    Grilled Eggplant
    Grilled eggplant with a little balsamic vinegar and herbs and olive oil.
    Cook Time: 15 minutes
    Total Time: 15 minutes
    1 large eggplant
    3 tablespoons olive oil
    2 tablespoons balsamic vinegar
    2 cloves garlic, very finely minced
    1 pinch each thyme, basil, dill, and oregano
    salt and freshly grated black pepper
    Heat grill.
    When grill is hot, slice eggplant about 1/2-inch thick. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic, herbs, salt, and pepper. Brush both sides of the eggplant slices with the oil and vinegar mixture.
    Place eggplant on the hot preheated grill. Grill about 15 to 20 minutes, turning once.

    I have been searching for a recipe that takes the bitterness out of eggplant and this is it. The balsamic vinegar helps to cook the eggplant just a little more inside, breaking down those tough cells and letting the flavor out. Normal grilling of eggplant causes the outer layer to seal and the inside never cooks, but this really does the job. Eating this is a pure heaven and with a little Pinot Noir.....MMMMM....MMMMMM!

    Great recipe, easy too. I marinated my eggplant in the mixture for about 10 minutes prior to grilling. This is absolutely the tastiest eggplant I have ever had.

    Gm Linda, I see you are cooking already ~  That looks  delicious~  Have you ever soaked your eggplant in Milk?  It will tone down the bitterness. Coffee
