From the Good Housekeeping Cookbook. This is a favorite at our house and great with ham. We double the amount of the topping. You can mix the day before and refrigerate. Just keep in oven for a few more minutes.
Cinnamon Baked Yams
2 Tbls light brown sugar
1/2 tsp cinnamon
1/4 tsp salt
2 18 oz cans yams, drained
2 Tbls butter, melted
About 45 min before serving:
Preheat oven to 350 deg F. In cup, combine brown sugar with cinnamon and salt. Slice yams lenghtwise 1/4" thick and place in a layer in a greased shallow casserole. Sprinkle with sugar mixture and melted butter.
Bake 25 minutes or until yams are hot and sugar is bubbly. Makes 6 to 8 servings.

I really like candied yams! After trying this recipe, I may never make them any other way!!!
Candied Yams
1/2 c. karo light or dark syrup
40 oz. can cut sweet potatoes, drained
1/4 c. brown sugar
3 Tb. butter
1 Tb. corn starch
1 tsp. salt
1/2 tsp. cinnamon
Place sweet potatoes in a shallow 1 1/2 - 2 qt. baking dish coated with cooking spray.
In small saucepan over low heat melt butter.
Stir in syrup, brown sugar, corn starch, salt & cinnamon.
Cook and stir 1 - 2 minutes or 'til smooth. Pour evenly over sweet potatoes; stir gently to coat.
Bake in 350 degree oven 30 minutes or 'til hot and bubbly.
Because I baked this in a slower over with a pork loin, I baked it for 45 minutes. Mmmmm!

THE BESTEST SWEET POTATO CASSEROLE EVER
This recipe has pretty much spoiled me for other sweet potato casseroles. I've tried the ones with marshmallows in them and they just aren't as good. I've also experiemented with orange juice, but havent' found one I like as well.
3 cups mashed, cooked sweet potatoes (if you're like me and don't want to boil fresh, get one large can..the big one and one normal sized can and that will equal approximately three cups mashed)
1 cup sugar
1/2 cup melted butter
2 eggs, well beaten
1 tsp vanilla
1/3 cup milk
1/4 tsp nutmeg
1/4 tsp cinnamon
Combine all ingredients and spoon into casserole. Cover with topping:
Topping:
2 cups Rice Krispies
1 cup chopped pecans
1 cup brown sugar
1 stick butter, melted
Mix all ingredients and spoon over casserole.
Bake casserole 30 min at 400 degrees. Topping will be browned.

Heres how I fix mine:
lrge can yams or sweet potatoes (drain)
reg can crushed pineapple (don't drain)
stick melted butter or margarine
1 cup of brown sugar
1/2 t cinnamon
1/2 t nutmeg (optional)
1/2 t ginger (optional)
1 t vanilla
1 cup toasted pecans
1 cup mini marshmallows
1 1/2 cups mini marshmallows for top
Mashed the yams, add the rest of ingredients (except for marshmallows for top). Put in a greased casserole dish, top with rest of marshmallows. Bake in 350 oven until bubbly and marshmallows or browned. For larger crowds can increase amount of yams. Of course I am the only one in the family that eats this so I can add whatever I like.
