    I have some baby food I'd like to use, and I have had a carrot cake made with baby food and it was delish. Thanks for any help.

    Original recipe yield: 1 - 10 inch Bundt pan

    About  scaling  and  conversions

    INGREDIENTS

    • 2 cups all-purpose flour
    • 2 teaspoons baking soda
    • 3 teaspoons ground cinnamon
    • 1 1/2 teaspoons salt
    • 1 1/2 cups vegetable oil
    • 2 cups white sugar
    • 4 eggs
    • 2 teaspoons vanilla extract
    • 1 cup chopped pecans
    • 3 (4 ounce) jars carrot baby food
    • 1/2 cup grated carrot
    • 1 cup flaked coconut

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan. Sift together the flour, baking soda, cinnamon and salt. Set aside.
    2. In a large bowl, beat the oil and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture. Stir in chopped pecans, Baby food carrots, grated carrots and coconut. Pour batter into prepared pan.
    3. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely

    Hi Lynne! This is really good, but unfortunately I don't know how many ounces the "old" junior baby food jars were.

     

    This carrot cake is the best I've ever had...it's my mom's recipe from back in the day...it's not too sweet for those who don't like too much sweetness and I don't know anyone who tried it and didn't like it.

    CARROT CAKE

    Cream together:
    1 1/2 cup Crisco oil
    4 eggs
    2 cups sugar

    Mix together and add to above mixture:
    2 cups flour
    2 tsp baking soda
    1 tsp salt
    2 tsp cinnamon

    Then add:
    2 jars Junior carrots (jr. baby food)
    1/2 cup chopped nuts.

    Bake in 9x13 pan for 50 minutes at 325F.

    Frost with cream cheese frosting:

    Combine:
    4 oz cream cheese, softened
    1/2 stick butter
    1 tsp. vanilla
    1 3/4 cup powdered sugar

    BEAT WELL until sugar is well dissolved.

     I'm pretty sure the junior sized jars were 8 ounces, or thereabouts.

    Thanks, both look great. I want to make a layer cake because the cream cheese frosting between the layers is my favorite. I will try to find out if jr. baby food jars are 8 oz.
