Need sugar free relish recipe for canning

  • Need sugar free relish recipe for canning
    I am looking for a Zucchini relish, pickled beets and also dill relish all sugar free. It is so hard to find these things in the store so I thought maybe I could make some.

    I have stopped canning Pickled Beets. What I do is buy 2 cans of Sliced Beets (these are packed with only water and salt) and pour all, juice and beets, in a saucepan, add about 1 cup vinegar and 1 Tablespoon of Pickling Spices and let come to a good boil, remove from heat and let cool. I, then, put it in a quart jar and keep in refrigerator. This is very easy and a lot less trouble. You can adjust the vinegar and spices to your taste.

    Here is one for Zucchini Relish

    Sugar-Free Zucchini Relish

    10 cups shredded zucchini
    5 cups onion
    1 red pepper
    1 green pepper
    5 tablespoons pickling salt
    5 cups sweetener substitute (Stevia, Splenda, etc)
    1 tablespoon dry mustard
    1 tablespoon turmeric
    2 tablespoons celery seed
    1 tablespoon cornstarch
    1/2 teaspoon pepper
    2 1/2 cups white vinegar

    Directions:
    Chop and mix together the zucchini, onion, and peppers. Then stir in pickling salt and let stand overnight covered in the fridge. Drain well in colander.

    Add remaining ingredients. Boil for 15 minutes in open kettle. Put into sterilized 2-pint jars and hot canning lids. The heat should seal the jars.

    Total Carbohydrates: 120.50 Per Jar Total Carbohydrates Minus Fiber: 41.25 Carbohydrates per Serving: 4.12 - Carbohydrates per Serving minus Fiber: 2.22
