Hi. I am from Santa Fe, New Mexico. Squash is in abundance at this time of the year so here is our traditional recipe for calabasitas.

5 Zuccini Squash (also yellow squash or any type of squash mixed in or alone)
1/2 onion (chopped)
1 can corn
3-4 canned or fresh green chile
EVO (extra virgin oil)

Heat EVO. Quarter squash and add to EVO. Cook on Med. High on stove top. Add onion, corn and chile. Cook until squash is tender but not real soft. Pour in greased casserole dish. Add grated cheese and bake at 350 degrees until cheese is melted. Serve with pinto beans and tortillas. Enjoy! For those who do not want chile, this is an optional ingredient.
