Hawaiian Rice Salad

  • Hawaiian Rice Salad

    I found this in a Gooseberry Patch knockoff type recipe book I got from a thrift store in near perfect condition. The book is called Kitchen Comforts. Its a good book. I haven't tried this recipe yet, but I think it would be yummy. Might replace part of the sour cream with cool whip, but will try it as is first.

      

    2 cans (8 oz each) chunk pineapple in juice, reserve 1/4 cup of juice--I would be inclined to use 2 cups from a 20 oz can. The small cans are not cost efficient.

    1/4 c. chopped maraschino cherries

    1/4 c. flaked coconut

    1/4 c. sliced almonds

    2 t. sugar

    1/4 c. sour cream

    1 t. salt

    3 c. cooked rice (may be leftover)

    Cut pineapple chunks in half. Combine pineapple, cherries, coconut, and almonds in medium bowl. Blend in sugar, sour cream, salt, and reserved pineapple juice. Pour over rice and toss till mixed. Yield: 6 servings.

    OK, I made this and it is very pretty. However it isn't very flavorful and I think it is not sweet and creamy enough. I think what would be better is to add cherries, pineapple and nuts to rice pudding (LOL). Could also add some vanilla pudding to this I think. It isn't bad, but it is lacking something. It is worth tinkering with though but I am planning on cheating and adding it to rice pudding next (LOL)

    sounds interesting.  I think the addition of vanilla pudding mix mixed with cool whip sounds delish!  Will try this.
