    If anyone is from a farming community they know what FHA and FFA are. Well, when my mom was in school, they used to visit the extension offices and were taught simple recipes.

    She still makes some of them but cannot find her instant cheesecake made with instant pudding.

    Does anyone have one of these?

    Thanks

    Home, it might be. I am open to any No Bake recipes. I saw the thread of NO BAKE and copied those down too.

    My DD is 10 and I feel she finally pays enough attention to start learning to cook*. I want to start her out on something easy and mom mentioned this.

    Nikkie, I think it's wonderful that you and your daughter are baking and cooking together.
    I learn at an early age too. Had to because I had 14 other brothers and sisters. My mother couldn't do it alone.
    Here's the recipe I mentioned in my last post too.

    Busy-Day Lemon Cheesecake

    2 cups graham cracker crumbs
    3 tbsp. sugar
    1/4 cup margarine, melted
    Mix, and reserve 1/2 cup crumbs. Press remaining crumbs in bottom of 8-inch square dish.
    ~~~~~~~~~~
    8 oz. cream cheese, softened
    1/2 cup milk
    Beat together until smooth.
    ~~~~~~~~~~
    another 1 1/2 cups milk
    1 (3 1/2 oz.) pkg. instanr lemon pudding
    Add, beating slowly, just until well mixed-about 1 minute.Do not overbeat. Pour into crust.
    ~~~~~~~~~~
    Sprinkle reserved crumbs over the top. Chill at least 1 hour before serving.
    ~~~~~~~~~~
    Variations: Fold 2 cups Cool Whip, with 1/2 tsp. lemon flavoring added, into pudding mixture before poring into crust. This makes a nice, light cheesecake.

    Yield: 6 to 9 servings

    Easy No Bake Cheesecake

    1 (5 1/8 ounce) package instant vanilla pudding
    2 cups cold milk (to make the pudding)
    1 (8 ounce) package cream cheese (room temperature)
    1 cup milk
    1 cup sugar
    2 tablespoons vanilla extract
    1 (15 ounce) can canned strawberries in syrup
    30 saltine crackers

    In small mixing bowl combine pudding mix and 2 cups milk (or what the pudding recipe calls for.) Stir until it thickens, then set aside.

    In medium mixing bowl, combine cream cheese, 1 cup milk, sugar, and vanilla. Blend until smooth.
    Add the pudding to the cream cheese mix and blend.

    In pie dish, crumble crackers to coat the bottom and make a nice crust.

    Pour pudding/cream cheese mixture into the pie dish and use a spatula to level the mix.

    Arrange the strawberries around the top of the pie. Drizzle a small amount of the light syrup on top.
    Place in the freezer for about 5 hours.

    I like

    2 8 in. Graham Pie Shell
    2 lg. pkg. cream cheese
    2 pkg. Jell-O Instant French Vanilla
    Pudding
    3 med bananas, sliced
    1 Lg. tub Cool Whip
    3 cups cold milk

    Cream the cream cheese and add a slight bit of milk and beat well. Repeat until all adding more milk each time to incorporate it into the cheese for a creamy texture.
    Add pudding mix and beat well.
    Add 1/2 the Cool Whip. Stir in sliced bananas, and pour into pie shells and add remaining Cool Whip over the tops.
    Garnish with sprinkles of choice or chopped nuts of choice.

    I also like to use Pastashio pudding instead.

    But I love my published recipe best, in the Light & Tasty mag., Dec./Jan Issue, inside back cover as honorable mention.
    I can't seem to find my mag. at the moment or I'd type the recipe. I was excited to see the good reviews for it.

    Kooksie,
    Your recipe looks so good. I especially like the fact that it doesn't call for graham crackers for the crust.
    Thanks for posting it!
