I just made this for Christmas dinner - it's easy & very good.

    CRANBERRY RASPBERRY CHEESE MOLD

2 packages (4 oz. serving size) raspberry jell-o
    2 cups boiling water
1 package (8 oz.) brick cream cheese, cubed
1 can (1 lb.) whole berry cranberry sauce

Dissolve one package of gelatin in one cup boiling water, stirring about two minutes. Pour into a blender container. Add cream cheese; blend on high until smooth. Pour into a 5 cup mold that has been lightly sprayed with no stick cooking spray. Chill until set but not firm. Dissolve remaining package of gelatin in remaining 1 cup boiling water. Stir in cranberry sauce until well blended. Spoon over gelatin layer in mold. Chill until firm, about four hours.

You can make this any color you wish by varying the flavor of gelatin. I used lime this year and added some chopped drained Maraschino cherries. It is so easy and fast too because you don't have to wait for the gelatin to congeal and it can be served right away or chilled to serve later.

    Christmas Salad

1 (3 ounce) box cherry gelatin
1 (6 ounce) box cherry gealtin
16 ounce carton regular cottage cheese (low fat kinds make it watery)
20 ounce can crushed pineapple in its own juice, drained well
11 ounce can sliced peaches, cut slices in half and drain thoroughly
1/2 cup chopped pecans or walnuts
    16 ounce tub whipped topping

Combine well drained fruits with gelatin powder, cheese, and nuts. Fold in whipped topping. Chill well before serving. For garnish, use a spoonful of additional whipped topping and 1 teaspoon of finely crushed cherry Lifesavers on top of each individual serving. Other flavors of lifesaver may be used depending on the flavor of gelatin. You may substitute a small can of Mandarin oranges for the peaches if desired, Drain well before using.

    Florida Jello Salad

Boil for 1 to 3 minutes in microwave

1 19 oz. can of pineapple with juice with 6 oz. jello (2 pkgs) of orange or lemon. (I used crushed pineapple).

    Stir to dissolve - cool

Add 8 oz. container of cool whip
    2 cups of buttermilk
    1 can of drained oranges

I poured this into a medium tupperware mold and there was some left over. Next time I would use my large tupperware mold which I didn't bring with me to Florida. This could go into a 9 x 13 " pan.

I made this for the first time this Christmas. It was a hit at the RV park Christmas dinner.

    Mandarin Fruit Salad

2 cups boiling liquid (juice from fruit or water)
1 large package (6-ounces) orange gelatin
1 tall can (13-ounces) canned milk, chilled (not
    sweetened condensed)
    1/4 cup lemon juice
    1/2 cup mayonnaise
2 1/2 to 3 cups mandarin orange sections, drained
    1/2 cup chopped nuts

Dissolve gelatin in boiling liquid, chill until slightly
thickened. Whip canned milk until it holds stiff peaks (be sure
bowl and beater are dry). Gradually whip in lemon juice, then
gelatin mixture. Fold in the mayonnaise, orange sections and
nuts. Pour into 3-quart container. Chill several hours until
    firm.

Serve on salad greens if desired. Garnish with mayonnaise topped
    by mandarin orange sections.

    Makes 16 servings

For variety, use the same recipe with fruit cocktail (3
1/2-cups), instead of mandarin oranges, and any flavor gelatin.
