    I'm in charge of making Paula Deen's famous Hash Brown Potatoes for a Father's Day Lunch (in a few hours)

    However, i've lost the recipe. i've searched the message board and cannot find the recipe.

    can anyone help? it's NOT the smashed potato casserole with instant potatoes. it has 2 lbs of frozen cubed potatoes, cheddar cheese, mushroom soup, onions...etc. etc.

    Dad's really counting on your response. thanks in advance.

    Hash Brown Casserole #2717
    1 (2 lb) package plain hash browns, thawed
    2 cups cheddar cheese, grated
    1 pint sour cream
    1 can cream of mushroom soup (or cream of chicken, if you prefer)
    2/3 cup onions, chopped
    1/2 cup celery, chopped
    1/2 cup green bell peppers, chopped
    1/2 cup red bell peppers, chopped
    2 tablespoons butter
    1 teaspoon salt
    1/2 teaspoon black pepper
    2 cups corn flakes, crushed (or potato chips)

    Difficulty: Easy
    Prep Time: 10 minutes
    Cook Time: 25 minutes
    Yield: 1 1/2 cups

    6 medium red potatoes, cooked and cooled
    2 tablespoons olive oil
    2 tablespoons butter
    1 medium onion, chopped
    House Seasoning, recipe follows

    In a medium saucepan, add red potatoes and water to cover. Simmer until cooked through, drain and cool. Thinly slice the potatoes.
    In a large skillet, add olive oil and butter. Add onions and cook over medium heat until caramelized, about 10 to 15 minutes. Add potatoes and brown, turning only once with a spatula to prevent breaking up the potatoes. Add house seasoning, to taste.

    House Seasoning:

    1 cup salt
    1/4 cup black pepper
    1/4 cup garlic powder
    Mix ingredients together and store in an airtight container for up to 6 months.

    Yield: 1 1/2 cups

    Mashed Potato Bake

    4 cups frozen hash browns
    1 (7.6 ounce) pkg. butter and herb mashed potato mix
    1 stick of butter, softened
    4 oz cream cheese softened
    1 cup monterey jack cheese
    1/2 cup sour cream
    1/2 teaspoon garlic salt
    1/2 teaspoon pepper
    2 cups boiling water
    2 cups prepared french fried onion rings

    Preheat oven to 350

    Bring a pot of water to a boil and add hashbrowns. Cook 5 minutes and drain. In a large bowl mix together the hashbrowns,mashed potato mix, butter, cream cheese, moterey jack, garlic salt and pepper. Stir in the boiling water. Place in a greased 2 quart baking dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the top and bake 5 minutes more.

    Texas Potatoes

    1 2lb package frozen hash browns
    1/2 cup melted butter
    1 tsp salt (I omit)
    1/4 tsp pepper
    1/2 cup chopped onion
    1 can cream of chicken soup
    1 16oz carton sour cream
    2 cups grated cheddar cheese


    2 cups crushed cornflakes
    1/4 cup melted butter

    Mix together potatoes, butter, salt, pepper, onion, soup, sour cream and cheese. Put into a 9x13 pan with cornflake mixture on top. Bake at 350 degrees for 45 min or until potatoes are tender.

    Note: I halve this recipe and put it in my 1-1/2 qt crock pot and cook it on low for about 2-1/2 hours. With no topping.

    Hash Brown Potato Casserole

    2 Pounds Frozen Hash Brown Potatoes
    4 Cups Grated Cheddar Cheese
    1 10-3/4 Oz Can Cream of Chicken or Cream of Mushroom Soup
    2 Cups Sour Cream
    1/2 Cup Butter, Melted -- (1 Stick)
    1 Medium Onion, Chopped
    2 Teaspoons The Lady's House Seasoning

    Preheat oven to 350ºF. In a large bowl, combine the potatoes, 2 cups of the cheddar, the soup, sour cream, butter, onion and house seasoning. Place in a buttered 13x9x2 inch pan and bake for 35 minutes. Remove from the oven and top with the remaining cheddar. Return to the oven and bake for 10 minutes longer.
    Variation: Instead of topping with cheese, you may use 2 cups crushed Ritz crackers mixed with 1/2 cup melted butter.
