What's your favorite meat dish for a potluck?

    I have a King Ranch Chicken Casserole recipe what's yours? Mine came off one of those sample cards. I gave it to my sister and she makes it alot but I have never made it

    When I am asked to bring a meat/main dish to a potluck, I always bring this sausage. I double the recipe, and it is always gobbled up. I have to admit that I got the recipe from this board quite a while back, and don't remember who posted it--sorry.

    SLOW-COOKED SAUSAGE


    1 c. brown sugar
    6 T. spicy mustard
    1 small sweet onion, finely chopped
    2 lb. smoked sausage or kielbasa

    Saute the onion in a little oil. Add the brown sugar and mustard. Cut the sausage into chunks and place in crockpot. Pour in the mustard sauce and stir it together to coat the sausage. Cover and cook on low for about 3 hours.
    Great for potlucks.

    Sweet & Sour or Stroganoff meatballs, Lasagna, or Cabbage rolls. They all go over well, and are easy to keep warm in the good old slow cooker!

    Here's my favorite. My family adores it and when I take it to a potluck I always come home with an empty dish!

    My mom is a fabulous cook! Many of my dh's and ds's favorites are from her.

    This recipe was a standard in our home growing up.

    King Ranch Casserole

    5 large chicken breasts, bone-in skin-on
    1 stalk celery
    1 onion, quartered
    1t. salt
    1/2t. pepper
    Boil all together until chicken is done. Cool. Remove meat from the bone and chop. Discard broth or save for another use.

    For filling:
    2 med. yellow onions, chopped(one is fine if you're not a big onion fan)
    1 stick butter or margarine
    chopped chicken
    1 can diced Ro-tel tomatoes, undrained
    1 can cream of chicken soup(I use 2)
    1 can cream of mushroom soup
    1 can golden mushroom soup
    Saute onion in butter and mix with remaining filling ingredients.

    Additional ingredients:
    12-8" corn tortillas, cut into eighths
    4c.grated mozzarella cheese mixed with 2c. shredded cheddar

    Grease a 9x13 pan.
    Layer as follows:
    1. Single layer of tortillas pieces
    2. Spread with about 1/3 of the filling mixture
    3.1 1/2c. cheese
    Continue layering until all the filling is used. Top with lots of cheese. Bake at 325º for 20-25 minutes.

    I hope this is clear. Basically, you cook the chicken, mix it with the filling ingredients, and just layer it with the tortilla and cheese. It's heavenly!

    Since most of my potlucks are for lunch after Sunday church, I go for easy. I'm not usually much of a morning person. I sometimes take a Stouffers lasagna or chicken and dumplings. There is never any left. Everyone always wants the recipe for the chicken and dumplings. I say it's a family secret. (Open a large can of Sweet Sue's chicken and dumplings and add a can of cr. of chicken soup. Heat until bubbly. The chicken and dumplings has some broth with it, so with the cream soup, it comes out just right.) They really taste great.

    These (IMHO) are about the best sandwiches ever. I make them for almost all of our family potlucks, and when I don't bring them, someone is always looking for them.

    Crockpot Chicken Sandwiches
    -4 bone in chicken thighs
    -4 bone in chicken breasts
    -1 envelope onion soup mix
    -1/4 tsp garlic salt
    -1/4 cup Italian salad dressing
    -1/4 cup water
    -12 hamburger buns

    -Place chicken pieces in crockpot.(You can remove the skin..I ALWAYS do)
    -Sprinkle the garlic salt and onion soup mix over the chicken.
    -Pour salad dressing and water over the chicken.
    -Cover and cook on low for 7-8 hours
    -Remove chicken and cool slightly
    -Shred chicken from the bones,and return to crock pot
    -Serve on hamburger buns

    *Note: I leave these in longer than 8 hours when I am working and they turn out fine.

    I aleays use 1/2.... basically the breasts are close in size to the thighs.... I am sure you could use whole tho.... Just double the yummy sauce !!!!
