    Just had this awesome pie last night and I'm impressed ... flaky crust, coconut, strawberry, pecans, pineapple!!! I want the recipe. Can anyone help??? /rayt721

    My friend, Dot, sent me this recipe, which sounds close to it, only I haven't had a chance to make it and test it out, yet. Sounds similar, though. :O)

    Dot's Hawaiian Pie #1

    1 can (20 oz.) crushed pineapple in syrup or juice, undrained
    1 pkg. (6 serving size) instant vanilla pudding & pie filling (see note below) dry powder
    1 container (8 oz.) sour cream
    One 9-inch prepared shortbread or graham cracker or cookie pie crust
    one pkg. defrosted frozen strawberries, sliced
    2 T. sweetened flaked coconut
    3 T. chopped pecans

    In a large bowl, combine the crushed pineapple and strawberries with both of its syrup/juice, the pudding mix, and sour cream; mix until well blended.

    Spoon into pie crust; decorate with the sliced pineapple and cherries, if desired. Cover and chill at least overnight).

    Just before serving, sprinkle the coconut and pecans over the pie.

    I have a couple more versions she sent, and haven't tried those yet, either.
    Serves 6-8

    Note: Don't make the vanilla pudding according to the package directions. Just add the dry mix to the other ingredients.

    Dot's Hawaiian Pie #2

    ingredients:

    14 oz. can Eagle Brand Condensed Milk
    4 tbsp. lemon juice
    9 oz. container Cool Whip
    3/4 cup coconut
    1/4 cup finely chopped pecans
    10 oz. can crushed pineapple
    10 oz. pkg. sliced thawed frozen strawberries
    2 graham cracker pie shells

    Mix all ingredients together and place in two pie shells.
    Refrigerate overnight. Cut and serve.

    Sprinkle pie with toasted coconut and finely chopped pecans, just before serving.

    Dot told me this version was the one that she calls, "Hawaiian Wedding Pie." Personally, these remind me of variations of the Millionaire's pie recipes of my youth.

    ingredients:

    1 (9 inch) pie crust, baked
    1 (15 oz.) can crushed
       pineapple, drained
    1/4 cup lemon juice
    12 oz. frozen Cool Whip
       whipped topping, thawed
    1/2 cup sliced, sweetened strawberries or maraschino cherries
    1 (14 ounce) can sweetened
       condensed milk
    1/2 cup flaked coconut
    1/2 cup chopped pecans

    In a large mixing bowl, fold pineapple, lemon juice, Cool
    whipped topping, strawberries pr cherries, condensed milk, coconut and pecans
    together. Pour into pie shell and chill for at least 8 hours before serving.
     
    Serves 8. Makes one 9" pie

    I was just reviewing those recipes Dot had sent me, and just a thought-she said to use those frozen sliced strawberries. I would suggest either using fresh, sliced sweetened strawberries or draining them-otherwise, in my years of cooking experience, adding the whole thawed frozen strawberries might taste good, but the strawberry juices would probably "bleed" into the pie and make it really pink or red-which would only affect it's appearance.
