    Do not preheat oven yet. Dough must chill before baking.

    Melt butter in a large microwave-safe bowl. Add sugar and molasses and stir. Let it cool slightly. Then add the beaten eggs, baking soda, salt, cinnamon, and nutmeg, stirring after each addition. Add flour in one- cup increments, stirring after each one. The dough will be quite stiff.

    Cover and refrigerate for at least 2 hours. (Overnight is fine too.)

    Preheat oven to 350 degrees F., rack in the middle position.

    Roll the chilled dough into walnut-sized balls. Put some sugar in a small bowl and roll the balls in it. Place them on a greased cookie sheet (12 to a standard sheet). Press them down just a little so they won't roll off when you carry them to the oven.

    Bake for 10-12 minutes. They'll flatten out, all by themselves. Let them cool for 2 minutes on the cookie sheet and then move them to a wire rack to finish cooling.


    NOTES : * I use 2 1/2 teaspoons cinnamon and 1/2 teaspoon cardamom when I want a deeper, richer flavor.
    Molasses cookies freeze well. Roll them up in foil, put them in a freezer bag, and they'll be fine for 3 months or so. (You'd better lock your freezer if you want them to last that long.)
    These were Dad's favorite cookies. He used to ask me to bake them on Sunday morning, so he could eat them while he read the paper. Mother is also crazy about them, even though they don't have chocolate.

    1. Preheat oven to 350°F, rack in the middle position.

    2. Evenly sprinkle one ingredient from Column A over the melted butter.

    3. Drizzle sweetened condensed milk over the crumbs.

    4. Evenly sprinkle one ingredient from Column B on top.

    5. Evenly sprinkle one ingredient from Column C on top of that.

    6. Evenly sprinkle one ingredient from Column D over the very top.

    7. Press everything down with the palms of your hands. Bake at 350°F for 30 minutes. Cool thoroughly on a wire rack and cut into brownie-sized bars.

    Oatmeal Raisin Crisps

    Amount Measure Ingredient -- Preparation Method

    1 cup melted butter
    2 cups white sugar
    2 teaspoons vanilla
    1/2 teaspoon salt
    2 teaspoons baking soda
    2 large eggs -- beaten (just whip them up with a fork)
    2 1/2 cups flour -- (no need to sift)
    1 cup raisins -- (either regular or golden- you choose)
    2 cups GROUND dry oatmeal -- (measure before grinding)


    Preheat oven to 375° F., rack in the middle position.

    Melt the butter in a large microwave-safe bowl. Add the sugar and mix. Then mix in the vanilla, salt, and the baking soda.

    When the mixture has cooled to room temperature, stir in the eggs. Add the flour and stir it all up. Then mix in the raisins.

    Prepare your oatmeal. (Use Quakers if you have it- the cardboard canister is useful for all sorts of things.) Measure out 2 cups and dump it in the food processor, chopping it with the steel blade until it's the consistency of coarse sand. Dump it in your dough and mix it all up. (This dough will be fairly stiff.)

    Roll walnut-sized dough balls with your hands and place them on a greased cookie sheet, 12 to a standard sheet. (If it's too sticky to roll, place the bowl in the refrigerator for 30 minutes and try again.) Squish the dough balls down with a fork in a crisscross pattern (like peanut butter cookies).

    Bake at 375 degrees for 10 minutes. Cool on the cookie sheet for 2 minutes, then remove the cookies to a wire rack to cool completely.

    NOTES : Andrea likes these and she's never liked raisins--go figure.

    Old-fashioned Sugar Cookies

    Amount Measure Ingredient -- Preparation Method

    2 cups melted butter
    2 cups powdered sugar -- (not sifted)
    1 cup white sugar
    2 eggs
    2 teaspoons vanilla
    1 teaspoon lemon zest -- (optional)
    1 teaspoon baking soda
    1 teaspoon cream of tartar -- (critical!)
    1 teaspoon salt
    4 1/4 cups flour -- (not sifted)
    1/2 cup white sugar -- in a small bowl (for later)

    Melt butter. Add sugars and mix. Let cool to room temperature and mix in the eggs, one at a time. Then add the vanilla, lemon zest, baking soda, cream of tartar, and salt. Mix well. Add flour in increments, mixing after each addition.
    Chill dough for at least one hour. (Overnight is fine.)

    When you're ready to bake, preheat oven to 325°F and place rack in the middle of the oven.
    Use hands to roll dough in walnut-sized balls. Roll dough balls in a bowl of white sugar. (Mix white sugar 2 to 1 with colored sugar for holidays-green for St. Pat's Day, red and green for Christmas, multicolored for birthdays.) Place on a greased cookie sheet, 12 to a standard sheet. Flatten dough balls with a greased spatula.

    Bake at 325°F for 10-15 minutes. (They should have a tinge of gold on the top.) Cool on cookie sheet for 2 minutes, then remove to a rack to finish cooling. They can be decorated with frosting piped from a pastry bag for special occasions or left just as they are.

    Preheat oven to 375°F, rack in the middle position

    Microwave the butter in a microwave-safe mixing bowl to melt it. Add the sugar, vanilla, and molasses. Stir until it's blended, then add the baking soda, baking powder, and salt. Mix well.

    Measure out the peanut butter. (I spray the inside of my measuring cup with Pam so it won't stick.) Add it to the bowl and mix it in. Pour in the beaten eggs and stir. Then add the flour, and mix until all the ingredients are thoroughly blended.

    Form the dough into walnut-sized balls and arrange them on a greased cookie sheet, 12 to a standard sheet. (If the dough is too sticky to form into balls, chill it for a few minutes and try again.)

    Flatten the balls with a fork in a crisscross pattern. (If the fork sticks, either spray it with Pam or dip it in flour.)

    Bake at 375°F for 8 to 10 minutes, or until the edges are just beginning to turn golden. Cool on the cookie sheet for 2 minutes, then remove to a wire rack to finish cooling.

    1 cup butter
    3 cups brown sugar -- ***see Note
    4 eggs -- beaten (with a fork is fine)
    1 teaspoon salt

    3 teaspoons vanilla
    2 cups finely chopped pecans
    4 cups flour

    1. Preheat oven to 350°F, rack in the middle position.

    2. Melt butter and add brown sugar. Mix well and let cool. Add beaten eggs and mix. Add salt, baking soda, vanilla, and nuts. Mix well. Add flour and mix until flour is thoroughly distributed.

    3. Form dough into balls with your fingers. (Make them the size of a walnut with shell.) Place them on a greased cookie sheet, 12 to a standard sheet. Press them down with a spatula. (Spray it with Pam first, or grease it.)

    4. Bake at 350° for 10-12 minutes. Let cookies set up on sheet for one minute, then remove them to a wire rack to finish cooling.

    NOTES : ***There's no need to keep brown sugar in stock. It can be easily made with white sugar and molasses, 1/8 cup (2 tbs) molasses for every 3 cups of white sugar. (That's how they manufacture it, really. And it'll save you from having to deal with all those lumps.) Just add the molasses to the white sugar and stir until it is thoroughly and evenly mixed in.
    (There's no problem if your recipe calls for dark brown sugar, or light brown sugar- just mix in molasses until it's the right color.)

    Pound Plus Cake

    Amount Measure Ingredient -- Preparation Method

    1 1/2 cups softened butter
    2 cups white sugar
    4 eggs
    1 cup sour cream -- (you can substitute unflavored yogurt for a lighter cake)
    1/2 teaspoon baking powder
    1 teaspoon vanilla
    2 cups cake flour -- (DO NOT SIFT-use it right out of the box)


    Preheat oven to 325° F., rack in the middle position.

    Generously butter and flour two 9-inch round cake pans. (Don't use Pam or spray shortening-it won't work.)

    Cream softened butter and sugar in the bowl of an electric mixer. (You can mix this cake by band, but it takes some muscle.) Add the eggs, one at a time, and beat until they're nice and fluffy. Then add the sour cream, baking powder and vanilla. Mix it all up and then add the flour, one cup at a time, and beat until the batter is smooth and has no lumps.

    Pour the batter into the pans and bake at 325 degrees E for 45 to 50 minutes. (The cakes should be golden brown on top.)

    Cool in the pans on a rack for 20 minutes. Run a knife around the inside edges of the pans to loosen the cakes and turn them out on the rack.
    After the cakes are completely cool, wrap each one in plastic wrap, sealing tightly. Wrap these packages in foil and store them in the refrigerator for 48 hours. Take them out an hour before you serve, but don't unwrap them until you're ready to assemble the dessert.


    NOTES : Pound Plus Cake must chill for 48 hours. Make it 2 days before you plan to serve. You can also bake it, cool it, wrap it in plastic wrap and then in foil, and freeze it until you need it. This recipe makes 2 cakes. Each cake serves 6 people.

    Regency Ginger Crisps

    2 teaspoons ground ginger
    2 1/4 cups flour -- not sifted)
    1/2 cup white sugar -- in a small bowl (for later)

    1. Melt butter and mix in sugar. Let mixture cool and then add egg(s). Add soda, molasses, salt, and ginger. Stir it thoroughly. Add flour and mix in. Chill the dough for at least 1 hour. (Overnight is even better.)

    2. When the dough has chilled, preheat oven to 375°F, rack in the middle position.

    3. Roll dough into walnut-sized balls with your hands. Roll the dough balls in white sugar. -(just dump them in the bowl with the sugar and shake the bowl gently to coat them.) Place them on greased cookie sheets, 12 to a standard sheet. Flatten them with a spatula.

    4. Bake at 375° for 10--12 minutes or until nicely browned. Cool on cookie sheets for no more than 1 minute, and then remove to wire rack to finish cooling. (If you leave these on the cookie sheets for too long, they'll stick.)

    Roll the dough into walnut-sized balls with your hands. Roll the balls in white sugar and place them on greased cookie sheets, 12 to a standard sheet. Flatten them with a spatula.

    Put oven rack in the middle position. Bake at 350°F for 10 to 12 minutes or until nicely browned. Cool on the cookie sheets for no more than 1 minute, then remove the cookies to the rack to finish cooling. (If you leave them on the cookie sheets for too long, they'll
    stick.)

    Hannah's Whipped Crème Fraiche

    Assembling Strawberry Shortcake Swensen:Cut each Pound Plus Cake into 6 pie-shaped wedges and place on dessert plates. Top with the sliced straw- berries. Put several generous dollops of Crème Fraiche on top and sprinkle with the brown sugar. Garnish with the whole berries you reserved. Serve and receive rave reviews.

    Made this for Norman, Carrie, and Mother. Used only one Pound Plus Cake and froze the other- Reduced Crème Fraiche recipe by half and used only two boxes of berries.

    The Strawberries

    3 pints strawberries -- boxes, washed and stemmed

    (Prepare these several hours before you serve.)

    Wash 3 boxes of berries and remove stems. (The easiest way to do this is to use a paring knife to cut off the top part of the berry.) Slice all but a dozen or so, reserving the biggest and best berries to top each portion. Taste the berries and add sugar if they're too tart. Stir and refrigerate, covered tightly.

    Place rounded teaspoons of dough on a greased cookie sheet, 12 to a standard sheet. (They'll flatten out as you bake them.)
    Bake at 350°F for 10 minutes. Cool on the cookie sheet for 2 minutes, then remove them to a wire rack to complete cooling.
