    Super Easy Chocolate Bars

    1 cup butter (no substitute)
    1/2 cup sugar
    1/8 teaspoon salt
    2 cups all purpose flour
    1- 14 ounce can (1 1/4 cups) sweetened condensed milk
    1 cup (1/2 of a 12 ounce package) semisweet chocolate pieces
    1/2 cup chopped walnuts or pecans
    1/2 teaspoon vanilla

    For crust, beat butter in a large mixing bowl with an electric
    mixer on medium to high speed for 30 seconds. Add sugar and
    salt; beat till combined, scraping sides of bowl occasionally.
    Beat in flour on law speed till combined. Press two-thirds of the
    crust mixture into the bottom of an ungreased 13 x 9 x2 inch
    baking pan.

    For filling, combine sweetened condensed milk and chocolate
    in a medium saucepan. Stir over low heat till chocolate melts
    and mixture is smooth. Remove from heat. Stir in nuts and vanilla.
    Spread hot mixture over the crust. Dot with remaining crust mixture.
    Bake in 350º oven about 30 minutes or till golden. Cool in pan on
    wire rack. Cut into bars.

    1 pkg. devils food cake mix
    1/2 cup apple butter
    1 cup water
    3/4 cup egg substitute
    1/3 cup fat free half and half
    1 1/2 cups confectioners sugar
    3/4 cup unsweetened cocoa powder
    4 1/2 tsp. instant coffee
    1 1/2 tsp. cinnamon
    1 lb. Neutchatel cheese
    1 jar (7 1/2 oz) plus 3/4 cup marshmallow creme
    2 tsp. vanilla

    CAKE: Preheat oven to 350 degrees. Butter and flour 2 --- 8 inch round cake pans. Beat cake mix with apple butter, water, egg substitute, half and half, 30 seconds. Increase speed to medium, beat 2 min. Divide evenly between pans. Bake 28-30 min. Cool on racks. Remove from pan. FROSTING: Combine confectioners sugar, cocoa, coffee powder, cinnamon. In bowl with mixer beat cream cheese until smooth, 3 min. Beat in marshmallow until combined. Beat in confectioners sugar mixture. Beat until smooth. Beat in vanilla. Place 1 layer cake on plate, top with 1 1/2 cups frosting. Place remaining layer on top, Spread top and side with remaining frosting. Makes 16 servings.

    I have taken these to group meetings I go to and everyone loves them. I am going to make them today for tomorrow's meeting and I am going to try apricot preserves too.

    Raspberry Squares
    2-1/4 cups flour
    1 cup granulated sugar
    1 cup (2 sticks) butter, room temp-don't substitute
    1 egg - lightly beaten
    1 cup chopped walnuts
    1-10 oz jar seedless raspberry jam

    Preheat oven to 350º. Grease and flour 9" square pan.
    In a large bowl, stir together flour & sugar. Cut in butter until the size of small peas. Add egg - mix lightly with fork. Add walnuts. Set aside 1-1/2 cup of this mixture. Pat remaining mixture into bottom of pan. Spread preserves on top of mixture but not too close to edges. Sprinkle reserved mixture on top. Bake 40-50 minutes.

    Please note the recipe says Don't Double. I don't know why but I suspect it would not turn out.

    How about the miniature pecan pies made in either regular or miniature cupcake pans.Pat
