  • Recipe - Italian Pole Beans
    We have 2 rows of pole beans in our small garden and they are bearing so fast, we can barely keep up with them. This is a quick recipe and so full of flavor.

    Italian Pole Beans

    1 pound of small fresh pole beans, remove tips but leave beans whole
    2 tablespoons olive oil
    3 shallots, chopped (can use 1/2 of a small onion or 6 green onions)
    2 cloves garlic, minced
    Salt and pepper to taste

    Wash beans well and drop into rapidly boiling water. Let cook, uncovered for about 10 minutes, until tender, but still crisp. While beans cook, heat olive oil in a skillet and cook shallots and garlic until tender but not browned. When beans are done, drain and add to the pan with the shallot mixture. Sprinkle with salt and pepper to taste. Toss and cook over medium heat until well coated and seasoned through, about 5 to 10 minutes longer.
