    Slickers are hard/firm, rolled and cut out dumplings. Noodles can be like spaetzel or regular noodles. Dumplings can be big puffy balls of dough steamed, usually :O)

    These are the firm/hard dumplings we love 'em, like Cracker Barrel serves :O)

    AWESOME OLDE SOUTH CHICKEN AND SLIPPERY EGG NOODLE DUMPLINGS

    After several unsuccessful attempts to duplicate the old-fashioned chicken and slippery egg noodle dumplings that they serve at Po Folks, now called Folks, I have came up with this awesome recipe! Now, I can keep the extra money I save on a restaurant meal costs. Note:These are not the soft and fluffy Northern dumplings, these are nice and al dente/chewy.

    Ingredients:

    1 1/2 pounds (3 whole) skinned and boned chicken breasts
    two 14 1/2 oz. cans chicken broth or stock
    4 cups water

    Poach the chicken breasts in the chicken broth or stock and the water. Cook, at a simmer, for about 15 minutes, or until the chicken breasts are no longer pink-they should be an opaque-white color. Shred the chicken by hand. Set this aside. Save the chicken broth or stock and water-you will need that to cook your dumplings in.


    3 cups all-purpose flour
    1 teaspoon salt
    1 cup buttermilk
    2 large eggs

    Combine the flour, salt, buttermilk and eggs to make a ball. Roll out 1/8" or as thin as you can get the dough to roll out. Cut into 1" strips and drop into the chicken broth and water liquid you cooked the chicken breasts in, boil for 15 minutes. Add the shredded chicken back to the broth with 1 teaspoon poultry seasoning, pinch dried thyme and 1 teaspoon dried parsley flakes. Heat through.

    Note:If you like vegetables with your chicken and dumplings, add either a 16 oz. can of drained Veg-All or 2 cups of your favorite cooked vegetables.

    Chicken:

    1 small chicken (about 1 1/2 pounds), cut into 8 pieces, skin removed
    1 1/2 cups water
    1 teaspoon salt
    1/2 celery stalk, diced
    1 cup all-purpose flour
    1/4 cup chopped onion

    Dumplings:

    1 cup all-purpose flour
    1 teaspoon baking powder
    3/4 teaspoon salt
    1 tablespoon vegetable shortening
    1/2 cup skim milk

    Chicken:

    Place chicken in a stockpot or large saucepan. Add water, salt, celery, and onion and simmer over low heat until chicken is fully cooked through. Increase heat to bring chicken and stock to a boil. Add dumplings, cover, and boil gently 8 to 10 minutes or until dumplings and chicken are tender. Ladle into serving bowls.

    Dumplings:

    Combine flour, baking powder, and salt in a bowl. Cut in the shortening. Add milk to make a stiff dough and knead until incorporated. Roll dough out to about 1/8-inch thickness and cut into 1-inch strips, squares, or diamonds. Add to chicken and stock as directed above.

    These are called slicker dumplings because they are "slick" and they also are kinda al dente/chewy :O)

    Country Style Slicker Dumplings and Chicken

    Ingredients:

    1 stewing chicken
    2 quarts water
    1 tablespoon salt (this is correct)
    1/2 teaspoon black pepper
    1 medium onion -- sliced
    2 stalks celery -- slice
    2 chicken bouillon cubes*

    Slicker Dumplings:

    3 cups all-purpose flour
    1 1/2 teaspoons baking powder
    1 tablespoon salt
    1 egg -- beaten
    1 cup chicken stock -- approximately

    Stew chicken until tender in 1 quart water; add the onion and celery. Cool and remove meat from bones; discard
    bones. Cut meat into chunks. Add to the rest of the water, salt, pepper and bouillon cubes*. Heat to simmering.
    For the dumplings, mix together dry ingredients. Mix egg with broth and stir in enough to make a medium-stiff
    dough. Knead dough on floured board; roll out very thin. Cut into 1-inch squares. Drop into simmering broth and let cook about 20 minutes. Serve hot with a pat of butter on top.

    Serves 8

    These have cornmeal and bacon in them-they are soft/puffy dumplings.

    Alsatian-style chicken and dumplings

    Ingredients:

    Chicken:

    2-2 1/2 pounds meaty chickenpieces (breasts, thighs, and drumsticks)
    1 tablespoon cooking oil
    1/2 cup chopped onion
    6 cups firmly packed shredded cabbage
    One 14 1/2-ounce can diced Tomatoes
    3/4 cup chopped green sweet Pepper
    1-2 tablespoons packed Brown sugar
    1 teaspoon caraway seed
    1/4 teaspoon Salt
    1/8 teaspoon pepper
    1 cup dry white wine, or apple juice or apple cider
    1 cup chicken broth

    Dumplings;

    1/3 cup all-purpose Flour
    1/3 cup Cornmeal
    1 teaspoon Baking powder
    1/4 teaspoon salt
    6 tablespoons Milk
    2 tablespoons cooking oil
    2 pieces Bacon, crisp-cooked and crumbled
    1 tablespoon snipped fresh parsley

    Directions:
    1.For chicken, skin chicken pieces, if desired. Rinse chicken; pat dry. In a 4 1/2-quart Dutch oven brown chicken in hot oil on all sides over medium heat. Remove from pan. Add onion to pan and cook for 2-3 minutes, or till crisp-tender. Add cabbage, undrained Tomatoes, green Pepper, Brown sugar, caraway seed, 1/4 teaspoon Salt, and pepper. Stir in wine, apple juice, or apple cider. Bring mixture to boiling; return chicken pieces to pan. Reduce heat; cover and simmer for 30 minutes. Stir in chicken broth; return mixture to boiling.
    2.Meanwhile, for dumplings, in a medium mixing bowl stir together the Flour, Cornmeal, Baking powder, and salt. In another bowl combine Milk and 2 tablespoons cooking oil; add to dry ingredients and stir with a fork till combined. Stir in Bacon and parsley. Drop Flour mixture from a tablespoon to make 6 mounds atop the hot, bubbling stew. Cover and simmer for 10-12 minutes, or till a toothpick inserted in the center of a dumpling comes out clean. Do not lift cover during cooking. If desired, garnish with additional snipped parsley.

    Beat one large egg lightly
    ADD
    6 TBSP cold water
    1 TBSP vegetable oil
    1/2 tsp salt
    3 tsp baking powder
    1 cup unsifted flour

    Stir all together until thick and smooth. Drop by spoonful in boiling broth or on top of stew.
    Cook 10 minutes (most dumpling recipes state to cover the pan ) For this recipe the pan can be covered or uncovered.

    INSTANT MASHED POTATO DUMPLINGS

    1 cup Mashed Potato Flakes
    1 cup sifted flour
    2 teaspoons baking powder
    ½ teaspoon salt
    1 tablespoon minced parsley
    1 cup milk
    1 egg

    Combine Potato Flakes, flour, baking powder and salt and parsley. In a separate bowl, combine the milk and egg. Add to dry ingredients and stir to moisten. Let stand 3 minutes. Drop by spoonful onto simmering liquid. Cover tightly and cook 10 to 15 minutes.

    I tried these tonight and they were tender and fluffy. Next time I make them, I will halve the salt though.



    This recent post interested me. I love Dumplings . I bought the potato flakes which I never ever have in the house usually just to try these.
