    I have seen the cakes at carry-in dinners. Think it is a great idea, makes cutting in smaller pieces easier. Cakes also have the cherries halved, or smaller. Thanks to all you helpful BBers.

    This was another experiment that turned out well. It's a cross between Banana Nut Bread and Pineapple Upside Down Cake - two of my DH's favorites.

    gaudrey's Pineapple Banana Upside Down Cake

    1 stick butter or margarine, melted
    1 cup dark brown sugar, packed
    1 cup chopped pecans, optional
    2 cups (approx. 20 ounce can) crushed pineapple in its own juice, drained
    3 eggs, beaten
    2 cups very ripe mashed bananas
    1 box yellow cake mix
    Whipped cream or ice cream, optional
    Pineapple flavored hard candies, crushed, optional

    Preheat oven to 350°. Spray a 9x13 inch baking pan with a cooking spray. Pour in the melted butter or margarine and turn pan to coat bottom evenly. Sprinkle evenly with the brown sugar. Scatter pecans evenly over the sugar. Add well-drained crushed pineapple evenly over the nuts. You may use more than 2 cups if you wish. (I sometimes use a small can in addition to the tall one. Makes it very "pineappley.") Combine eggs and bananas until smooth. Add dry cake mix and beat on low speed until moistened. Then beat on medium speed for 3 minutes. Spoon carefuly over the pineapple layer. Bake until the top springs back when lightly touched with the fingertips, about 40 to 45 minutes. Cool in the pan for a few minutes and then turn out onto a cookie sheet or jelly roll pan to complete cooling. May serve warm or cool. Whipped cream or ice cream make wonderful toppers. Sprinkle with some pineapple flavored crushed hard candies for garnish, if desired.

    NOTE: For plain Pineapple Upside Down Cake, omit the bananas and substitute sour cream in the cake batter instead.

    The original Dole recipe for Pineapple Upside-Down Cake.

    Ingredients:

    1 large can pineapple, crushed or sliced
    2 cups flour, sifted
    2 teaspoons baking powder
    ½ teaspoon salt
    ½ cup and 2 tablespoons butter
    1 cup sugar
    2 eggs, separated
    ½ cup milk
    1 teaspoon vanilla extract
    1 cup brown sugar
    Maraschino cherries, to garnish

    Drain the juice from 1 large can of either Crushed or Sliced Hawaiian Pineapple.
    Sift 2 cups flour. Sift again with 2 teaspoons baking powder and 1/2 teaspoon salt.
    Cream 1/2 cup butter or substitute, gradually add 1 cup sugar; cream well.
    Beat yolks and whites of 2 eggs separately. Add yolks to creamed mixture; mix well, then add flour and 1/2 cup milk alternately, mixing well.
    Fold the 2 beaten egg whites and 1 teaspoon vanilla.
    Melt 2 tablespoons butter in large frying pan.
    Spread 1 cup of brown sugar over pan.
    Add pineapple (if Sliced is used, place slices closely together on the sugar; if Crushed, simply pour in the well-drained fruit).
    Pour cake batter over fruit.
    Bake 45 minutes (at 350 degrees).
    Turn upside-down on serving dish and garnish with maraschino cherries.

    Pineapple Upside Down Cake
    Delicious and fruity cake is great even if it is upside down.

    Ingredients:
    1 1/4 cups flour
    2 teaspoons baking powder
    1/4 teaspoon salt
    1 cup sugar
    3/4 cup milk
    1 teaspoon vanilla
    1 egg
    4 pineapple slices or 1 cup crushed pineapple
    1/2 cup margarine or butter
    1/4 cup brown sugar

    Directions:
    Melt 1/4 cup margarine or butter in a 9x9 pan.

    Sprinkle brown sugar evenly over melted margarine.

    Drain 4 pineapple slices or 1 cup of crushed pineapple and arrange in pan.

    Mix flour, baking powder, and salt into a mixing bowl.

    Stir in sugar.

    Add 1/4 cup margarine or butter and milk.

    Beat for 2 minutes at medium speed in a mixer, scraping sides of bowl frequently.

    Add vanilla and egg.

    Beat at medium speed for another minute and pour carefully over pineapple in pan.

    Bake for 50 to 60 minutes or until cake springs back when top is lightly touched with a finger.

    Remove from oven; turn upside down all at once.

    Leave pan in place for 1 to 2 minutes so topping will not stick to pan; remove pan.

    Serve warm or cold. Peaches may be substituted for pineapple.

    I have always used crushed pineapple to make PUDC. I just melt 1 stick of butter in my 9x13 pan, add 1 cup brown sugar, stir and spread out evenly in the pan. Then I pour the well-drained crushed pineapple over that. I press 9 maraschino cherries into the mixture also. I just make up a yellow cake mix following the box directions, pour it over all and bake for 30-35 minutes in a 350 oven. It is my husband's favorite cake so I always make it on his birthday.

    I do the same a Sissue except in place of the water, I use the juice that I drained off of the crushed pineapple.
