to mellow and the slaw achieves a deep red color.

    Well, all I know to do with it is put it shredded in tossed salads or coleslaw

    Also I think that it is used in some kind od German recipe????

    There are German cooks here whom I'm sure will assist you.

    Sauteed Red Cabbage:

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 tablespoon butter
    1/2 medium head red cabbage (about 1 1/4 pounds) -- thinly sliced
    1/2 teaspoon caraway seeds
    3/4 cup apple cider
    1 tablespoon apple-cider vinegar
    Salt and freshly ground black pepper

    Heat butter in medium skillet, over medium heat. Add cabbage, saute for 1 minute. Add caraway seeds and apple cider, and bring to a boil. Reduce to a simmer, and cook, stirring occasionally for 6 to 7 minutes. Add 1 tablespoon cider vinegar, and cook for 1 minute more. Remove from heat, and season with salt and pepper, to taste. Serve immediately.
    Yield: 6 servings

    Alsatian Red Cabbage, Bacon and Apples

    1/4 pound bacon -- thick slice, cut int
    1 medium head red cabbage -- cored and shredded
    2 large Golden Delicious Apples -- sliced
    1 onion -- chopped
    3 tablespoon red wine vinegar
    4 tablespoon butter
    3 tablespoon dark muscovado sugar
    1/4 cup white wine
    Sea salt to taste
    Freshly Ground pepper to taste
    1 cup roasted chestnuts -- cut in half

    1. Bring 4 quarts of water to a boil in a six quart heavy bottom pot. Add the shredded red cabbage and blanche for 6 minutes. Drain and set aside

    2. Return the 6-quart heavy bottom pot to the stove over medium heat. Add bacon and sauté until lightly crisp, but not to crispy. Add cabbage, apples and onion to the bacon, sauté for 4-5 minutes

    3. Add the wine, vinegar, sugar and butter. Bring to a simmer and cook over medium low heat for 1 hour. Mixture should be fairly dry and cabbage very tender. If not dry enough continue to cook for 5-10 minutes. Season with salt and pepper

    Serves 6

    Red Cabbage, Green Apples, and Crisp Bacon
    serves 6 to 8

    1/2 pound bacon strips, halved
    1 large head red cabbage, cored and shredded
    2 large green apples, cored and sliced
    1 large onion, chopped
    2 tablespoons honey
    2 tablespoons fresh lemon juice
    1/2 cup red wine Salt and pepper

    Cook the bacon strips until crisp. Remove and reserve. Remove all but 4 tablespoons of the bacon fat from the pan and add the cabbage. Cook over medium heat for about 10 minutes. Stir in the remaining ingredients and simmer, covered, for about 1 hour. Season to taste with salt and pepper. Just before serving, sprinkle with the reserved bacon.

    ½ cup granulated sugar
    1 T. salt
    ½ cup water
    ½ cup cider vinegar
    8 cups shredded red cabbage
    1 T. butter
    ½ cup red wine (grape jelly may be substituted)

    Combine the sugar, salt, water, and vinegar in a large 6-quart saucepan or kettle. Bring to a boil and add the cabbage and butter. Lower the heat to a simmer and cook, covered, until tender, at least 30 minutes. Add the red wine and check for seasoning, adding extra salt and pepper if desired. Simmer 20 minutes more or until ready to serve.

    Hint: Several apples, peeled, cored, and sliced thin may be added to the cabbage while it is boiling

    Red Cabbage, Cranberry, and Apple Slaw**with optional crumbled blue cheese**

    5 cups thinly sliced red cabbage (about 1 1/2 pounds--I used some green, but mostly purple cabbage)
    1/2 cup dried cranberries(I had dried cherries so I used them)
    1/3 cup rice vinegar
    1/3 cup sugar
    2 tablespoons white wine vinegar
    2 teaspoons olive oil
    3/4 teaspoon salt
    1/2 teaspoon freshly ground black pepper
    2 1/4 cups thinly sliced Granny Smith apple (I used half apple/half pear)
    1/4 cup chopped pecans -- toasted
    **(not part of original recipe, but I added crumbled blue cheese over my portion just before serving.)
    Combine cabbage and cranberries in a large bowl. Combine vinegar and next 5 ingredients (vinegar through pepper), stirring with a whisk; drizzle over cabbage mixture, tossing gently to coat. Cover and chill 2 hours. Add apple, and toss well to combine. Sprinkle with pecans.
    Note: this is also good with bacon and/or blue cheese crumbled over it.)

    This is my MIL's recipe. It's a good old German dish and she makes it the best. We serve it with any type of meat and potoatoes or stuffing. It's delicious.


    Mama Ingrid’s Red Cabbage

    1 red cabbage
    40 g margarine
    3 tbsp vinegar
    1-2 tbsp sugar
    Salt and pepper to taste
    1 onion
    5 cloves
    1 big or 2 small bay leaves
    ¼ L broth

    Put chopped cabbage and onions into melted margarine. Add vinegar, salt, pepper, cloves, sugar, and bay leaves. Then add broth. Let cook on low heat for about 45 min. Taste and season further if needed.

    Bavarian Red Cabbage

    1 large head of red cabbage, washed and coarsely sliced
    2 medium onions coarsely chopped
    6 tart apples, cored and quartered
    2 tsp salt
    2 cups hot water
    3 Tbs sugar
    2/3 cup cider vinegar
    6 Tbs butter or bacon grease

    Place all ingredients in the crock pot in order listed.
    Cover and cook on low 8 to 10 hours (High: 3 hours). Stir
    well before serving.
