    I've looked all over and can't find a recipe for muffins made with pie filling.
    I"m only asking because of a request from my husband.

    Easy Smeezy Apple Muffins

    2 large eggs
    1 cup sour cream
    21 ounce can apple pie filling*
    18 ounce yellow, white, lemon or spice cake mix*
    Optional: Freshly ground cinnamon

    Preheat oven to 350 degrees F. Grease or paper-line 18** muffin cups. Combine eggs, sour cream and apple pie filling. Add cake mix, but don't over mix. Place batter in muffin cups***. Sprinkle tops with optional cinnamon.

    Bake for 25 to 30 minutes. Cool in pan for 10 minutes before removing. Serve warm with real butter.

    *Flavor variations are only limited by your imagination and what's in the grocery store.

    **I made 12 large muffins and one small loaf pan. It all baked at the same time.

    ***Be sure that there is at least one apple slice in every cup.

    ****Final note: As there is no added fat, the muffins are a bit sticky, but they still taste wonderful

    Here's another one from google. She made them as mini muffins, but I'm sure you could do regular size ones as well. If you make the bigger ones, I'd turn down the oven temp. to 350°...but that's just my opinion. :)


    Very Cherry Pie Almond Muffins
    2 and 1/2 cups flour
    1/2 cup sugar
    2 teaspoons baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/4 cup butter, melted
    1 cup sour cream
    1 egg
    1/2 teaspoon vanilla
    1 21 oz can of cherry pie filling
    1 cup toasted almond slivers

    Optional: Reserve about 1/3 cup of cherry pie filling syrup before adding can of cherry pie filling to the muffin batter. After you spoon muffin batter into the individual muffin pan cups, make an indent in the top of each muffin and add a small dollop of the cherry pie filling syrup before baking.

    Sift dry ingredients together. Make a well in the middle and add wet ingredients. Mix together. Add cherry pie filling and almonds. Spoon muffin batter into mini-muffin cups. Bake at 400 degrees for 20-30 minutes. Check periodically with toothpick for doneness. Remove and cool on rack about 10 minutes before removing muffins from muffin pan. These are moist and very cherry mini-muffins.

    Apple Raisin Nut Muffins

    1 cup sugar
    1/2 cup oil
    2 eggs
    1 teaspoon vanilla
    1/2 cup raisins
    1/2 cup finely chopped walnuts
    1 (21 oz.) can apple pie filling
    2 cups flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 teaspoon cinnamon
    1 teaspoon salt

    In a bowl, combine sugar, oil, eggs, vanilla. Mix in apple pie filling, walnuts, raisins.

    In another bowl mix dry ingredients (flour, baking powder, baking soda, cinnamon and salt.

    Mix into apple mixture.

    Fill greased muffin tins 1/2 full.

    3 tablespoon granulated sugar
    1/2 cup brown sugar
    1/4 cup butter
    3 tablespoon flour

    I have no clue how this recipe turns out. But I found this one and wanted to pass it on.

    1 3/4 cups all-purpose flour
    1 Tbsp baking powder
    1 tsp ground cinnamon
    1/2 tsp salt
    1 large egg
    1/2 cup packed dark brown sugar
    1 can raisin pie filling
    1 stick butter, melted

    Preheat oven to 375 degrees. Spray a standard muffin tin (12 muffin-size) with nonstick cooking spray.

    Use an ice cream scoop or a large spoon to drop the batter into the greased muffin tin. Bake until golden and a toothpick inserted into the center of a muffin comes out clean, 20-25 min

    I just clicked on your post to make sure none of the recipes were the one that I made this week. :)

    Why? Because they didn't turn out well. They puffed way up and then fell and were a weird texture on top (although the inside was fine). I think the recipe I copied from google had a bit too much baking powder in it perhaps.

    Either way, it was none of these! :)

    MCDonald's Apple Muffin
    Yield: 24 copycat Servings

    21 oz Apple pie filling
    3 Eggs
    2 ts Apple pie spice
    18 oz Yellow cake mix

    Beat all together with electric mixer on medium-speed. Divide batter equally between 24 paper-lined cupcake wells. Bake 350~ 25 to 30 minutes or until knife inserted comes out clean. Cool before peeling off paper liners.

    For the blueberry pie filling I would stick with either a white or yellow cake mix. I think any other flavor would detract from the blueberry flavor.....but that's just MHO! :)
