Fresh-picked vegetables are such a treat-be it from your backyard garden or purchased from a farm stand or farmer's market.

We've been sort of lucky this year and have had some things actually do well in our garden.....cucumbers are one of those things.  This makes me a very happy person, because it allows me to make one of my hands-down favorite salads.

I got this recipe from my neighbor Kay years ago. I look forward to making it often-especially with fresh picked cucumbers.

I call this salad "a bowlful of summer."  It's quick to put together and uses VERY basic ingredients.  It has a clean, light taste that isn't overpowered or weighed down by anything.  Its simplicity allows the cucumbers to shine.

What I love is it lasts a long time in the refrigerator and tastes better the longer it sits.

I didn't have fresh dill this time, so used 1 tsp. dried dill weed (thank you Cyndy-that dill from Ikea is WONDERFUL)....it worked just fine.

The cucumbers and fresh parsley came from the garden so it's not only tasty, but economical too!

If you love cucumbers like we do, I hope you'll give this a try......

    KAY'S SWEDISH CUCUMBER SALAD

    7 large unpeeled cucumbers
    6 Tbsp. sugar
    1 Tbsp. chopped fresh parsley
1-2 Tbs. chopped fresh dill (or 1 tsp. dried dillweed)
3/4 c. white or apple cider vinegar (I use cider vinegar)
1 small onion, thinly sliced (optional-I always add onion)

Score cucumbers by running the tines of a fork down the sides.  Slice very thin; place them, along with the onions (if using), in a deep bowl. Press down on the cucumbers with the palms of your hands to release some of the juices. Sprinkle with sugar, parsley and dill; toss and pour vinegar over.  Let sit at room temperature for 30 minutes, then press again.  Juice should cover cucumbers.
Cover and chill well before serving.  Serves 4-6.

Thanks Deb....nothing fancy about this one for sure.  Go ahead and add as much dill as you'd like-or you can omit it all together-I've done that too.  It doesn't get any easier than this though.  I hope you enjoy it.

Sounds like you're getting a nice haul from your Dad's garden and your Mom's kitchen-that's fantastic!  Enjoy-hard to believe there's only one more month of summer isn't it?  Where does the time go?

Carol, fresh cucumber salads are my most favorite summer salads.  I can eat them every single day.  Occasionally on a hot summer day that is the only thing I will eat for dinner.  DH is a little pickier and will only eat cucumbers, onions and vinegar.  Nothing else added, and only after it has sat in the refrigerator for a couple days.  And most certainly that won't be his entire meal, either!

Beautiful picture!  Thanks for the recipe and review.  I have no doubt that I'll love it.

    That is gorgeous!

I just put cucumbers on the shopping list.

Maybe I can try it with zucchini, which I do have.

I agree, Carol.  I've been making these since we got married (mother-in-law used to make this) and it is a very refreshing salad.  I like to eat it in the evenings when I'm hungry---I don't think there's many calories in this at all.  My other favorite cucumber salad is garden tomates cut in chunks, salt, cucumbers and fat free italian dressing.  Very nice picture!

Oh, just edited this to add that here's another really good cucumber salad with all the ingredients you mentioned, but no vinegar.  Add fat free sour cream and a little sugar to the other ingredients--so simple and good, too.

Hi Karla-I think this is one of my favorite ways to eat cucumbers in the summer.  Have fun at your get together.

Thanks Cyndy-can't wait for my other half to get home so he can take his photography job back.......I'd rather cook!!  :)  Oh yes, this would be wonderful for your meeting-nice and light....

Hi Nancy-I hope you like these!

Woo hoo Jolene-fresh cucumbers!  I used to love it when my Dad passed on the excess from their garden--also wish he'd passed his green thumb on to me......I think mine is BLACK! Sheesh.

Hi Suziee-I'm with you-I can eat just this for lunch and be very happy-in fact I did that just today.  Somehow I never get sick of this salad..........probably because it IS so simple.  Thanks for your thumbs up on the photos-I know Bob would have been MUCH more creative-I was too darned HUNGRY!

Thank you Dorothy-I've never tried zucchini in a salad like this......maybe it would work????

Hi Carole-I've been known to sneak a few slices of cucumber out of the bowl at night when I walk by the refrigerator.  Our cherry and grape tomatoes are coming in and some more cucumbers will be ready in a day or so-I'll be happy to have a  mixture of those with whatever is being served that  night.  Seems the season for fresh garden vegetables is SO short here in New England-I enjoy each and every bit I can get from my garden or my father in law's.  Saves some money on the grocery bill too!

    Thanks everyone,

    Carol and everyone,

These are sooooooooo good! I love them! I am now in the cucumber club with Carol. Can I be vice president? Next year I am definitely planting my own. I put them on my blog, and linked back to this post. Take a look:
