Thanks Deb....nothing fancy about this one for sure. Go ahead and add as much dill as you'd like-or you can omit it all together-I've done that too. It doesn't get any easier than this though. I hope you enjoy it.

Carol, fresh cucumber salads are my most favorite summer salads. I can eat them every single day. Occasionally on a hot summer day that is the only thing I will eat for dinner. DH is a little pickier and will only eat cucumbers, onions and vinegar. Nothing else added, and only after it has sat in the refrigerator for a couple days. And most certainly that won't be his entire meal, either!

I agree, Carol. I've been making these since we got married (mother-in-law used to make this) and it is a very refreshing salad. I like to eat it in the evenings when I'm hungry---I don't think there's many calories in this at all. My other favorite cucumber salad is garden tomates cut in chunks, salt, cucumbers and fat free italian dressing. Very nice picture!
Oh, just edited this to add that here's another really good cucumber salad with all the ingredients you mentioned, but no vinegar. Add fat free sour cream and a little sugar to the other ingredients--so simple and good, too.

Hi Suziee-I'm with you-I can eat just this for lunch and be very happy-in fact I did that just today. Somehow I never get sick of this salad..........probably because it IS so simple. Thanks for your thumbs up on the photos-I know Bob would have been MUCH more creative-I was too darned HUNGRY!

Hi Carole-I've been known to sneak a few slices of cucumber out of the bowl at night when I walk by the refrigerator. Our cherry and grape tomatoes are coming in and some more cucumbers will be ready in a day or so-I'll be happy to have a mixture of those with whatever is being served that night. Seems the season for fresh garden vegetables is SO short here in New England-I enjoy each and every bit I can get from my garden or my father in law's. Saves some money on the grocery bill too!
