I have a bag of caramels left over from making caramel apples, does anyone have any good recipes using them? Thanks in advance, cookie recipes would be great, as I need to bake some for a sale.
  • RE: Recipes using caramels?
bump for someone else to help. I need to get off the computer and into my day.
  • RE: Recipes using caramels?

This is always a yummy recipe. I've made this version and similar versions for years.

    Chocolate Caramel Bars

    1 (14-ounce) package caramels
    1 (5-ounce) can evaporated milk -- divided
3/4 cup butter or margarine -- softened
1 (18-1/4-ounce) can german chocolate cake mix
2 cups (12-ounces) semisweet chocolate chips

In a small saucepan over low heat, melt caramels with 1/3 cup milk. Meanwhile, in a mixing bowl, cream the butter. Add dry cake mix and remaining milk; mix well. Spread half of the dough into a greased 13-in. x 9-in. baking pan. Bake at 350' for 6 minutes; sprinkle chocolate chips over dough. Gently spread caramel mixture over chips. Drop remaining dough by tablespoonfuls over caramel layer. Return to the oven for 15 minutes.

This is one of my most popular recipes. I put them in a bake sale and they sold out in an hour. Everyone at work loves them!

    4 squares (4oz.) unsweetened chocolate
    3/4 cup (1 1/2 sticks) butter
    2 cups sugar
    3 eggs
    1 teaspoon vanilla
    1 cup all-purpose flour
    1 cup semi-sweet chocolate chips
    1 1/2 cups chopped nuts
1 package (14 ounces) caramels - approx. 50 caramels if bought in bulk
    1/3 cup evaporated milk

    Heat oven to 350 degrees

Microwave chocolate and butter in a large microwavable bowl on High 2 minutes or until butter is melted. Stir until chocolate is completely melted.

Stir sugar into melted chocolate mixture. Mix in eggs and vanilla until well blended. Stir in flour. Remove 1 cup of batter; set aside. Spread remaining batter in greased 13x9 inch pan. Sprinkle with chips and 1 cup of nuts.

Microwave caramels and milk in same bowl on High 4 minutes, stirring after 2 minutes. Stir until caramels are completely melted and smooth. Spoon over chips and nuts, spreading to edges of pan. Gently spread reserved batter over caramel mixture. Sprinkle with remaining 1/2-cup nuts.

Bake for 40 minutes or until toothpick inserted into center comes out with fudgy crumbs. Do not overbake. Cool in pan; cut into squares.

    Makes about 24 brownies

Here is one that I just made last night and it was very good but I would make some changes.

    Banana Caramel Bread Pudding

12 slices cinnamon raisin bread-toasted and cubed
    2 med bananas-sliced
    3 eggs
    1 c milk (I used skim)
    1/3 c sugar
    1/4 c Land O Lakes Butter-melted
    1 tsp cinnamon
    1/2 pkg caramels (16 oz-26 caramels) unwrapped)

    1. Heat oven to 350º. Layer 1/2 of the bread cubes in greased 9 inch square baking dish. Top with bananas, remaining bread cubes and caramels.

    2. In med bowl, with wire whisk, beat eggs until thick and lemon-colored (1-2 min). Add milk, sugar, butter and cinnamon; mix well.

    3. Pour evenly over bread. Bake for 35 min.

    4. Reduce heat to 300º. Bake for 15-20 min or until center is set. Serve warm or chilled.

The next time I make this I would melt the caramels with some of the milk. Even though I loved the taste and texture the caramels didn't melt as much as I would have liked.

This easy snack is as much fun to make as it is yummy to eat!

1 1/2 cups salted peanuts, chopped
    30 toothpicks

Place caramels in a one quart glass measure or casserole dish; drizzle water over caramels. Microwave on High for 1 1/2 to 2 minutes;stir. Microwave another 1 1/2 to 2 minutes or until caramels are melted. Stir to smooth.
Stick a toothpick into each large marshmallow. Dip marshmallow in caramel syrup, twist to coat completely. Quickly roll marshmallow in peanuts. Place on waxed paper. Repeat. Let dry at room temperature.
Note: *If syrup begins to get thick add ½ t. water and reheat in microwave for 30 sec. or until softened.

This is a very rich dessert. A little
    piece is all you need!

    Chocolate Caramel Cheesecake

    (about 50 wafers)
    6 Tblsps. butter, melted
1- 14 oz. pkg. vanilla caramels
    1 - 5 oz. can evaporated milk
    1 c. chopped pecans, toasted
2 - 8 oz. pkgs. cream cheese, softened
    1/2 c. sugar
    1 tsp. vanilla
    2 eggs
1/2 c. semisweet choc., melted and
    slightly cooled

For crust, combine crushed vanilla wafers with the melted butter. Press onto the bottom and up the sides of a 9-inch springform pan. Bake at 350 degrees for 10 minutes. Cool and set aside.
In a medium saucepan, combine the caramels and evaporated milk. Cook and stir over low heat, stirring frequently, until smooth. Pour over prepared crust. Sprinkle with
the 1 c. pecans. Chill in the refrigerator while preparing the filling.
For filling, in medium bowl, beat cream cheese, sugar and vanilla with an electric mixer on medium speed until combined. Add eggs, beating on low just until combined. (DO NOT
OVERBEAT); stir in melted chocolate. Pour over caramel-nut layer in pan. Bake at 350 degrees for 35-40 minutes or until center appears nearly set when shaken. Cool cheesecake in pan on a wire rack for 15 min. Loosen from side of pan: Cool completely on wire rack. Cover and chill in refrigerator for at least 4 hours. Let cheesecake stand at room temp. for 20 min. before serving.

Excellent served with more caramel and whipped cream.
