Cherry Coke Float Cupcakesadapted from Nigella Lawson's 'How to be a Domestic Goddess'makes 12 cupcakesCupcakes1 1/2 Cups flour3/4 Cup sugar1/2 tsp baking soda1/4 tsp salt1 large egg1/2 Cup buttermilk2 tsp vanilla1/2 cup unsalted butter3 Tbs cocoa powder3/4 Cup Coca-Cola1/4 cup marachino cherry syrup24 marachino cherriesCola Icing1 cup Icing sugar2 tbsp colaPreheat the oven to 350 F.In a bowl, combine the flour, sugar, baking soda, and salt. Beat the egg, buttermilk, and vanilla in a second bowl. In a saucepan, boil the Coca-Cola, and cherry syrup gently for five minutes. Melt in the butter and cocoa powder. Pour into the dry ingredients, stir well with a wooden spoon, and then add the liquid ingredients, beating until everything is blended. Pour into the cupcake pans and push a cherry into the center of each cupcake. Bake for 15 minutes or until a cake tester comes out clean. When cool drizzle over the Cola Icing and let dry. Top with cherry buttercream and a cherry

1 pound confectioners sugar1/2 cup butter, softened1 teaspoon vanilla extract3 tablespoons milk**food coloring, optional
Directions:In large bowl, beat together sugar, butter, vanilla and milk until smooth. If necessary, add more milk until frosting is spreading consistency. Add a few drops of food coloring if you wish. Stir to blend. Basic recipe makes enough to fill and frost a 2-layer cake or a 13"x9" sheet cake or 2 dozen cupcakes. **Maraschino cherry juice can be used instead if you like the taste. Start with a tablespoon of cherry juice before adding more to see if you like the flavor. If you want it stronger, use more juice and forget the milk. If you don't want a strong cherry flavor, use part milk with the juice. Chocolate buttercream frosting: Melt 2 squares (1 oz ea) unsweetened chocolate over low heat in double boiler until just melted. Stir into above buttercream frosting mixture.
