Need idea for egg replacement

  • Need idea for egg replacement
    I am making this meatloaf but am out of eggs. Is there anything anyone can reccomend to substitute for the eggs? Help!

    It is Moms Meatloaf from 1998 TOH

    2 eggs

    3/4 cup milk

    2/3 cup finely crushed saltines

    1/2 cup chopped onion

    1 teaspoon salt

    1/2 teaspoon rubbed sage

    Dash pepper

    1-1/2 pounds lean ground beef

    1 cup ketchup

    1/2 cup packed brown sugar

    1 teaspoon Worcesteshire sauce





    SERVINGS 6-8

    CATEGORY Main Dish

    METHOD Baked

    PREP 15 min.

    COOK 60 min.

    TOTAL 75 min.





    DIRECTIONS



    In a large bowl, beat eggs. Add milk, saltines, onion, salt, sage and pepper. Add beef and mix well. Shape into an 8-1/2-in. x 4-1/2-in. loaf in an ungreased shallow baking pan. Combine remaining ingredients; spread 3/4 cup over meat loaf. Bake at 350° for 60-65 minutes or until no pink remains; drain. Let stand 10 minutes before slicing. Serve with remaining sauce. Yield: 6-8 servings.

    Sounds like a great recipe. the eggs just serve to bind the meatloaf. I don't think it would make a great deal of difference, but would be interested in the replies to this one.

    For each egg combine 2 Tbsp. flour, 2 Tbsp. water and 1/2 tsp. oil.
