  • Tough Okra-use or throw it out??
    Hello,
Does anyone know of ANYTHING to do with okra that got too big and is tough? Seems like I heard somewhere there was something to help use it for?????
I hate to throw it out. I just didn't get to it in time. :-(
    TIA,
    Pattyh

    Why not fry them up?!

Can you fry them when they are tough like that? Will they soften?

Since moving to La about 2 months ago, we were given some okra that was huge! I have no idea what kind it was, but I cut it up and fried it and it was tender, even at that size, and used some in making gumbo, only one piece was woody, so I just tossed it. Connie

    Connie,
Did it have the deep ridges-and looked different than "regular" okra?
My MIL gave me one yesterday to try like that. I haven't yet. Planning to do it at supper tonight-with some regular okra. This different kind is supposed to be really sweet.
But, that isn't the kind I'm talking about. This is the regular okra that is kinda hard to cut into when it's too big. I'm not sure if it can be used or not.

When I have okra that is too tough to boil or fry, I cut the ridges off and dump out the seeds. They are good cooked in with field peas or in soup.
