R&R: Creamy Scrambled Eggs For A Crowd

  • R&R: Creamy Scrambled Eggs For A Crowd
    This came from recipezaar and is excellent. I made it for breakfast this morning. The eggs are so moist and fluffy. They continue to cook a bit after removing from the microwave so don't overcook them.

    Creamy Scrambled Eggs for a Crowd

    16 large eggs
    1 (8 ounce) package cream cheese, softened
    1 teaspoon Tabasco sauce
    1/2 teaspoon salt
    1/4 teaspoon Accent seasoning
    1/4 teaspoon fresh ground black pepper
    2 cups milk

    1. Whisk together all the ingredients in a large microwave-safe bowl.
    2. Microwage on high for 2 minutes Remove from the microwave and stir.
    3. Microwave for 1-2 minutes more, then stir.
    4. Repeat the process until the eggs are set but still moist, about 8 minutes total. (Eggs continue to cook after removing from microwave. Do Not overcook.
    5. Serve hot.

    This sounds good, we always use Gaudrey's egg recipe for Christmas morning, it keeps for a while...like an hour or so.

    alphy, can you post or bump up Gaudreys recipe. I tried but couldn't find it. I could have used the "keeps for awhile" feature this morning when I had 22 for brunch!!!

    I made a version of that oven-baked Denver omelet for Christmas morning, and that worked well, but this also looks great!
