  • Hershey's Old Fashioned Chocolate Fudge - 60' Can Recipe
    Hershey's Old Fashioned Chocolate Fudge
    : 2/3 Hershey's Cocoa
    : 3 cups Sugar
    : 1/8 tsp. Salt
    : 1 1/2 cups Milk
    : Combine cocoa, sugar and salt. Add milk. Bring to a
    : boil, stirring constantly. Cook to 235* degrees(on
    : candy thermometer( or when when syrup is dropped
    : into very cold water forms a soft ball that flattens
    : when removed from water)WITHOUT STIRRING AT ALL!
    : (stirring makes a grainy fudge. SO does stirring
    : BEFORE it cools to luke warm).
    : Remove from heat. Add 4 1/2 tbsp butter and Vanilla.
    : Cool at room temperature to 110* degrees F.(lukewarm).
    : Beat with a wooden spoon until fudge thickens and
    : loses some gloss. Quickly spread in buttered 8-9
    : inch square pan that has been buttered all over.
    : Cool. Then cut into about 3 dozen squares.

    OLD FASHIONED FUDGE

    Ingredients :
    2 c. sugar
    4 heaping tbsp. Hershey's cocoa
    3/4 c. canned evaporated milk
    1/4 c. white Karo syrup
    1 heaping tbsp. butter
    1 tsp. vanilla
    1 c. chopped black walnuts

    Preparation :
    In cast iron skillet, mix sugar and cocoa.Stir together
    evaporated milk and Karo syrup; add to sugar mixture.Stir until
    smooth.Add butter.Let boil until soft ball stage develops (drop
    into 1/2 cup cold water until soft ball forms).Take from heat and
    add vanilla. Beat until cool and creamy.Add nuts.Pour into
    buttered platter, cool, and cut into squares.

    HERSHEY'S CHOCOLATE CAKE

    2 c. sugar
    1 3/4 c. flour
    3/4 c. cocoa
    1 1/2 tsp. baking soda
    1 1/2 tsp. baking powder
    1 tsp. salt
    2 eggs
    1 c. milk
    1/2 c. oil
    2 tsp. vanilla
    1 c. boiling water

    FROSTING:
    6 Tbsp. butter, softened.
    1/2 c. cocoa
    2 2/3 c. powdered sugar
    1/3 c. milk
    1 tsp. vanilla


    Preheat oven to 350 degrees. In large mixer bowl, combine dry ingredients. Add eggs, milk, oil and vanilla. Beat on medium speed 2 minutes. Add boiling water. Mix all together. (Batter will be thin.) Pour into greased 9 X 13 pan. Bake at 350 degrees 35-40 minutes. Cool completely before frosting.

    Oh my goodness twinkle30, thank you for all the wonderful cocoa recipes off that old can, my Mom also made that fudge and added raisens and peanuts, loved it. We would make it Saturday night for our weekend treat to eat while watching tv and sometimes pour it over our popcorn, that happened accidentaly and it turned out pretty tasty then we did this often. These recipes brought back wonderful memories and I'm glad to copy them thanks!!! Didn't have work on Monday so just found this.

    thanks, it's the same recipe i have, except my recipe calls for 1/4 cup butter (oleo).
    if i can catch a day when the humidity isn't high i'm going to try it again. i've made it 3 times when my 23 yo ds was 3 or so. first time it came out just like it should. the second time, i undercooked it and we ate it with a spoon. the third time i overcooked it and had to use a sledge hammer to get it out of the pan because a neighbor picked that time to come over and argue with me. so i haven't tried it since.

    This is the fudge I have made since I was a bride many moons ago until I found the Creme Drop Fudge this Dec.
    This is really the best fudge there is IMHO.
