    LEMON PILLOW CAKE

    1 white cake mix
    1 can lemon pie filling

    Mix cake as directed on box and pour into a 9x13 pan. Place spoonful of lemon pie filling in blobs over batter. Bake as directed on the box. Let cool completely. Cake batter covers blobs, so there will be pockets of lemony filling inside.


    FROSTING
    1 can ready to spread lemon flavored frosting
    1 tub of Cool Whip

    Mix frosting and Cool Whip together and spread on cake. This does need to be kept refrigerated.

    LEMON ANGEL BARS

    BARS:
    1 box 1-step Angel food cake mix
    1 can Wilderness lemon pie filling
    Mix cake mix and lemon pie filling together and spread in jelly roll pan. Bake for 15 minutes at 350 degrees.

    FROSTING (whipped butter frosting)
    3/4 c. white sugar
    3 tbsp. flour
    1 egg, beaten
    3/4 c. milk
    Pinch of salt
    3 tbsp. powdered sugar
    1 tsp. vanilla
    1/2 c. butter, softened
    1/2 c. nuts, ground

    Mix dry ingredients and add milk; mix well. Add beaten egg and cook until thick, stirring all the while. Let cool. Add 3 tablespoons powdered sugar. Whip butter for 5 minutes and add. Spread on cooled bars. Sprinkle with chopped nutmeats.

    EASY LEMON BARS

    2 eggs
    1 pkg. white cake mix
    1 can lemon pie filling

    Combine eggs and pie filling. Add cake mix and beat well. Put in a greased and floured 10 x 15 inch jelly roll pan. Bake for 30-35 minutes at 325 degrees. Top with cream cheese frosting, tinted yellow if desired.


    FROSTING:

    3 1/2 c. powdered sugar
    1 (8 oz.) pkg. cream cheese
    1/2 tsp. vanilla
    1/2 c. soft butter

    Combine and beat. Spread over cooled bars

    Found this in a search from tescookie:

    I made this recipe earlier this week. It was very good and easy. I found it on lazygourmet.com. If I made it again, though, I'd subsitute lemon extract for the vanilla in the frosting. I think this would give it a little better flavor.

    TAKE IT TO THE LIMIT LEMON BARS

    16 Ounce Angel Food Cake Mix
    22 Ounce Can Lemon Pie Filling
    1 Cup Coconut Flakes
    8 Ounces Cream Cheese, softened
    1/2 Cup Butter, softened
    2 1/2 Cups Powdered Sugar
    1 Teaspoon Vanilla

    Combine cake mix, lemon pie filling and coconut in medium bowl. Stir until thoroughly mixed. Pour into a greased 10" X 15" baking pan. Bake at 350° for 30 minutes. Let cool.

    Combine cream cheese, butter, powdered sugar and vanilla until well blended. Spread over cake.

    It's best if refrigerated overnight.

    LEMON PIE

    1 can sweetened condensed milk
    1 can lemon pie filling
    1 (20 oz) can crushed pineapple,
    drained well
    1 (8 oz) container cool whip
    2 cookie flavored prepared pie crust

    Combine the condensed milk, lemon pie filling and the pineapple. Mix well. Fold in the cool whip. Pour into 2 pie shells. Refrigerate overnight

    This freezes well

    LEMON ORANGE SALAD

    One 6-oz pkg. orange Jello
    one can mandarin oranges
    1 can lemon pie filling

    Dissolve Jello in boiling water as directed. Drain mandarin oranges, reserving the juice. Measure juice and water to make 1 cup. Add to hot Jello mixture and whisk in lemon pie filling. Stir in oranges and chill.

    LEMON SWIRL CHEESECAKE

    16 ounces cream cheese
    1/2 cup granulated sugar
    1/2 teaspoon pure lemon extract
    2 eggs
    1 (9-inch) graham cracker crust
    1 (15 ounce) can lemon pie filling, divided
    Mint leaves or lemon twists (optional)
    Whipped cream

    Mix together cream cheese, sugar and lemon extract until smooth and creamy. Add eggs and mix well. Pour into prepared crust. Spoon about 1/2 can pie filling on top and gently swirl with a wooden pick or knife. Bake at 350 degrees F for 40 minutes or until center is set. Cool to room temperature and refrigerate. Garnish with mint leaves or lemon twists if desired.

    Serve with remaining pie filling and whipped cream.
