I cooked an Interesting dinner tonight...
Defrosted ground beef this morning, but had no idea what to do with it. I cooked a double batch of rice in my rice cooker, throwing in a few whole cloves for flavor. I browned the ground beef with chopped garlic and onions and seasoned it. When the rice was almost done, I threw in about a cup of frozen corn and a can of stewed tomatoes. Mixed in the beef and added a little beef broth to keep it moist and wah-lah. I figured my kids would turn their noses up at it, but they both had seconds. We'll have to see what my guy says when he tries some later! It was easy and delish!

You should try tater-tot casserole sometime when you have ground beef to use...it is sooo good!
TATER-TOT CASSEROLE
In a 9 x 13 x 2 inch casserole dish put…
1 ½- 2 pounds of lean ground beef (raw) press out evenly covering bottom of casserole.
Salt and pepper the ground beef lightly or to taste.
1 tsp garlic powder over meat as well.
Add 2 cans cream of chicken soup (undiluted) on top of meat layer.
Add one small can peas or peas & carrots combo on top of soup layer.
Add a layer of cheddar cheese (grated) about 16 ounces total over peas.
Add 1 package of frozen tater tots on top.
Bake at 350 degrees for 45 minutes.
Let rest 10 minutes.
Goes great with a side salad and crusty rolls.
You can freeze this and it makes a good dish for covered dish meals.

t, I'm always "inventing" recipes with hamburger and/or rice, because I always have some around and I usually don't want to go to the store. I just throw in whatever else I happen to have. The way I see it, you can't go wrong. Hubby and the kids always love it, but for some reason they always ask what it's called. It's like they know I just made it up. Your recipe sounds like what we call goulash, except I think goulash has maccaroni instead of rice. One of my favorite "in a pinch" dishes is dirty rice.
