ISO recipe for ham soup, no beans

    I have a ham bone and would like to make soup, but DD won't eat beans? Do you have a good recipe for ham that doesn't have beans.

    I sometimes add some cubed ham to my potato soup if I have it. You might try that. We like it.

    I don't use recipes, so here goes my aproximations

    1 ham bone
    water to boil ham bone in(to cover)
    large can of tomatoes-whole, diced, sauce-whatever you prefer
    1# frozen corn
    1# frozen lima beans
    Potatoes-peeled and cubed-about 7 or 8
    large onion, diced

    Put hambone in pot of water and cook until meat falls off of bone. Add all other veggies and cook until tender.

    Here is another one.

    corn chowder

    Hambone
    water to cover
    creamed corn
    whole corn
    onion
    milk
    salt and pepper to taste


    Cook hambone in water until falls off the bone. Peel and cube potatoes and dice onions. Cook until tender. Add drained whole corn and undrained creamed corn, salt and pepper and a little bit of milk to make it richer.

    Milwaukee German Lentil Soup
    Prairie Home Cooking


    16 ounces lentils
    3 quarts chicken or ham stock
    1 bay leaf
    ½ teaspoon Worcestershire sauce
    1 garlic clove, minced
    ¼ teaspoon nutmeg
    4 drops Tabasco
    ¼ teaspoon caraway seeds
    ½ teaspoon celery salt
    1 cup chopped carrots
    1 cup chopped celery
    1 cup chopped yellow onion
    ½ pound cooked smoked ham
    2 tablespoons bacon grease
    2 tablespoons flour


    Place first 9 ingredients in large stockpot. Bring to boil, cover and simmer for 30 minutes. Stir in carrots, celery, onion, and ham and cook for 10 minutes more, till vegetables are tender. Melt bacon grease and whisk in flour. Whisk this roux into hot soup, a little at a time, until soup is thickened to your liking. Serve hot, garnishing with parsley and croutons. Serves 6-8.
    I used a couple drops of smoke flavor instead of using ham and bacon grease so it is fat free.

    Kapusniak (Polish Sauerkraut Soup)
    Celebration of Soups


    1 pound ham bone, cracked
    1 medium onion, chopped
    1 small onion, chopped
    1 pound sauerkraut, drained, reserving juice
    1 tablespoon caraway seed
    8 cups water
    4 tablespoons bacon fat
    6 large mushrooms, sliced
    4 tablespoons flour
    10 ounces frozen mixed vegetables
    Salt and pepper


    Combine bone, medium onion, sauerkraut, caraway and water. Bring to boil; reduce heat and simmer uncovered for 1 hour. In bacon fat cook mushrooms and small onion until golden. Stir in flour and cook for a few minutes. Add to soup, stirring until somewhat thickened. Add thawed vegetables and continue to simmer for 12 minutes or until they are tender. Remove and discard bone. Season to taste. Add reserved sauerkraut juice.
    I used a piece of ham instead of bone. It is better if beef broth is used for part of the water.
