    I just came across this on the King Arthur Website while looking for more goodies that use the BA. The conversion is at the bottom of the paragraph, you use 1 1/2 tsp baking powder in place of the 1/4 tsp. of BA.

    Introduction
    The texture of these cookies—ultra-tender, ethereally light, melt-in-your-mouth—is unlike anything you can get using baking powder or baking soda. The secret? Baker’s ammonia, a.k.a. ammonium carbonate; possibly available at your local pharmacy, and certainly available via mail order. Note that you may smell a strong ammonia odor while these cookies are baking, but never fear—by the time they come out of the oven, the odor will be gone. Can these cookies be made without baker’s ammonia? Sure; substitute 1 1/2 teaspoons baking powder for the baker’s ammonia. Just be aware their texture won’t even come close to what we’ve just described.
