oh man, I don't have any recipes off the top of my head, but I'll list a few dishes that I absolutely love mandarin oranges in! I love mandarin oranges with cottage cheese, I love them in salads (especially with dried cranberries), and I love them in Pudding Fruit Salad by Pillsbury.

Walmart and some grocery stores carry the sugar-free white chocolate pudding.
CHICKEN WITH MANDARIN ORANGES
KOPAA SESAME SALAD
I keep a dozen mandarins slices separate to add to the top of the muffins, prior to baking
Coconut-Pineapple Muffins substitute mandarin oranges for pineapple, add orange essence2 cups flour
1 Tablespoon baking powder1/2 teaspoon salt
1/2 cup sugar1/2 cup flaked coconut
1 egg1/4 cup oil
1/3 cup milk1 teaspoon vanilla/ orange essence
1 (8 oz) can crushed pineapple (undrained)/canned mandarinsCombine first five ingredients. In separate bowl combine the remaining ingredients. Blend all together just until the dry ingredients are moistened. Spoon into paper lined muffin tins about 3/4 full. Bake at 400 for 15 minutes. Makes about 1 dozen muffins. Enjoy!

As noted, sometimes I omit the chicken when it accompanies a big meal.~~VickiSPINACH MANDARIN ORANGE SALAD1 can (11 oz.) mandarin oranges, drained (reserve juice) – set aside4 oz. (4 cups) fresh spinach *1 cucumber, seeded & chopped½ cup red onion, chopped1 can of sliced water chestnuts (chop, if desired)1 ½ cups cooked chicken, chopped14-16 oz. frozen peas, slightly thawed5-6 eggs, coarsely choppedDRESSING:1 ½ cup mayonnaise1 ½ T. mustard1 ½ t. lemon juice¼ t. coriander, opt.2 T. reserved mandarin orange juiceINSTRUCTIONSCombine dressing ingredients. Set aside.Salad: Layer in 13” x 9” pan, in order given:1. Spinach, Cucumber, Red Onion, Water Chestnuts, Chicken, Peas, Eggs2. Spread dressing over salad. Place individual mandarin oranges on dressing, (in columns or decoratively).NOTE:- I use one small (whole) bag of baby spinach- Tastes delicious with OR without the chicken (such as, when another main course is served)
FIVE CUP SALAD with VariationsThis is another tried and true salad. Make your own variations. Some people use heavy cream, whipped in place of sour cream. When I use maraschino cherries, I usually cut them in half.FIVE CUP SALAD1 cup pineapple, drained (crushed, tidbits, or chunks)1 cup shredded coconut OR fresh grated coconut1 cup mandarin oranges, drained1 cup miniature marshmallows1 cup sour creamStir together. Refrigerature a few hours.OPTIONAL Additions:1 small jar of red or green maraschino cherries, drained OR pitted fresh cherries1 cup of walnuts or pecans1 cup bing cherries1/2 to 1 cup dried cherries OR craisinsEnjoy!
