    Honeyed-Hoisin Grilled Chicken Wings
    Serves 6

    The intriguing combination of ingredients in this marinade creates extraordinarily tender and tasty wings. Hoisin sauce, honey, and orange juice give the wings a deliciously dark, caramelized character, while the wine vinegar and soy and chili sauces balance the sweetness. Strong-flavored Chinese black soy sauce (sometimes called double black soy sauce) is a pivotal ingredient. It's used to add deep color and textural substance to dishes in which it's important that a sauce adhere well to slippery ingredients such as noodles or chicken. Good brands to look for are Pearl River Bridge and Koon Chun.

    This marinade works equally well with bone-in chicken breasts, legs, and thighs, but it's especially good with wings served with a big bowl of room-temperature Soba Salad (see the book).


    6 pounds chicken wings
    3 large oranges
    2 cups good-quality regular soy sauce, such as Kikkoman
    1/2 cup red wine vinegar
    1/4 cup hoisin sauce
    1/4 cup honey
    2 tablespoons black soy sauce
    1 tablespoon Chinese chili sauce with garlic
    1 tablespoon grated fresh ginger
    2 large cloves garlic, minced

    1. Trim the tips from the wings and discard or save for another purpose, such as making stock. Rinse the remaining wings under cold running water, then drain and pat dry with paper towels.

    2. Grate the zest only (no white pith) from the oranges, then cut the oranges in half and squeeze the juice; you should have about 1 cup. Combine the grated zest and juice in a large bowl. Add the regular soy sauce, vinegar, hoisin sauce, honey, black soy sauce, chili sauce, ginger, and garlic and whisk thoroughly to blend. Add the chicken wings and toss to coat completely, then refrigerate, covered, for at least 8 hours and up to 24.

    3. When you're ready to cook, preheat a grill.

    4. When the grill is moderately hot, drain the chicken wings and arrange them on the grill rack. Cook until nicely browned and cooked through, about 10 minutes on each side. Serve with plenty of paper napkins.

    Grilled Orange-Chipotle Chicken Wings

    2 T. adobo sauce (from a can of chipotle in adobo sauce*), or more to taste
    2 chipotle chili peppers (from a can of chipotle in adobo sauce*), seeded and finely chopped, or more to taste
    Zest from 1 large orange
    1/3 C. freshly squeezed orange juice
    1/4 C. olive oil
    2 T. honey
    Salt to taste
    2-1/2 to 3 lbs. chicken wings
    3/4 C. wood chips

    In a food processor or blender, combine the adobo sauce, chipotle peppers, orange zest and juice, oil, honey and salt to taste and process until smooth.

    Set aside.

    Using a sharp knife, cut the wing tip from each chicken wing; discard or save for chicken stock. Each wing should now have 2 parts, a drummette and a wing, connected by a joint. Cut through the joint to create 2 separate pieces.

    Place the chicken pieces in a large bowl or resealable plastic food storage bag, add the chipotle-orange marinade and shake or stir to coat. Cover the bowl or close the bag and refrigerate for at least 8 hours and up to 24 hours.

    Soak the wood chips in water for at least 30 minutes. Have ready 6 large squares of aluminum foil.

    When ready to cook the chicken, prepare the grill for indirect cooking. If it's a charcoal grill, build the fire on 1 side (the chicken will go over a drip pan on the other side of the grill). If it's a gas grill, turn on all the burners to preheat, then turn off 1 burner just before you place the chicken over that spot. If your grill has a thermometer, try to keep the heat between 350 and 400° F.

    Divide the drained chips among the foil squares and wrap the chips to form a packet. Using a knife, make several small slashes in each packet. When the grill is ready, place 2 of the wood chip packets on the coals or over the hottest part of the grill.

    Remove the chicken wings from the marinade, shaking gently to allow any excess to drip off. Discard the remaining marinade. Arrange the wings in a single layer on the grill rack away from the heat, making sure there is no fire directly below the chicken. (The chicken may need to be cooked in 2 batches.) Cover the grill and cook, keeping an eye on the grill. It may be necessary to adjust the heat by adding coals to the fire to maintain an even cooking temperature of 350 to 400° F. You may also need to add new wood chip packets if the old ones stop smoking. Grill for 15 minutes. Turn the wings and grill until cooked through, 10 to 15 minutes longer. Serve warm.

    This recipe uses larger chicken wings, and takes longer to grill.

    Grilled Garlic Chicken Wings

    2 lbs. chicken wings, each cut in half
    6 to 8 garlic cloves, finely chopped
    juice of 1 lemon
    salt and pepper, to taste
    1 to 2 T. anise-flavored liqueur, such as Pernod (optional)
    1/4 to 1/2 t. cumin
    large pinch of ground cinnamon
    3 to 4 T. extra virgin olive oil
    shredded lettuce or other greens, for garnish
    lemon wedges, for garnish

    Combine the wings with the garlic, lemon juice, salt and pepper, optional liqueur, the cumin, cinnamon and olive oil. Mix well, until the chicken wings are coated with the marinade. Let marinate at room temperature for about 1 hour. Better still, tightly cover the container and refrigerate for up to 2 days.

    Prepare a fire in a barbecue grill.

    Grill the chicken wings over medium heat for 15 to 20 minutes, turning them from time to time, until they are cooked through, crisp and lightly browned/charred in spots.

    Serve hot, on a little bed of shredded lettuce, or tender watercress, or any little green.

    Serve with lemon wedges alongside.

    Serves 4.

    Grilled Drunken Chicken Wings
    Note from Cheri:
    While there is rum in this recipe (they are, after all, drunken ribs) you won't get drunk as most of the alcohol will burn off leaving a great flavor. Be extra careful with the marinade around the grill. Alcohol is highly flammable, don't spill it on the fire.

    If you don't have a grill, you can broil these wings for about 20 minutes, basting with the marinade occasionally.

    Chicken Ingredients:

    3 lbs. chicken wings

    Marinade Ingredients:

    3 T garlic powder
    1 lg. onion, finely minced
    3 T soy sauce
    3 tsp. Worchestershire sauce
    1/4 C olive oil
    3 T honey
    2 tsp. hot sauce, such as Tabasco®
    1/2 C dark rum

    Serves 4-6 as Appetizers

    First Prepare the Wings:

    Prepare chicken wings by cutting off wing tips and separating the wing at the elbow joint (discard tips or save for making stock). Don't get intimidated at this process, it's very easy. Follow this link for step-by-step photo instructions of how to do it.


    Mix all marinade ingredients together. Place wings into several extra large plastic zipper bags. Pour marinade over wings. Marinate for at least 4 hours or overnight.

    Grill wings over a medium-hot grill for about 8-10 minutes per side or until completely cooked and dark brown, carefully baste once or twice during cooking.
