    Hey ladies, havent been here in a while, but have been asked to do a dessert tonight for dinner at biblestudy. The ladies that normally do it are not able....and I usually pitch in when they need me. My day is hectic, so it has to be easy, and fairly cheap....any suggestions/recipies? THANK YOU!!!!

    OK, this is pitifully easy, but everyone loves it when I make it so......

    1 Box Choc. Instant Pudding
    2 cups milk
    ½ package of oreos
    1 tub of cool whip, 8oz.

    Crush up oreos, most people we know like it when i leave them in bigger chunks! PLace in bottom of serving dish. (My pan is a large oval) Make pudding with the milk, pour over oreos while still "runny" and make sure all oreos get a good coating! Let pudding set,top with the cool whip and serve.

    You would have to make multiple recipes to serve 40, like 3-4 maybe, but it is pretty cheap!

    Here's another Oreo one that I had posted for Rachael last week -- also for a Bible study! You would need to make it this morning and then freeze till tonight.

    1 pkg. Oreos, crushed
    1/2 gallon vanilla ice cream, softened
    1 lg. tub Cool Whip, thawed

    Mix together in 9x13 pan. Freeze.

    Garnish with whole Oreo cookies, if desired.

    A couple pans of this should feed 40 people --

    This dessert that Karolin posted is so easy and sooooo good. Everyone raved about it when I made it for easter dinner this year.

    This has to be one of the most requested recipes. I print up the recipe before I bring it. It's quick and easy and you can make it the night beore.

    Chocolate Eclair Dessert

    1 full size box graham crackers
    2 (3 ounce) packages instant french vanilla pudding mix
    3 cups milk
    1 (9 ounce) container frozen whipped topping, thawed (Cool Whip)
    1 (16 ounce) can Pillsbury Chocolate Fudge Frosting


    Line the bottom of a 9x13-inch pan with graham crackers.
    In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping to pudding mixture.
    Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding.
    Top all with a final layer of graham crackers and frost with chocolate frosting. I microwave the can of frosting with the top off, for 15 seconds or so to make it into a glaze.

    Refrigerate at least 6 hours before serving. Can be made the night before.

    You can buy a cheap brand of ice cream to make ice cream cake.

    Just sprinkle a layer of graham crumbs or cookie crumbs in a pan. Put a layer of softened ice cream (any flavour) and top with an ice cream syrup and some more crumbs or chopped nuts.

    Or: just ice cream with berries. I usually stew frozen strawberries or raspberry to put over.

    Or: Sherbet and a cookie. It is light and fast.

    Or: A fruit and dainty tray. I had unexpected company for supper the other night and I put out a platter with sliced watermelon, red grapes, mini cream filled croissants and mini brownies that I bought on sale. Everyone thought it was great!

    Fruit Dip: Just stir one pkg. of flavored jello into a large Cool WHip. It is wonderful!

    Hi there, I was going to suggest the eclair dessert too, it makes a 9 x 13 pan and so you can make big or small servings. You would need 2 pans, it really is best to make it early so the graham crackers can get soft and yummy. It is cool, creamy and the chocolate on the top makes it so special and looks like you really fussed. K Ohio

    I used this alot when I was catering:

    Chocolate Delight

    2 sticks margarine
    2 cups chopped pecans
    2 cups self-rising flour
    Cook for 20 minutes at 350 degres and let cool.
    Mix together and spread in 9X12 baking pan. Bake @ 350 for 20-25 minutes until brown. Cool completely.

    2nd layer:

    8 oz cream cheese
    1 cup powdered sugar
    1 cup cool whipCombine and spred over crust.

    3rd layer:

    2 boxes of chocolate instant pudding prepared according to package directions.

    Top with Cool Whip & chopped pecans.

    You will probably need to make more than one pan for 40 people.

    This is as easy as it gets;
    2-8oz cream cheese
    2- jars marshmellow fluff
    nutmeg to taste about a teaspoon maybe a dash more
    whip on high until fluffy
    ( you can easily double recipe if needed)
    seasonal fruit

    I sometimes put the dip into the cantalope or honey dew half. you can do a half of water melon and put the fruit in there. Makes it look like alot of work. YOu can buy everything already chopped up that's the way I would go if time is a issue.

    White Texas Sheet Cake

    1 cup butter
    1 cup water
    2 cups all-purpose flour
    2 cups white sugar
    2 eggs
    1/2 cup sour cream
    1 teaspoon almond extract
    1 teaspoon baking soda
    1/2 cup butter
    1/4 cup milk
    4 1/2 cups confectioners' sugar
    1/2 teaspoon almond extract
    1 cup chopped nuts

    n a large saucepan, bring 1 cup butter or margarine and water to a boil. Remove from heat, and stir in flour, sugar, eggs, sour cream, 1 teaspoon almond extract, and baking soda until smooth. Pour batter into a greased 10 x 15 x 1 inch baking pan.
    Bake at 375 degrees F (190 degrees C) for 20 to 22 minutes, or until cake is golden brown and tests done. Cool for 20 minutes.
    Combine 1/2 cup butter or margarine and milk in a saucepan; bring to a boil. Remove from heat.
    Mix in sugar and 1/2 teaspoon almond extract. Stir in pecans. Spread frosting over warm cake.
    Makes 1 - 10 x 15 x 1 inch sheet cake
    P.S. I use almonds for the icing~
    You could use pecans for the chocolate version!

    Texas Sheet Cake

    2 cups Flour
    2 cups Sugar
    Mix together.
    Bring the following to a boil,
    1/2 cup Shortening (Crisco)
    1/4 cup Cocoa
    1 cup of Water
    1 stick Butter or Margarine
    Pour over flour mixture, add 1/2 cup milk (sour, buttermilk or plain)
    Add 2 Eggs
    1 tsp. Soda
    1/4 tsp. Salt
    1/4 tsp. Vanilla.
    Beat all in mixer. Pour into greased 12x17 (cookie sheet w/sides)
    pan.
    Bake at 400 degrees for 20 minutes.

    Sheet Cake Frosting

    When sheet cake is almost finished, make frosting and pour on
    immediately when sheet cake is removed hot from oven.
    4 Tablespoons Cocoa
    1 stick Margarine or Butter
    5 Tbsp. Milk
    Bring to boil, add 1 pound powdered sugar (I use amount of powdered
    sugar to consistency never full pound), 1 tsp. Vanilla
    and 1 cup of nuts (optional).

    P.S. If you choose the wonderful Eclair Dessert, you need to make it ASAP, because it is supposed to be made the night before!
