  • ISO Soup using left over Pork Tenderloin

    I need soup ideas to use up left over pork tenderloin.  I have a cold and scratchy sore throat and I really want some soothing soup Sad.  I have at least half of a lemon garlic flavored pork tenderloin in the fridge.  Any ideas?  Thanks!!

    You could use the leftover pork in this recipe;


    Mexican Pork and Bean Soup (Smithfield Recipes)

    Mexican Pork and Bean Soup

    Servings: 6
    Cook Time: 20 Minutes

    Ingredients: 1/2 lb Smithfield Lean Generation Ground Pork or Fresh Pork Cubes
    1 small onion diced
    1 clove garlic minced
    1 14 1/2-ounce can chicken broth
    1 14 1/2-ounce can Mexican-style chopped tomatoes
    1 15-ounce can pinto beans drained
    1 t. chili powder
    1 t. ground cumin
    1/2 t. oregano
    1/2 t. salt
    1/4 t. cayenne

    Steps: In large heavy saucepan brown the ground or cubed pork. Stir in onion and garlic; cook and stir until onion is soft about 3 minutes. Stir in all remaining ingredients bring to a boil lower heat and simmer about 10 minutes. Makes 6 1-c. servings.

    Serving Suggestions: Serve over hot cooked rice.

    I would just use any recipe for chicken soup, pork tenderloin works really well in just about any soup recipe.  Maybe a taco soup would work well.

    1 Onion, chopped

    2 cloves of garlic

    1 bay leaf

    1 to 2 tsp. worchestershire sauce

    1 can black beans

    1 can chili beans

    1 can whole kernel corn, drained

    1 8 oz. can tomato sauce

    1 12 oz. can chicken broth or stock ( I used 14-16 oz. )

    2 cans rotel ( I only use one and add a can of delmonte tomatoes with green chilies )

    1 package taco seasoning mix ( I only use half a package )

    3 boneless chicken breasts, ( You can just add your leftover pork loin

    Honey- I like honey in my soups, a little sweet along with the spicy ( this is optional to your taste)

    You can cook this on the stove top or in the crock pot.  You can put the chicken in the crockpot uncooked , cook 5 hours on low, pull the chicken out and shred, return chicken to crockpot and cook 2 more hours on low.  If using leftover cooked meat just add and cook until veggies are done and soup is well combined in flavor.  I serve with shredded  cheddar on top.
