    Yup, I am back again and bored. :) My mission tonight is to find interesting saltine cracker recipes. Feel free to add your own.

    Saltine crackers
    2 sticks butter
    1 c. brown sugar1 pkg. butterscotch chips

    Layer a greased cookie sheet with saltine crackers. Boil 2 sticks butter and 1 cup brown sugar on low for 5 minutes; pour over crackers evenly. Put in 400 degree oven for 5 minutes, then put a package of butterscotch chips on. Press evenly until oil is melted. Cool and break into pieces.

    40 saltine crackers
    1 c. butter (NO substitute)
    1 c. brown sugar
    1 c. milk chocolate chipsBits of Brickle (optional)

    Arrange 40 saltine crackers on foil on a jelly roll pan. Melt butter and brown sugar in pan and boil 3 minutes. Pour over crackers. Bake for 5 minutes in preheated oven at 325 degrees. Pour chocolate chips over and let stand 5 minutes to melt. Spread around with knife. Sprinkle with Bits of Brickle. Place in refrigerator until hard. Break up into bite-size pieces. Enjoy!

    6 egg whites
    1/2 tsp. cream of tartar
    2 c. sugar1 tsp. vanilla
    1 c. pecans, chopped
    1/4 lb. (1 stack) saltine crackers, crumbled
    8 oz. Cool WhipCoconut (optional)

    Beat egg whites real stiff before adding any other ingredients. Then add cream of tartar (keep on beating). Gradually add sugar (keep on beating). Add vanilla. When batter is real stiff, stop beating and fold in, by hand, pecans and crushed saltine crackers.

    Spread evenly in a 9 x 13 x 2 inch pan sprayed with Pam. Cook until light brown in a 350 degree oven, approximately 30 minutes. Cool cake in pan, then cover top with Cool Whip. Sprinkle top with coconut

    1 pkg. saltine crackers, crushed
    1 c. mayonnaise
    1 c. pimento cheese
    5 boiled eggs, chopped
    1 bell pepper, chopped
    1 c. pickles, chopped

    Mix all ingredients and chill.

    SALTINE CRACKER TOFFEE

    Saltines (crackers)
    2 sticks butter
    2 c. brown sugar
    12 oz. pkg. chocolate chips

    Lay crackers side by side in 10"x15" jelly roll pan (cookie sheet with edge).

    Bring butter and sugar to boil and continue boiling until soft ball stage.

    Pour toffee over crackers. Bake in 400 degree oven for 5 to 7 minutes. Watch carefully so doesn't burn.

    Sprinkle chips over toffee/crackers and return to oven for 30 seconds to melt. Cool to set and harden. Crack and enjoy.

    SALTINE CRACKER CRUMB PIE

    3 egg whites
    1 c. sugar
    10 saltines, crushed
    1/2 tsp. baking powder
    1 c. pecans, chopped
    1 c. whipping cream

    Beat egg whites until stiff. Sift together sugar and baking powder together and fold into egg whites. Add chopped pecans and saltines. Put mixture into a 9 inch pie plate smoothing the top until it comes to the inner edge of the pie plate. Bake at 300 degrees for 1 hour. Pie will not be smooth in applesauce. When completely cool. Cover pie with whipped cream. Refrigerate for 8-9 hours. Before cutting, cut around edges with a sharp knife.

    CHOCOLATE COVERED CRACKERS

    Saltine crackers
    1 stick butter
    1/2 c. brown sugar
    12 oz. chocolate chips

    Line jelly roll pan with foil. Fill bottom with Saltine crackers; place as close together as you can. Melt 1 stick butter. Add 1/2 cup brown sugar. Pour this over the crackers. Spread with a knife. Bake 10 minutes at 350 degrees or until light brown and bubbly. Remove from oven. Sprinkle with 1 (12 ounce) bag chocolate chips. When they melt, spread evenly with a knife. Cool; break apart. Enjoy.

    BETTY'S CRACKER PUDDING

    1 qt. milk
    2 eggs, separated
    2/3 c. sugar
    2 c. broken saltine crackers
    1 c. grated coconut
    1 tsp. vanilla

    While warming the milk, beat egg yolks and sugar until frothy. Add to hot milk and stir in crackers and coconut. Cook until thick. Remove from heat and add stiffly beaten egg whites and vanilla. Cool.

    CRACKER TOMATO SALAD

    16 saltine crackers, broken into quarters
    1 (1 lb.) can whole tomatoes, cut up and undrained
    1/3 c. chopped dill pickle
    1/3 c. mayonnaise
    Salt and pepper to taste
    1 hard cooked egg, diced
    Lettuce cups

    Place 1/2 the crackers in a shallow salad bowl. Top with half the tomatoes with their juice and sprinkle with half the pickles. Spread half the mayonnaise and season to taste with salt and pepper. Repeat layers. Sprinkle with diced egg and chill at least 2 hours. Serve on lettuce cups. Yield: 4 to 6 servings.

    Note: May be made a day before serving.

    J.D.'S CRACKER DRESSING

    2 boxes saltine crackers
    1 med. onion, chopped
    8 eggs, slightly beaten
    6 cans chicken broth
    1 tsp. sage

    Preheat oven to 350 degrees. Crumble crackers into large bowl. Warm broth and add to crackers. Mix well. Add eggs, onion and sage. Pour into a large rectangle baking pan and bake for 35 to 40 minutes or until done. You may use dressing to stuff pork chops or roast.

    CRACKER FUDGE

    1/4 lb. saltine crackers
    3/4 c. peanut butter
    3 c. sugar
    1 c. Carnation canned milk

    Crumble crackers into mixing bowl and stir in peanut butter. In a small heavy saucepan, combine sugar and milk; bring to a boil.

    Continue to boil, stirring constantly for 5 minutes. Pour over crackers and mix with electric mixer until smooth. Pour into a buttered 8 x 8 inch pan. Cut into 1 inch squares when fudge has set. Pack in tightly covered container, separate layers with wax paper and refrigerate.

    AMISH CRACKER PUDDING

    4 c. milk
    1 c. sugar
    1 1/4 c. (32) crushed saltine crackers
    2 eggs, beaten
    1 tsp. vanilla
    Optional: 1 tsp. cinnamon

    Heat milk and sugar over medium heat. Slowly add cracker crumbs, stirring constantly. Remove 1/2 of the hot mixture and stir it into the beaten eggs. Return egg mixture to hot mixture and boil 1 minute, stirring constantly. Remove from heat and add vanilla and cinnamon, if you chose to put it in. Chill and serve topped with whipped cream.

    CRACKER CRUMB FISH FILLET




    2 c. saltine crackers, crushed fine
    2 tbsp. dill weed
    1 tbsp. Accent
    1 tbsp. lemon & herb seafood seasoning
    1 tbsp. paprika
    1/2 c. melted butter
    Fish fillet

    Mix cracker crumbs, dill weed, Accent, seafood seasoning, paprika and melted butter and rub by hand until well blended. Place fish fillets on a cookie sheet pan. Spoon crumbs over fillet so that it is well covered. Bake at 350 degrees or until fish flakes easily. Garnish with lemon and serve with your favorite sauce. Yield: 6 to 8 servings.

    CRACKER CRUMB SPAGHETTI

    1/2 lb. bacon, fried crisp and crumbled
    1 sleeve saltine crackers, crushed
    1 lb. spaghetti, cooked according to package directions

    Cook spaghetti as directed. Rinse, drain and set aside. Cut up bacon into small pieces and fry until crisp and brown. Crush at least one sleeve of saltine crackers and add to bacon and grease mixture. When most of grease is absorbed, (add 1/2 sleeve more of crushed crackers if needed to absorb more grease) toss with spaghetti. Salt and pepper to taste.
