Suggestions for Phyllo Cup appitizers?

  • Suggestions for Phyllo Cup appitizers?
    I need to bring an appetizer to a party; and I was thinking something in the pre-made phyllo cups might be nice. Any recipes/ideas for using those?

    A savory combination of these would be great, too.

    Sausage Mushroom Filling

    1/2 lb pork sausage
    1 lb fresh mushrooms, chopped finely
    1/4 cup sliced green onions
    6 oz cream cheese
    1/2 tsp pepper

    Saute sausage, mushrooms. Drain, stir in onions, cheese, pepper.

    Spinach Feta Filling

    1/2 cup onions, chopped fine
    2 cloves garlic, minced
    1 10 oz package frozen chopped spinach - thawed, drained and squeezed dry
    8 oz feta cheese, crumbled

    Saute onions and garlic. Remove form heat, sir in spinach. Fold in cheese.

    Crab Filling

    8 oz cream cheese, softened
    4 green onions including tops, thinly sliced
    1 clove garlic, minced
    2 tsp Worcestershire sauce
    1/2 tsp soy sauce
    Mix together then fold in 10 oz crab meat, drained and flaked

    This filling will not need to be heated.

    Oriental Filling

    1 cup cabbage, finely chopped
    1 cup chicken, cooked, finely chopped
    1 can waterchestnuts, drained, finely chopped
    5 green onions, thinly sliced
    2 1/2 teaspoons sesame oil
    6 tablespoons Chinese plum sauce

    Phyllo Crab Cups

    These cute appetizers taste scrumptious in their phyllo tart shells—horseradish and paprika add a nice kick.

    1 package (8 ounces) cream cheese, softened

    2 to 3 tablespoons horseradish sauce

    3/4 cup chopped imitation crabmeat

    1 tablespoon chopped green onion

    2 packages (2.1 ounces each) frozen miniature phyllo tart shells



    In a small mixing bowl, beat the cream cheese and horseradish until smooth. Stir in the crab and onion. Spoon 2-3 teaspoonfuls into each tart shell; sprinkle with paprika. Place on a baking sheet. Bake at 350° for 16-18 minutes or until tops begin to brown.

    Yield: 2-1/2 dozen.

    Brie Phyllo Cups

    From Taste of Home's Simple & Delicious

    15 frozen miniature phyllo tart shells

    3 tablespoons crushed gingersnaps

    6 ounces Brie, rind removed and cubed

    1/4 cup spreadable fruit of your choice


    Place the tart shells on an ungreased baking sheet. Sprinkle about 1/2 teaspoon gingersnap crumbs into each shell; top with Brie and spreadable fruit. Bake at 325° for 5 minutes or until cheese is melted.

    Yield: 15 appetizers.

    You can use fruit pie fillings,
    Then when they cool, drizzle some glaze over the top.

    You can also use a taco meat filling and top with cheese and bake. Then add shredded lettuce and diced tomato.

    Another way is to add your favorite pizza toppings.

    Marjorcan Mushroom Tapas

    2 packages Athens mini phyllo shells
    1/3 cup finely chopped shallots
    1 teaspoon minced garlic
    1 tablespoons olive oil
    3/4 pound mixed fresh mushrooms, chopped
    2 tablespoons dry sherry or Madeira
    1/2 teaspoon salt
    1 tablespoon finely chopped fresh thyme or 1 tsp dried
    12 ounces mascarpone or cream cheese -- softened

    Almond-Garlic Streusel
    ½ cup bread crumbs
    2 1/2 teaspoons olive oil
    3 cloves garlic -- minced
    1/4 teaspoon freshly ground black pepper
    1/4 cup chopped slivered almonds

    Cook shallot and garlic in oil over medium-high heat, stirring constantly until tender. Add mushrooms, sherry, and salt; cook, stirring constantly, 10 to 12 minutes or until mushrooms are tender. Stir in thyme, and cook until most of liquid evaporates. Place phyllo cups on baking sheet or in minimuffin pan. Place ½ t cream cheese in base of each phyllo cup. Top with mushroom mixture. Sprinkle top with Almond-garlic streusel. Bake at 350 degrees for 15 minutes or until thoroughly heated.

    Almond-Garlic Streusel: Combine crumbs, olive oil, and remaining ingredients in a large skillet; cook over medium-high heat 3 to 5 minutes or until crumbs and almonds are golden. Spread on a paper plate or paper towel to cool. Makes 1 cup.

    Tomato Tapas
    (to fill 15 mini phyllo cups)
    1 large plum tomatoes, seeded and chopped
    6 t sun dried pesto
    ½ cup (2 oz) shredded Italian 6-cheese blend
    ¼ cup crumbled Gorgonzola cheese
    2 T minced sweet onion
    ½ t. dried basil
    ½ t. frsh rosemary minced
    1/8 t. garlic powder
    Freshly ground black pepper

    1 package Athens Mini Fillo Dough Shells
    1. Combine first 8 ingredients.
    2. Place shells on baking sheet or in mini muffin pan
    3. Mound tomato mixture into shells
    3. Bake tapas at 350*F for 7 to 8 minutes or until cheese melts.

    My sons much prefer this Spanikopita filling wrapped in phyllo triangles but I think these make wonderful filling for these mini cups if you don't have the time:

    4 pkgs. frozen chopped spinach, thawed
    1/2 cup olive oil
    4 onions, chopped
    2 bunches scallions, including 4 inches of green tops, finely chopped
    2T minced garlic
    1/2 cup chopped fresh dill or 3 T dried
    ½ cup chopped fresh mint or 3 T dried
    1/2 cup chopped parsley or 3 T dired
    1 lb. feta cheese, crumbled

    The wrapper for your phyllo cups tells how long to bake - 20 min. if I remember.

    Yield: 15 appetizers

    1 (2.1-ounce) package frozen mini filo dough shells
    3 ounces fresh shiitake mushrooms, finely chopped
    3 tablespoons hoisin sauce
    2 ounces LAND O LAKES Monterey Jack Cheese, cut into 15 (1/2-inch) cubes
    1 1/2 ounces (1/3 cup) LAND O LAKES® Monterey Jack Cheese, shredded

    Heat oven to 350°F. Place shells onto ungreased baking sheet. Combine mushrooms and hoisin sauce in small bowl. Place 1 cube cheese in each shell. Spoon mushroom mixture evenly into shells; sprinkle with shredded cheese. Bake for 5 to 8 minutes or until heated through. Remove immediately. Serve warm.

    TIP: To make ahead, prepare as directed except do not bake. Layer between sheets of waxed paper in a resealable plastic freezer container; freeze. At serving time, heat oven to 350°F. Place desired number of pastry cups onto ungreased baking sheet. Bake for 12 to 20 minutes or until filling is hot. Serve warm.

    1/2 cup Ocean Spray Whole Berry Cranberry Sauce
    1/3 cup cream cheese, softened
    1/4 cup minced crab meat
    2 tablespoons green onion, white and green parts, sliced
    15 individual mini-phyllo shells, thawed

    Preheat oven to 375ºF. Place cranberry sauce in a small mixing bowl; beat with a fork or wire whisk until smooth. Combine cream cheese, crab meat and green onion in a small mixing bowl. Fill each shell with about 1 teaspoon of the cream cheese mixture. Top with 1/2 teaspoon cranberry sauce. Bake for 10 minutes or until heated through.

    If your party is earlier in the day, you can also fill the baked cups with egg salad or chicken salad.
