    Crockpot Beef Barley Soup

1 pound lean stew beef, cut in 1/2-inch cubes
    1/2 cup chopped onion
    2 ribs celery, chopped
    2 medium carrots, diced
    3/4 cup barley
    1 bay leaf
    6 cups beef broth
1 teaspoon salt, or to taste
    pepper, to taste

In crockpot, combine stew beef with onion, celery, carrots, barley, bay leaf, and beef broth. Cook beef and barley soup on LOW in crockpot for 6 to 8 hours. Taste and add salt and pepper, to taste.

    BEEF TIPS AND GRAVY
    (Posted by Cathyb57_58_Mo, TOH B.B.)

1 lb stew meat, trimmed of fat and cut in bite sized pieces
1 package dry onion soup mix
1 can cream of mushroom soup
    1/4 cup dry red wine
    1 cup coke
    Chopped onion
    Diagonally cut celery
    baby carrots
2 cups egg noodles, cooked and drained

Sauté stew meat in a little canola oil. (I added garlic here)
Place veggies in bottom of crock-pot.

    Mix soups, wine and coke.
Place meat on top of veggies
Pour soup mixture over meat. Cook on high for one hour, then on low for 4 hours.
(You can do a lot with this. I substituted mushrooms for carrots)

You can cut it a little smaller and make a beef stir fry. Sorry, I don't have a recipe, I usually wing it or DH does.

    I make this alot
One can cream of mushroom soup
    one can french onion soup
    one pound stew meat
Combine all in a crockpot and cook on low 8 hours.

Serve over rice, noodles or mashed potatos. This makes its own rich gravy

    This is pretty good.

    Hungarian Goulash

2 # round steak, cubed (or chuck or cross rib)
    1 can (10 3/4 oz) tomato soup
    3/4 c water
    3 T flour
    2 t paprika
    1/2 t onion powder
    1/2 t garlic powder
    1/2 t salt
    1/2 t pepper
    1 c sour cream

    Spray crockpot with Pam-type oil.
Thoroughly mix the soup and the water in the crockpot.
Mix all the dry ingredients together well.
Coat the meat in that mixture.
Gently stir, to cover, the coated meat into the soup/water mix.
Cover and cook on low 8 to 10 hours, or on high for 4 to 5 hours.
Stir in the sour cream about 30 minutes before serving.

Serve over hot noodles or mashed potatoes.
    About 6 servings.
(Peas or French-cut green beans go well with this.)

Here is a different and yummy beef stroganoff recipe--stew meat is awesome in it.

    Beef Stroganoff

1 large or 2 medium onions, sliced very thin
1/4 cup butter (Can also use olive oil)
    2-2-1/2 beef stew meat
    16 oz. sliced mushrooms
    2 cans tomato soup
    2 tsp. prepared mustard
    1/4 cup brown sugar
    1 tsp. Worcestershire sauce
    Kitchen Bouquet browning sauce—for color
    1-1/2 cups sour cream.
1 pound wide or extra wide flat noodles

In a large skillet, sauté onions and mushrooms in butter/olive oil until tender. Remove from skillet. Brown meat in the skillet on all sides. To make sauce, in a large bowl, combine soup through sour cream, adding enough Kitchen Bouquet to get nice color to sauce—usually a couple tablespoons. Add sauce to meat, onions and mushrooms and either cook on the stovetop over medium-low heat for about an hour or put into the crockpot in the AM on low—can cook all day. (To save time and dishes, mix sauce right into crockpot, then dump in cooked onions and mushrooms, then meat.) Boil noodles as directed on package and serve with stroganoff.

    Sherried Beef

    1 lb stew meat
1 package dry onion soup mix (I have starting using dry minced onion and dry minced garlic to cut down in the sodium that is in the soup mix)
    1 4oz can mushrooms
1 can cream of mushroom soup
    1/2 cup red wine
3 carrots cut on the diaganal
2 celery ribs cut on the diaganal

Place all in dutch oven, covered tightly, and put in a 325 degree oven for about 3-1/2 hours or until the beef is fork tender.

I stir it a couple times after about 2 to 2-1/2 hours.

This makes the best gravy. I serve it over egg noodles.

BTW thanks cooknchic for posting my beef tips recipe. Was going for that one, too.

This is one of my favorites!!! From the old Betty Crocker recipes in a box 70s era!

    Connecticut Beef Supper

    Ingredients:

    2 tablespoons shortening
2 lbs. beef stew meat (cut in 1-inch cubes)
    2 large onions
    1 cup water
2 large potatoes (peeled and thinly sliced)
1 can 10 ½ oz. cream of mushroom soup (cream of chicken or celery work also)
    1 cup sour cream
    1 ¼ cups milk
    1 teaspoon salt
    ¼ teaspoon pepper
    1 cup shredded cheddar cheese
1 ¼ cups Wheaties cereal (crushed)

    Directions:

Melt shortening in large skillet. Cook and stir meat and onion in shortening until meat is browned and onion is tender. Add water; heat to boiling. Reduce heat; cover and simmer 50 minutes.

Heat oven to 350° . Pour meat mixture into ungreased baking dish, 13x9x2; arrange potato slices on meat. Stir together soup, sour cream, milk, salt, and pepper; pour over potatoes.

Sprinkle with cheese and cereal. Bake uncovered 1 to 2 hours or until potatoes and meat are tender.

Here's a 3-for-1 recipe I found on this BB and tweaked.

    I like all three versions.

    Ed

    GINGER ALE CASSEROLES
    (BEEF, PORK, OR CHICKEN)

*2 # stew meat (or cubed round or chuck steak)
1 can Campbell's Cream of Chicken and Mushroom Soup**
1/2 c Ginger Ale (“Vernor’s” brand, if possible)
    1 envelope onion soup mix
1 can (4 oz) mushrooms (optional)

    Preheat oven to 300°.
Lightly spray a 9x13” casserole dish or baking pan***.

DO NOT brown meat or dilute soup with water.
Combine all ingredients in large mixing bowl.
    Mix well.
    Pour into prepared casserole dish.
    Cover.
    Bake 3 hours at 300°.
    DON'T PEEK DURING COOKING!

When done, you may want to thicken a bit with either cornstarch and water, or Arrowroot and water.

Serve over mashed potatoes, pasta, or rice, with colorful vegetables.

*For pork use 2 # cubed chops (or loin)
For chicken use 2 # boneless, skinless, meat cubed from breasts or your favorite pieces, or a combination. (Either soup is good with this.)

**This is a “combination” soup which is often difficult to find.

May substitute a can of cream of mushroom soup OR a can of cream of
chicken soup OR use 1/2 can of each of the 2 cream soups, saving the
    remaining half-cans for another use.

***We have also divided this into two 8x8” pans, cooking one and freezing the other uncooked. Be sure to thaw the frozen one completely before cooking.
