ISO Ideas for Potluck Lunch at work?
Help,
I am drawing a blank...need a dish that can either be cold or in crockpot or room temp....any thoughts?

This is a good one and travels easily.
~~Danish Apple Dessert~~
1 egg, well beaten
1 stick butter, melted
1 box yellow cake mix
2 cans apple pie filling
2 c. milk
1 pkg. vanilla instant pudding
6 oz. Cool Whip
In bowl blend cake mix, butter and egg.
When well mixed, pat in bottom of 9x13 pan.
Spread pie filling over crust.
Bake at 375 degrees for 45 minutes. Mix pudding with milk; spread over hot dessert.
Cool.
Frost with Cool Whip and refrigerate.
Nuts may be sprinkled on top.
Cherry pie filling also good.

Clam Casserole

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 qrt minced clams
1 lb linguica skinned & finely chopped
1 loaf day old bread -- about 1 lb
1 medium onion -- minced
1 tsp sage
1/4 tsp salt
1/4 tsp pepper
1 tblsp crushed red pepper
1/2 tsp garlic powder
1 lg egg -- beaten
Combine all ingredients but egg.When thoroughly mixed add egg and blend well.Place in a well greased 2 quart casserole and bake at 350º for 30 mins.

I just took Creamy Cheesy Pumpkin Soup to a potluck and it was gobbled up. The women seemed to like it better than the men did. I think I found it on this BB.

How about vegetable pizza.
YOu use 2 crescent roll pkgs and flatten into 9x13 and bake till golden. Cool
Top with mixture of
8 oz cream cheese
1 cup mix of mayo and sour cream (I use half and half)
salt and pepper to taste
dill weed
parsley
or any herbs you like
Top this with
2-3 cups mix of following
shredded carrots
celery
onion minced
broccoli and or cauliflower chopped
pepper
or any fresh veggies you choose
then top with shredded cheddar and bacon bits. Bacon is optional
This is really good

Crockpot Chicken with Stuffing
4 boneless chicken breasts, cubed
Salt and pepper to taste
1 cup chicken broth
4 slices Swiss cheese
1 can cream of chicken soup
1 can cream of mushroom or cream of celery soup
1/4 cup milk
2 cups Pepperidge Farm Herb Stuffing Mix
1/2 cup butter, melted
Season chicken with salt and pepper and place in crockpot. Pour broth over chicken. Lay cheese on chicken. Combine both cans of soup and milk and pour over chicken and cheese. Sprinkle stuffing mix over all. Drizzle melted butter on top. Cook on low for 6-8 hours.

Crock Pot Honey Baked Ham
4 lb Ham; boneless, fully cooked
1 cn Lemon lime soda; 12 oz, -gingerale may also be used
1/4 cup Honey
1/2 tsp Mustard
1/2 tsp Cloves; ground
1/4 tsp Cinnamon; ground
Place ham and soda into crock pot. If your pot has a rack, you can use it. Cover and cook on low 6 to 8 hours (high 3 to 4 hours). Thirty minutes before serving, combine remaining ingredients, including 3 tbs drippings from bottom of crock pot. Spread glaze over ham and continue heating. Let ham stand for 15 minutes before serving

Dutch Apple Crockpot
1/2 lb peeled and sliced cooking apples
1/4 Cup sugar
1 1/2 Tablesppon lemon juice
1/2 Cup honey
1/2 Cup flour
1/4 Cup brown sugar
1/4 teasppon salt
1/2 teaspoon cinnamon
pinch of cloves
1/4 Cup butter
Arrange sliced apples in bottom of crock. Sprinkle sugar and lemon on
top. Pour honey over all. Combine flour, brown sugar, salt, cinnamon
and cloves, stir well. Cut in butter until mixture is consistency of
coarse cornmeal. Sprinkle brown sugar mixture over apples. Cover and
cook on low 8-10 hours or until top crust is browned. Serve warm.

Orange Cinnamon Chicken
4 Pounds Chicken pieces
1 Cup Chicken broth
1 Cup Raisins or sultanas
1 Tablespoon Flour
1/4 Pound Butter
2 Cups Orange juice
1/4 Teaspoon Cinnamon
Salt and pepper to -- taste
Heat butter in a large skillet, and brown chicken. Remove chicken to
cooker as the brown. Combine all other ingredients, except flour, in skillet.
Mix well and pour over chicken. Cover pot, turn on LOW and cook 4-6 hours,
or until chicken is tender. Remove one cup of sauce from pot and combine
with flour, mixing well. Return sauce flour mixture to the pot. Turn pot on
HIGH and cook and additional half hour. Serves 6.

SWEET POTATO CASSEROLE
2 16 oz cans sweet potatoes, drained and mashed
1/2 cup milk
6 Tbsp. butter or margerine, softened
1 tsp. freshly grated lemon peel
1/2 tsp. salt
1/4 tsp. nutmeg
Dash cayenne pepper
4 eggs
In a bowl, beat sweet potatoes, milk, sherry, and butter with an electric
mixer, until smooth. Add remaining ingredients and beat well. Pour into
greased crockpot. Cover and cook on HIGH setting for 1 hour, then turn
to LOW setting for 3 to 4 hours.

Crockpot Hash Brown Casserole
INGREDIENTS:
1 1/2 lbs. ground chuck or ground round
1 bag (32 oz.) hash brown potatoes, thawed
1 teaspoon garlic powder
1 cup chopped onion
salt and pepper to taste
1 envelope brown gravy mix
1 cup boiling water
1 tbsp. butter
PREPARATION:
Brown ground beef in a non-stick skillet ; drain well and transfer to slow crockpot. Combine chopped onion, garlic powder, hash brown potatoes, salt & pepper to taste. Pour over ground beef in crockpot.
Stir. Mix gravy and boiling water. Pour over mixture. Dot with butter. Cover and cook 7 to 8 hours on low.

I have made this up and cooked in a crockpot-it worked well.
SOUTHWEST SPAGHETTI
12 OZ uncooked spaghetti
1 1/2 lbs ground beef
1 small onion, chopped
1 packet taco seasoning
26 oz jar spaghetti sauce
4.5 oz can sliced mushrooms, drained
2.25 oz can sliced ripe olives, drained
2 c. shredded cheddar cheese
shredded lettuce, diced tomatoes, sour cream, salsa
Cook spaghetti as label directs. Meanwhile, in a large skillet, cook ground beef and onion until no pink remains.Drain. Stir in taco seasoning, spaghetti sauce, mushrooms, and olives. Drain pasta, add to beef mixture. Transfer to a greased, shallow, 3 qt baking dish (or crockpot). Sprinkle with cheese. bake uncovered for 25"-30" @ 350º. Top with lettuce, tomatoes, sour cream and salsa before serving.
If I remember correctly, I made this in the morning, then took to work and cooked on low and it was ready to eat at noon. My crockpot is newer and cooks very hot, even on low.
