What goes with fried chicken?

  • What goes with fried chicken?
    I'm hosting a going away party for a co-worker and I'm in charge of cooking.
    I've planned on fried chicken, twiced bake potatoes, an over night salad, and rolls but I also want to include a corn dish.
    Any suggestions of a corn dish that would go well with the other parts of the meal? And any suggestions on an easy dessert?

    If you are wanting corn, I always fix what we call cowboy corn. Saute diced bacon, take bacon out and saute chopped onion and bell pepper in the bacon grease. then add corn. It is real simple and quick.

    That sounds really good Carole!
    Do you add the bacon back to the dish after you've sauted the chopped onion and bell pepper?

    Corn Casserole

    1 egg
    1, 8 oz., can cream corn
    1, 8 oz., can whole corn, drained
    1 small box corn meal muffin mix
    1 stick margarine
    1, 8 oz., carton sour cream

    Drain whole corn. Melt margarine. Mix egg, creamed corn, whole corn,
    muffin mix, margarine, and sour cream. Place in a 2 quart greased
    casserole. Bake in a 350ºF oven for 50 minutes to 1¼ hours.

    SAVORY FRIED CORN

    1 1/2 cups freshly cut corn kernels
    1 small sweet onion, finely chopped
    2 tbsp. chopped cilantro leaves
    1 hot chili pepper, stemmed, seeded, and chopped
    1 egg, lightly beaten
    1 tbsp. flour
    3 tbsp. vegetable oil
    salt and pepper to taste

    Combine all ingredients except oil in a bowl and mix
    thoroughly. Heat the oil in a large heavy skillet. Add
    the corn mixture and saute over high heat for
    about five-ten minutes or until vegetables are golden
    brown. If you like onion to carmelize, go a little longer.

    JEN'S BAKED CORN

    INGREDIENTS
    2 cans creamed corn (15 to 16 ounce cans)
    4 Tablespoons flour
    1 cup milk
    1 cup cheese, optional
    3 to 4 eggs
    4 Tablespoons butter, melted
    bread crumbs OR crushed corn flakes

    INSTRUCTIONS
    Pour creamed corn into baking dish
    Whisk flour, eggs, and milk
    Add margarine and cheese
    Top with bread crumbs OR crushed cornflakes
    Bake at 350 degrees for 1 hour.

    This is our family's favorite. It can be done in a crockpot too...keeps it warm that way.

    Shoe Peg Corn Casserole

    2 cans white shoe peg corn, drained
    1-8 oz block cream cheese
    1 stick butter
    1-4 oz can chopped green chilis, drained

    Soften cream cheese and butter; blend together. Stir in corn and green chilis and mix well. Pour into lightly greased casserole dish. Bake at 350 degrees for 30-40 minutes or until heated through and bubbly.

    Note: Can be prepared in microwave.

    Yield: 8 Servings

    This is a great dessert...

    Butterscotch Brownies

    1 ½ c flour
    1 ½ t baking powder
    ¾ t salt
    1 ¾ c packed dark brown sugar
    1 c chopped walnuts
    1 stick butter (½ c), melted
    2 eggs, slightly beaten
    1 t vanilla extract

    Heat oven to 350º. Mix together flour, baking powder and salt in large bowl. Add brown sugar, walnuts, butter, eggs and vanilla, stirring just to combine.

    Transfer to greased and floured 9x13 baking pan. Bake until gold and firm, about 25 minutes. Remove from oven; place pan on wire rack to cool for 45 minutes. Cut into 24 squares.

    Since I'm going to miss dinner....didn't want to be the *main* attraction *VBG* How about this favorite?


    SCALLOPED SUPREME CORN

    1 can (2 1/2 c.) cream style corn
    1 cup milk (or 1/2 abd 1/2)
    1 well beaten egg
    1 cup cracker crumbs (I use Ritz)
    1/4 cup minced onion
    1/4 cup minced green pepper
    3 tbsp. chopped pimiento
    1/4 tsp. salt
    Dash of pepper
    2 tbsp. butter
    1/2 c. cracker crumbs (I use Ritz)

    Heat corn and milk, gradually stir in egg. Add 1 cup crumbs, onion, bell pepper, pimiento and seasonings.

    Mix well. Pour into greased 8 1/2" x 1 1/2" round pan. Melt butter and pour over 1/2 cup crumbs. Sprinkle the buttered crumbs over corn. Bake in moderate oven, 350 degrees for 20 minutes. I like to top mine w/some grated cheese....good!
