  • Brownie Mix recipes
    I thought since we have been doing recipes with all different cake mixes that I would start a post with recipes using brownie mixes.

    Here is one of our favorites.

    Praline Brownies


    1 pkg Duncan Hines milk chocolate chunk brownie mix
    2 eggs
    1/3 c water
    1/3 c crisco oil
    3/4 c chopped pecans


    3/4 c brown sugar, packed
    3/4 c chopped pecans
    1/4 c butter or margarine, melted
    2 tbsp milk
    1/2 tsp vanilla

    Preheat oven to 350º. Grease a 9" square pan.

    For brownies: Combine brownie mix, eggs, water, oil & 3/4 c pecans in large bowl. Stir with spoon till well blended, about 50 strokes. Spread in pan. Bake for 35 to 40 minutes. Remove from oven, spread with topping.

    For topping: Combine brown sugar, 3/4 c pecans, melted butter, milk, & vanilla in small bowl. Stir with spoon till well blended. Spread over hot brownies and return to oven. Bake 15 more minutes or until topping is set. Cool completely. Cut into bars. Yield: about 16 brownies.

    Cream Cheese Brownies


    1 pkg brownie mix
    1/3 c milk
    2 eggs


    1 (8 oz) pkg cream cheese
    2 tbsp butter
    1/4 c sugar
    1 tbsp flour
    1 egg
    1/2 tsp vanilla


    1/2 c sugar
    1/3 c milk
    5 tbsp butter
    12 oz pkg peanut butter chips

    Blend Brownie mix with milk and eggs. Spread 2/3 of the batter in a greased 9 X 13" baking pan.

    Cream butter and cream cheese. Add rest of filling ingredients and mix well. Spread over the batter in pan. Add the remaining batter. Bake at 350º, 35-40 minutes.

    For frosting, heat sugar, milk and butter. Boil 1 minute. Add chips, stirring until melted. Cool and frost.

    Brownie Sin

    1 box (21-24 oz) fudge brownie mix
    1 can (14 oz) sweetened condensed milk
    1/2 c cold water
    1 box (3-1/2 oz) instant vanilla pudding and pie filling
    1-3/4 c frozen whipped topping, thawed ( and 8 oz) container is 3-1/2 c)
    1 quart fresh strawberries, cleaned, hulled, and halved

    Preheat oven to 350º. Grease two 9" round layer cake pans. Line with wax paper, extending up sides of pans; grease wax paper. Prepare brownie mix according to pkg directions for cake-like brownies, then pour mixture into prepared pans. Bake for 20-25 minutes or until top springs back when touched; cool. Meanwhile, mix sweetened condensed milk and water in large bowl; beat in pudding mix. Chill for 5 minutes. Fold in whipped topping. Place 1 brownie layer on a serving plate. Top with half the pudding mixture, then half the strawberries. Add second brownie layer, then remaining pudding mixture and strawberries. Keep refrigerated.

    Note: You can use frozen berries instead of fresh or chocolate cake mix instead of brownie mix.

    Brownies to Die For

    1 ( 19.8 oz) brownie mix
    1 c sour cream
    1 (16 oz) container coconut pecan frosting
    1 c semisweet chocolate chips
    1 c chopped pecans

    1. Preheat oven to 350º. Grease one 9 X 9" baking pan.

    2. Mix brownie mix according to box directions, omitting 1/2 of the oil asked for. Add the sour cream and coconut pecan frosting, mix and spread in the prepared pan.

    3. Bake at 350º for 20 to 30 minutes. Be careful not to overbake or they will harden and be impossible to eat! About 5 minutes before it is done take it from the oven and sprinkle semi sweet chocolate chips all over the top along with the chopped pecans. Place back in the oven for 5 minutes, take out and use a spatula to spread the chocolate chips around to frost the brownies.

    Makes 36 brownies

    Brownie Triffle

    1 (19.8 oz) fudge brownie mix
    1/4 c Praline Liqueur
    1 (3.9 oz) chocolate fudge instant pudding or mousse
    8 (1.4 oz) toffee-flavored candy bars(Heath Bars)
    1 (10.8 oz) cool whip
    Garnish with chocolate curls
    chocolate nuts(pecans)

    Prepare mix. Prick top of warm brownie and brush with Praline Liqueur. Cool; crumble into pieces.

    Prepare pudding. Omit chilling. Layer in triffle bowl, brownie, pudding, crushed candy and topping. Put crushed candy and nuts on top.

    Brownie Peanut Butter Bites

    1 pkg (15 oz) brownie mix
    1/3 c hot water
    1/4 c oil
    1 egg
    48 miniature peanut butter cups

    Preheat oven to 350º. Combine brownie mix, oil and egg. Beat well with spoon. Fill paper lined mini muffin cups about 1/2 full. Press one peanut butter cup into batter in each cup. Bake 15-20 minutes or until brownie is set. Cool completely.

    Gooey Brownie Cake

    3 eggs, divided
    1 pkg (3.9 oz) instant chocolate pudding mix
    1 c milk
    3 tbsp orange liqueur, such as Grand Marnier, divided
    1 pkg (1 lb 5.2 oz) fudge brownie mix
    1/4 c orange juice
    1/4 c oil, preferably canola
    1 tsp grated orange zest
    3/4 c chocolate frosting
    3/4 c heavy cream, divided
    orange slice wedges, optional

    Preheat oven to 350º. Butter and flour 9" round cake pan. Separate 1 egg; set aside. In bowl with mixer at low speed beat pudding mix and milk until thickened, 2 minutes. Beat in yold and 2 tbsp liqueur; set aside. In another bowl stir together dry brownie mix, juice, oil, zest, egg white and remaining eggs until just combined. Pour half of batter into pan. Spoon reserved pudding mixture into center of batter; top with remaining batter. Bake 50 minutes. (Center will be soft.) Cool 30 minutes in pan on rack. Run knife around edge of cake to loosen. Invert onto serving platter. In pot heat frosting with 1/4 c cream over low heat, stirring, until smooth and pourable. Pour over cake, smoothing sides with spatula. Beat together remainnig cream and liqueur until set; transfer to pastry bag fitted with star tip. Pipe rosettes or spoon whipped cream around top. Garnish with orange slices.

    Makes 10 servings

    I posted this recipe a couple weeks ago but I think it got lost in the shuffle. In the last couple weeks I have made it 5 times. Needless to say we love it. Hope you enjoy it too. I did make it in a 9x9 pan because I think it fits better.

    1 pkg Duncan Hines® Milk Chocolate Chunk Brownie Mix
    2 cups miniature marshmallows
    1 cup semi-sweet chocolate chips
    1/2 cup creamy peanut butter
    1 cup crisp rice cereal

    Preheat oven to 350 ºF. Grease bottom of 8x8-inch pan.
    Prepare and bake brownies according to package directions. Remove from oven.
    Sprinkle marshmallows on hot brownies. Return to oven. Bake for 3 minutes.
    Place chocolate chips and peanut butter in medium saucepan. Cook on low heat. Stir constantly until chips are melted. Add rice cereal. Mix well. Spread mixture over marshmallow layer. Refrigerate until chilled.

    S'mores Squares (Low Fat)


    24 graham crackers (12 whole crackers)
    1 pkg low-fat fudge brownie mix (Betty Crocker)
    2 egg white


    3 c miniature marshmallows
    1/2 c milk chocolate chips
    1/2 tsp shortening

    Preheat the oven to 375º. Spray a 15 X 10" jelly-roll pan with vegetable oil cooking spray. Line the bottom of the pan with graham crackers.

    In a bowl combine the brownie mix, egg whites, and 1/3 c water and stir until moistened, then beat 50 strokes by hand. Spread evenly over the graham crackers. Bake for 15-18 minutes. Do not overbake.

    Remove brownies from the oven. Immediately sprinkle with marshmallows, gently press into hot brownies. Bake an additional 2 minutes, or until marshmallows are puffed.

    Meanwhile in a small saucepan, combine the chocolate chips and shortening. Stir over low heat until melted and smooth. Drizzle the topping over the marshmallows. Cool completely. Using a knife dipped in hot water, cut into bars. Makes 15. 2 grams of fat per bar.

    For all you peanut butter lovers.

    Peanut Butter Meltaways

    1 pkg Betty Crocker Supreme brownie mix( with pouch of Hershey's Syrup)
    1/4 c water
    1/2 vegtable oil
    2 eggs
    3 c powdered sugar
    1/2 c creamy peanut butter
    1 tsp vanilla
    about 4 tbsp milk
    1/2 c semisweet chocolate chips
    1 tbsp shortening

    1. Heat oven to 350º. Line rectangular pan, 13x9x2", with aluminum foil, leaving 1-inch of foil at opposite sides; grease foil on bottom only.

    2. Stir brownie mix, pouch of Hershey's Syrup, water, oil and eggs in medium bowl about 50 strokes or until well blended. (Mixture may be lumpy.) Spread in pan.

    3. Bake 27 to 29 minutes or until toothpick inserted 2" from sides of pan comes out clean or almost clean. Cool.

    4. Beat powdered sugar, peanut butter, vanilla and 1 tbsp of the milk in medium bowl with electric mixer on low speed until well mixed. Beat in remaining milk, 1 tbsp at a time, until spreading consistency; spread over brownies. Refrigerate about 15 minutes or until topping is firm.

    5. Melt chocolate chips and shortening over low heat, stirring constantly. Drizzle evenly over topping. Refrigerate about 10 minutes or until chocolate is firm. Lift out foil and brownies. Cut into 1 1/2-inch squares. Refrigerate any remaining squares.

    Banana Split-Brownie Pizza

    1 (21 oz) pkg brownie mix
    1 (8 oz) can pineapple tidbits
    1/2 c sugar
    2 (8 oz) pkg cream cheese, softened
    3 bananas, sliced
    1/2 c chopped pecans
    1 (1 oz) square semisweet chocolate
    1 tbsp butter or margarine
    sliced strawberries

    .1. Prepare brownie mix according to pkg directions.

    2. Spread batter in 15" pizza pan.
    3. Bake at 375º for 15-20 minutes.
    4. Cool completely in pan on a wire rack.
    5. Drain pineapple tidbits well, pressing between layers of paper towels to remove excess juice.
    6. Beat cream cheese and sugar with an electric mixer on medium speed until smooth.
    7. Spread mixture over cooled brownie crust.
    8. Arrange pineapples, bananas, strawberries and pecans on top.
    9. combine chocolate and butter in a 1 cup glass-liquid measuring cup.
    11. Microwave on High 1 minute-stirring after 30 seconds.
    11. Drizzle over fruit.
    12. Refrigerate 1 hour.

    Makes 16 servings

    Rocky Road Brownies

    1 pkg (20 to 23 oz) brownie mix
    2 c Jet-Puffed miniature marshmallows
    1 c (6 oz pkg) semi-sweet chocolate chips
    1/4 c milk
    1/2 c coarsely chopped nuts

    Prepare mix and bake as directed on pkg for cake-type brownies.

    Immediately sprinkle marshmallows over brownies.

    Melt chocolate with milk over low heat, stirring until smooth. Drizzle over marshmallows; sprinkle nuts on top.

    Cool; cut into bars.
