WHISK eggs and milk in large bowl until blended. Add all remaining ingredients except bacon; mix lightly. Shape into 6 (1-inch-thick) patties; wrap bacon slice around edge of each patty.
WRAP individually in plastic wrap; place in freezer-weight resealable plastic bag. Seal bag. Freeze up to 3 months.
HEAT oven to 375ºF. Unwrap frozen patties; place on rimmed baking sheet sprayed with cooking spray. Bake 40 to 45 min. or until done (160ºF).

Pasta Carbonara Recipe
Prep Time: 10 Minutes | Cook Time: 15 Minutes | Difficulty: Easy | Servings: 4
Cook pasta according to package directions.
In a large skillet, heat olive oil over medium-high heat. Add bacon pieces and cook until light brown but not crisp. Remove bacon from pan and set aside. Do not clean pan.
Add mushrooms and garlic to pan. Toss/stir around and cook over medium-high heat for 5 minutes; increase heat to high if needed to help mushrooms begin to turn golden brown.
Pour in chicken broth. Stir, scraping the bottom of the pan to loosen any bits. Cook over medium-high heat for several minutes, or until the liquid is reduced by half.
Reduce heat and pour in half and half and cream. Stir and allow to bubble and thicken for a couple of minutes. Add sliced green onions and parsley, then cook for one more minute. Finally, add Parmesan and stir, allowing cheese to melt and incorporate into the sauce. Turn off heat.
Add cooked pasta to a large bowl. Add half the sauce from the pan. Toss with tongs. ***Add 1/2 cup hot pasta water at this point if the pasta mixture is too thick and gunky. Toss and add more water until it reaches the consistency you need.***
Serve pasta in individual bowls, topping each helping with the rest of the sauce. Sprinkle with extra parsley and extra Parmesan.

Heat the broiler. Wrap each scallop in a piece of bacon and secure it with a toothpick. Place the bacon wrapped scallops onto a baking sheet, drizzle them with olive oil, and season them with salt and pepper. Cook them under the broiler for about 10 to 15 minutes until the bacon is cooked through, turning once.
Make the spicy mayo by combining the mayonnaise, chili paste, lime juice, and chopped cilantro. Stir well and refrigerate until ready to use.
To serve, carefully peel away the lettuce leaves and line a large platter with the lettuce cups. Top each with a bacon wrapped shrimp, 2 slices of avocado, and a spoonful of spicy mayonnaise. Garnish with cilantro leaves.

Olive Oil 3 large onions, sliced 1 tsp. balsamic vinegar 8 slices Sliced Bacon 4 slices Havarti Cheese 3/4 cup Mayonnaise 1/4 cup onion, grated 3 oz. Cream Cheese, room temperature 1 red bell pepper, diced 1 1/4 cup Shredded Cheddar Cheese 1/4 tsp. Garlic Powder Salt to taste Pepper to taste 2 romaine lettuce leaves, cut in half widthwise 2 avocados, cored and sliced 4 tomato slices 4 Kaiser bunsDirections:
Combine ground beef, Worcestershire, garlic powder, oregano, salt, and pepper. Divide into four equal portions and assemble beef patties. Set aside. In a large skillet, add olive oil over medium-high heat. Add the onions, cook stirring constantly until golden brown about 15 minutes, add salt and pepper to taste. Finish by adding balsamic vinegar. On a baking sheet pan, layer bacon evenly. Bake in oven for 7 minutes. Remove from oven. Set aside. Heat grill to a medium/high temperature. Grill burgers 5-7 minutes each side until desired doneness. Place 1 slice of Havarti cheese on top of each burger and continue to grill until melted. Remove from heat. Combine mayonnaise, grated onion, cream cheese, red bell pepper, shredded cheddar cheese, garlic powder, remaining 1/4 tsp. salt, and pepper and spread on both sides of bun to taste. To assemble the burger, layer the bottom of the bun with the patty with Havarti cheese, caramelized onions, lettuce, 1/4 of avocado slices, tomato slices, bacon and top half of bun.

Bacon and Habanero Infused VodkaAdapted from Croce’s Restaurant & Jazz Bar.
6 strips of bacon 3 habanero chili peppers 2 serano chile peppers 1 liter good quality vodka (this is not exact)
Add strips of bacon to a dry, cold, large skillet. Warm the skillet over low heat. Cook bacon until crispy, flipping the bacon several times throughout the process. Transfer cooked bacon to a paper towel lined plate and set aside to cool.
Remove the stems from each chili pepper and slice in half lengthwise. Add peppers (with seeds) to a large, airtight jar. Once cooled, add bacon to the same jar. Fill the jar with vodka to cover the bacon and peppers. Seal the jar and let steep for 7 days in the refrigerator.*
After 7 days, strain the vodka through a cheese cloth lined fine mesh basket strainer into a clean jar or bottle. If you see any major particles floating in the vodka, strain a second time. Discard the bacon and peppers. Store in the refrigerator.
Makes 1 liter.
Bacon wrapped fully Loaded Hot Dogs
Carefully break 4 toothpicks in half. Wrap each hot dog in a strip of bacon and secure with a toothpick half at each end. Set aside.
Bring a large skillet or grill pan sprayed with nonstick spray to medium-high heat on the stove.
Add onion, bell pepper, and jalapeno pepper and cook until softened, about 4 minutes. Remove from the skillet/pan and set aside.
Remove the skillet/pan from heat, re-spray, and bring to medium heat. Add bacon-wrapped hot dogs and cook until bacon is crisp and fully cooked and hot dogs are heated through, about 6 minutes, rotating the hot dogs several times to evenly cook the bacon. Set aside.
Evenly spread mayo inside the buns. Remove toothpicks from the hot dogs and place a bacon-wrapped dog in each bun. Top each dog with a teaspoon of mustard.
Evenly distribute veggie mixture among the dogs. Eat up!
These baked beans are great but I recommend putting more bacon in them--I try to put the whole 12 slices in but end up putting in 10 because I eat 2 slices before I can crumble it!
EASY BAKED BEANS
1 (28 oz.) can baked beans
1 med. onion, chopped
1/2 c. brown sugar
5 strips bacon, cut in 1-inch pieces
2 tbsp. ketchup
1 tsp. prepared mustard
Fry bacon until crisp. Remove from fat. Saute onion in fatand when tender, drain off fat. Add mustard, ketchup and brown sugar. Stir inthe beans. Put in casserole. Top with bacon and bake for 30 minutes at 350degrees.
