    1/2 c Shortening
    1 1/2 c Sugar
    1 Egg
    5 1/2 c Pastry flour
    3/4 ts Salt
    1 c Milk
    1 1/2 ts Oil of lemon*
    2 ts Ammonium carbonate*

    Oil of lemon may be purchased in a drug store.
    Cream shortening and add sugar.
    Add egg and oil of lemon.
    Sift flour before measuring.
    Measure flour and sift with salt.
    Dissolve ammonium carbonatein a little of the milk.
    Add flour and liquid alternately mixing after each addition.
    Chill dough.
    Roll 1/4" thick.
    Cut in squares.
    Place on greased baking sheet.
    Sprinkle cookies lightly with sugar.
    Bake 12-15 mins.
    in a 375 oven.
    Yields 8 doz.

    1 cup butter, softened
    1 1/8 cups sugar
    2 cups flour, sifted
    1 tsp ammonia salt
    1 tsp vanilla

    Preheat oven to 300 degrees F.

    Cream the butter; add sugar and cream thoroughly, using an electric beater if possible.

    Beat in the sifted flour, ammonia salt, and vanilla. Put in refrigerator for a few hours.

    Shape into small balls and bake in a slow oven (300 F).

    Ingredients needed:

    1 cup milk
    One-half ounce ammonium carbonate
    One-half cup shortening
    One and one-fourth cups sugar
    1 egg, well beaten
    One-half ounce oil of lemon or 1 ounce lemon extract
    5 cups sifted enriched flour

    Preheat the oven to 350°F.

    Add the milk to the ammonium carbonate and let stand for 30 minutes, stirring frequently. Cream the shortening and the sugar; add the egg, lemon flavoring and the milk mixture. Stir in the flour. Chill. Roll the dough to one-fourth-inch-thick on a floured board. Cut into 3-inch squares. Prick with a floured fork. Bake on a greased baking sheets at 350 degrees for 15 minutes or until slightly browned.

    Note: Ammonium carbonate is no longer readily available in stores. It can be special-ordered by many druggists, and sells for about $1.75 an ounce. Commercial bakeries use ammonium carbonate as a dry rising agent for various products, and may be willing to sell small batches to the public on request.

    Makes three and one-half dozen.

    Peppermint Ammonia Cookies
    This is a recipe for cookies that my grandma used to make
    when I was a child. They are very light cookies. Prep Time:
    approx. 14 Minutes. Cook Time: approx. 10 Minutes. Ready in:
    approx. 30 Minutes. Makes 4 dozen (48 servings).

    1/2 cup butter, softened
    1 1/2 cups white sugar
    1 cup heavy cream
    3 eggs, beaten
    1/8 cup boiling water
    1 1/2 tablespoons bakers' ammonia
    1/2 teaspoon peppermint oil
    4 1/2 cups all-purpose flour
    2 1/2 teaspoons baking powder

    1 Preheat the oven to 375 degrees F (190 degrees C).
    Grease cookie sheets.
    2 In a large bowl, cream together butter and sugar until
    smooth. Stir in the heavy cream and beaten eggs. Mix the
    ammonia into the boiling water and stir to dissolve; stir into
    the butter mixture along with the peppermint oil. Combine
    the flour and baking powder; stir into the batter until
    evenly blended. On a lightly floured surface, roll the dough
    out to 1/4 inch in thickness. Cut into desired shapes with
    cookie cutters. Place cookies 1 1/2 inches apart onto the
    prepared cookie sheets.
    3 Bake for 10 to 12 minutes in the preheated oven, until
    edges are golden. Cool slightly on baking sheets before
    removing to wire racks to cool completely.

    2 tbsps. butter
    1 cup sugar
    3 eggs
    2 tbsps. baking ammonia stirred into 1/4 cup hot milk
    1 tsp. baking powder
    pinch of salt to your taste
    1 tsp vanilla or peppermint flavoring I use peppermint
    4 cups flour for a soft dough

    Roll and cut cookies round or your choice of cutter.
    Bake at 375 degrees for 10 to 12 minutes.
    Lemony or peppermint icing makes these soft cake like cookies wunderbar. Dough can be pressed out instead of rolling. Cookies can be placed fairly close together on non stick sheets (BEST) as they rise upward more so than outward

    White Ammonia Cookies (Gruznikje or Pfefferminzküake)

    2 cups sugar
    1 cup shortening or butter
    4 level teaspoons baking ammonia dissolved in 1 cup whipping cream
    1 cup milk
    1/2 teaspoon salt
    1/2 teaspoon oil of peppermint
    5 to 6 cups sifted all-purpose flour

    Cream sugar and shortening. Dissolve ammonia in cream. Combine cream and
    milk. Add peppermint and salt to sugar mixture. Alternate sifted flour with
    liquid and beat until batter is very smooth.

    Roll out small portions of dough to 1/2 inch thickness on floured board. Cut
    with round 2 1/2 inch cutter. Brush with a little water and sprinkle with

    Baker’s ammonia (ammonium carbonate) should be purchased only in small
    amounts as it evaporates quickly if not tightly contained.

    2 1/2 cups white sugar
    1/2 cup butter, softened
    3 eggs
    1 1/2 cups sour cream
    1/2 cup milk
    1 teaspoon peppermint extract
    1/2 teaspoon salt
    2 teaspoons bakers' ammonia
    3 cups all-purpose flour

    1 Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
    2 In a large bowl, cream together the white sugar and butter until smooth.
    Beat in the eggs one at a time, then stir in the sour cream, milk and
    peppermint extract. Combine the salt and bakers' ammonia with 2 cups of the
    flour and blend into the mixture. Gradually add more flour to make a stiff
    dough. Leave the dough soft for drop cookies or add more flour to make
    cut-out cookies. Drop dough from heaping spoonfuls onto the prepared cookie
    3 Bake for 8 to 10 minutes in the preheated oven, or until golden. When
    cool, ice with a simple confectioners' glaze that has been flavored with
    peppermint if desired.

    14 cups flour
    3 tsp ammonia
    3 cups sugar
    4 eggs
    3 sticks of butter
    1 cup of milk
    1/2 tsp vanilla

    -Preheat oven to 200 C
    -Butter baking pans
    -Sift flour
    -Beat eggs with sugar
    -Add butter
    -Dissolve ammonia to milk
    -Add milk to batter
    -Add flour and knead until dough is smooth
    -Form the cookies in any shape you like
    -Place them in pans
    -Bake for 20-30 minutes

    7 tsp. ammonia powder

    2 c. milk

    Cream sugar, butter and shortening. Mix flour and ammonia
    together and combine with creamed mixture. Add coconut. Roll into
    balls (walnut size). Bake at 300 degrees until lightly browned 15
    to 20 minutes. *Ammonia: May be crystallized so crush finely.

    2 cups soft butter
    2½ cups sugar
    3 cups flour
    1 teaspoon almond extract
    Crush the ammonia cakes fine.

    Cream the butter and sugar. Sift the flour and add. Measure ammonia and add. Beat well. Add the almond extract.

    Form into small balls and bake in a slow oven preheated to 325 degrees for 10 to 12 minutes on greased and floured cookie sheets. Watch the cookies carefully because they burn easily.

    NOTES : Baker's ammonia (ammonium carbonate) can be purchased by the ounce in drugstores.

    3 eggs
    1 ½ cup sugar

    1 cup cream
    ½ tsp salt

    ½ cup melted lard
    1 tsp vanilla

    3 heaping teaspoons bakers ammonia

    Sift in enough flour to make a stiff dough. Mix all ingredients and let stand overnight in refrigerator or in a cold place. Roll out, cut with cookie cutter and bake in 350 degree oven 12 minutes only. When they turn yellow around the edges they are done. They will still be white on top.

    Gingerbread Dough Version 1
    6.5 lbs honey
    3 lbs sugar
    1 lb water
    15 lbs bread flour
    1 oz ground ginger
    1 oz. ground cloves
    1 1/2 oz. cinnamon
    1/2 oz. ground anise seeds
    4 oz. bakers ammonia (triebsalz)***
    2 oz. potash*
    2 cups milk

    Heat honey, sugar and water until melted. Mix bakers ammonia with 1 cup of milk. Mix potash with 1 cup of milk. Mix all ingredients into a dough. Let stand in refrigerator for 3-4 days. Roll out as desired.
