  • Can habanero peppers be dehydrated??
We only planted one of these and it has produced incredibly well. Rather than drying them the more traditional way by hanging them to dry we would like to use our dehydrater. I have seen recipes using dehydrated habaneros, so I figure there must be a way to preserve them. How do you preserve yours if it isn't thru dehydration? Thanks.

    I found this article:

I dried a lot of habaneros', chilis and other peppers last summer with
    >no problem. I just washed them and twisted the stem off and let them go
    >until real dry. After, ground in a coffee grinder and been using the
    >powder every since. I still have about a gallon of habaneros whole to
    >grind up in a plastic bag.

I not only remove the stems, but also puncture each habanero with a toothpick,
running it all the way through the pepper to make two small holes. These
"vents" seem to speed up the drying process

This will website will tell you how to dehydrate them and I freeze fresh habs on a cookie sheet, then vacuum seal them in bags for winter use.

    Habanero Red Onion Salsa

1 Red Onion, Minced (about 1 cup)
    4 Plum Tomatoes, Diced
    2 Garlic Cloves, Pressed
    1/4 Cup Lime Juice
    2 Tsp. Salt
    2 Tsp. Oregano
    1 Tsp. Ground Cumin
    2 Tbsp. Olive Oil
1 Fresh Habanero, Seeded & Minced

Combine all of the ingredients, using just half of the Habanero at first. Taste, and more of the Habanero for more heat. Makes 2 cups.
This can be processed in a blender or food processor for a smoother mixture.
You may substitute other chiles to your taste.

Thank you for the help. M Wolverine, the recipe sounds wonderful. I have learned to taste test first with habs. Made chili that I thought would melt the serving bowls. Even my castiron stomach couldn't handle that 2 days straight. We have a hispanic friend who eats them like apples. jen
