    Berry-Cream Cookie Snaps

     Berry-Cream Cookie Snaps
    My mom and I made up this recipe by combining two others. These cute cookies are crispy on the outside and light and fluffy inside. You could also bake the cookies flat and serve the filling as a cookie dip if you like.
    26 ServingsPrep: 40 min. + chilling Bake: 30 min. + cooling

    Ingredients

    • 4 ounces cream cheese, softened
    • 1/4 cup sugar
    • 2 tablespoons seedless strawberry jam
    • 1/4 cup heavy whipping cream, whipped
    • 1 to 3 drops red food coloring, optional

    • BATTER:
    • 1/2 cup sugar
    • 1/3 cup all-purpose flour
    • 2 egg whites
    • 1/4 teaspoon vanilla extract
    • 1/8 teaspoon salt
    • 1/4 cup butter, melted and cooled
    • 1/2 cup chopped fresh strawberries
    • Additional sugar

    Directions

    • For filling, in a small bowl, combine cream cheese, sugar and jam
    • until blended. Fold in whipped cream and food coloring if desired.
    • Chill.
    • In a small bowl, whisk the sugar, flour, egg whites, vanilla and salt
    • until smooth. Whisk in butter until blended. Line baking sheets with
    • parchment paper. Preparing four cookies at a time, drop batter by
    • 1-1/2 teaspoonfuls 4 in. apart onto prepared pan. Bake at 400°
    • for 5-8 minutes or until edges are lightly browned
    • Immediately remove one cookie at a time from parchment and form into
    • a tube around a greased clean round wooden clothespin. Press lightly
    • to seal; hold until set, about 20 seconds.
    • Remove cookie from clothespin; place on waxed paper to cool. Continue
    • with remaining cookies. If cookies become too cool to shape, return
    • to oven for 1 minute to soften. Repeat with remaining batter.
    • Just before serving, pipe or spoon filling into cookie shells. Dip
    • end of cookie into strawberries and additional sugar. Refrigerate
    • leftovers. Yield: about 2 dozen.

     Rosettes
    "Dipping the edges of these traditional favorites in icing defines their lacy pattern," says field editor Iola Egle of McCook, Nebraska.
    24 ServingsPrep: 20 min. Cook: 30 min.

    Ingredients

    • 2 eggs
    • 2 teaspoons sugar
    • 1 cup milk
    • 3 teaspoons vanilla extract
    • 1 cup all-purpose flour
    • 1/4 teaspoon salt
    • Oil for deep-fat frying

    • ICING:
    • 2 cups confectioners' sugar
    • 1 teaspoon vanilla extract
    • 1 to 3 tablespoons water

    Directions

    • In a small bowl, beat eggs and sugar; stir in milk and vanilla.
    • Combine flour and salt; gradually add to batter until smooth.
    • Heat 2-1/2 in. of oil to 375° in a deep-fat fryer or electric
    • skillet. Place rosette iron in hot oil, then dip in batter,
    • three-fourths up the sides of iron (do not let batter run over top
    • of iron). Immediately place in hot oil; loosen rosette with fork and
    • remove iron.
    • Fry rosettes 1-2 minutes on each side or until golden brown. Remove
    • to paper towel-lined wire racks. Repeat with remaining batter.
    • For icing, combine the confectioners' sugar, vanilla and enough water

    I've been fixing these cookies for so long, I don't recall where the recipe came from. They're a "must" at our house.
    24 ServingsPrep/Total Time: 30 min.

    Ingredients

    • 3 egg yolks
    • 3 tablespoons sugar
    • 3 tablespoons heavy whipping cream
    • 1/2 teaspoon ground cardamom
    • 1 to 1-1/4 cups all-purpose flour
    • Oil for deep-fat frying
    • Confectioners' sugar

    Directions

    • In a large bowl, beat egg yolks and sugar until light and
    • lemon-colored. Add cream and cardamom; mix well. Gradually add flour
    • until dough is firm enough to roll.
    • On a lightly floured surface, roll into a 15-in. square. Using a
    • pastry wheel or knife, cut into 15-in. x 1-1/2-in. strips; cut
    • diagonally at 2-1/2-in. intervals. In the center of each diamond,
    • make a 1-in. slit, pull one end through slit.
    • In an electric skillet or deep-fat fryer, heat oil to 375°. Fry
    • bows, a few at a time, for 20-40 seconds or until golden brown on
    • both sides. Drain on paper towels. Dust with confectioners' sugar.
    • Yield: 4 dozen.

    Ingredients

    • 2 egg whites
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon almond extract
    • 1/8 teaspoon cider vinegar
    • 1/2 cup sugar
    • Orange food coloring, optional
    • 1-1/2 teaspoons miniature semisweet chocolate chips

    Directions

    • Place egg whites in a small bowl; let stand at room temperature for
    • 30 minutes. Add extracts and vinegar; beat on medium speed until
    • soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on
    • high until stiff glossy peaks form and sugar is dissolved, about 6
    • minutes. Beat in food coloring if desired.
    • Cut a small hole in the corner of a pastry or plastic bag; insert a
    • #10 round pastry tip. Fill bag with egg white mixture. Pipe
    • 1-1/2-in.-diameter ghosts onto parchment paper-lined baking sheets.
    • Add two chips on each for eyes.
    • Bake at 250° for 40-45 minutes or until set and dry. Turn oven
    • off; leave cookies in oven for 1 hour. Carefully remove from
    • parchment paper. Store in an airtight container. Yield: 2-1/2 dozen.

    Mother prepared these soft cookies for holidays and special-occasion meals. My seven siblings and I gobbled them up as fast as she made them. I still can't resist the cinnamon-sugar coating. —Jerri Moror, Rio Rancho, New Mexico
    30 ServingsPrep: 20 min. Bake: 15 min.

    Ingredients

    • 2 cups shortening
    • 1 cup sugar
    • 2 eggs
    • 2 teaspoons aniseed
    • 6 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1 teaspoon salt
    • 1/4 cup apple juice
    • 1/2 cup sugar
    • 1 teaspoon ground cinnamon

    Directions

    • In a bowl, cream shortening and sugar until fluffy; add eggs and
    • aniseed. Combine flour, baking powder and salt; add to the creamed
    • mixture. Add apple juice and mix well.
    • On a floured surface, knead until well blended, about 4-5 minutes.
    • Roll dough to 1/2-in. thickness; cut into 2-in. shapes. Place on
    • greased baking sheets.
    • Bake at 375° for 12-16 minutes or until lightly browned. Combine
    • sugar and cinnamon; roll cookies in the mixture while still warm.
    • Cool on wire racks. Yield: about 5 dozen.

    Our children look forward to helping me bake these cute cat cookies each year. They've become experts at making the faces with candy corn and Red-Hots. —Kathy Stock, Levasy, Missouri
    12 ServingsPrep: 25 min. Bake: 10 min.

    Ingredients

    • 1 cup butter, softened
    • 2 cups sugar
    • 2 eggs
    • 3 teaspoons vanilla extract
    • 3 cups all-purpose flour
    • 1 cup baking cocoa
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 24 wooden craft or Popsicle sticks
    • 48 candy corn candies
    • 24 red-hot candies

    Directions

    • In a bowl, cream butter and sugar. Beat in eggs and vanilla. Combine
    • the flour, cocoa, baking powder, baking soda and salt; gradually add
    • to the creamed mixture. Roll dough into 1-1/2-in. balls. Place 3 in.
    • apart on lightly greased baking sheets.
    • Insert a wooden stick into each cookie. Flatten with a glass dipped
    • in sugar. Pinch top of cookie to form ears. For whiskers, press a
    • fork twice into each cookie. Bake at 350° for 10-12 minutes or
    • until cookies are set. Remove from the oven; immediately press on
    • candy corn for eyes and red-hots for noses. Remove to wire racks to

    Pumpkin Chocolate Chip cookies

    1 box cake mix (I use spice and carrot)

    15 oz can of pumpkin

    1/2-1 cup of chocolate chips

    Mix cake mix and pumpkin together. Stir in chips.  drop by spoonfuls onto a greased cookie sheet. Bake in 350 oven for 10 minutes.

     Hi Friends!

    I made these last week to take camping.    The get better after sitting in an air tight container for a day or two. The recipe is from the TOH cookbook  The Best of Country Cooking 2003

    Chocolate Cappuccino Cookies

    1 tablespoon instant coffee granules

    1 tablespoon hot water

    1 egg white

    3/4 cup plus 1 tablespoon sugar, divided

    1/4 cup canola oil

    2 tablespoons corn syrup

    2 teaspoons vanilla extract

    1 1/4 cups flour

    1/2 cup baking cocoa

    1/4 teaspoon salt

    In small bowl, dissolve coffee granules in hot water.  In a mixing bowl, combine the egg white,3/4 cup sugar, oil, corn syrup,vanilla and coffee; beat until well blended.  Combine the flour, cocoa and salt; gradually add to coffee mixture.

     Roll into 1 inch balls.  Place 2 inches apart on ungreased baking sheets.  Flatten to 1/4 inch thickness with a glass dipped in the remaining sugar.  Bake at 350 for 5-7 minutes or until center is set.   Remove to wireracks to cool.  Store in an air tight container.  Yield: 3 1/2 dozen. (I got closer to 50 cookies)

    The dough is sticky, it helps to dampen palms when rolling into the small balls.

    I love cookies of all kinds.  I baked some of these over the weekend.  They are almost gone already.

    Reese's chewy chocolate cookies

    Ingredients:

    • 2 cups all-purpose flour
    • 3/4 cup HERSHEY'S Cocoa
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1-1/4 cups (2-1/2 sticks) butter or margarine, softened
    • 2 cups sugar
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 1-2/3 cups (10-oz. pkg.) REESE'S Peanut Butter Chips
     

    Directions:

    1. Heat oven to 350°F. Stir together flour, cocoa, baking soda and salt; set aside.

    2. Beat butter and sugar in large bowl with mixer until fluffy. Add eggs and vanilla; beat well. Gradually add flour mixture, beating well. Stir in peanut butter chips. Drop by rounded teaspoons onto ungreased cookie sheet.

    3. Bake 8 to 9 minutes. (Do not overbake; cookies will be soft. They will puff while baking and flatten while cooling.) Cool slightly; remove from cookie sheet to wire rack. Cool completely. About 4-1/2 dozen cookies

    OK...let's get the cookie recipes rollin!

    Boys are off from school today and tomorrow. Tried to go bowling with them today but the alley changed it's hours and opens at 4! So we went to mini golf.

    I'm so excited - tomorrow my editor is launching her new book Cookielicious. There should be some yummy recipes. If I get a copy, I'll certainly share some. I've never been to a launch party and since I'm not really staff, I'm honored she sent me tickets. My GF and I are going. She often treats me like part of her team and I know I am but not being in the office and being a home office employee it makes me feel good. When the section won a prestigious award she thanked me for my contributions that were included in the issues submitted for the award. Now I tell people that I write for an award winning food section. It's cool!
