    any yummy recipes to share using some sort of beef roast, beef stew meat, etc?  I am not a fan of hamburger.......................

    JIM’S BARNYARD CHILI


    Serves:  4-6

    Effort:   easy

    Comments:   This makes a nice thick wonderful chili.  We like to cook it in a dutch iron skillet.  Also to make it up the night before (cooking meat and adding ingredients and bringing to a light boil), then put in fridge.  Then bring to a boil, then simmer for a 3-4 hours or so on the stove.  Can also be done in a slow cooker (simmer all day) or in a plan dutch oven.

     

    INGREDIENTS: 

    1 – 1 1/2 lbs. lean beef stew meat (cut into small chunks)

    1 – 1 1/2 lbs. lean pork stew meat (cut into small chunks)

    1 med. - large diced onion (we prefer yellow)

    2 t. (heaping) minced garlic (we use from a jar)

    2-3 T. canola oil

    1 can (14.5 oz.) beef broth

    2 (10 oz.) can diced tomatoes with diced green chilies

    2 (16 oz.) can chili beans

    1 pkg. (.87 oz.) brown gravy mix

    1 pkg. (.87 oz) pork gravy mix

    1/4 t. paprika

    1/4 t. ground cumin

    4 t. chili powder

    1-2 t. red pepper flakes (for heat)(optional)

     

    INSTRUCTIONS: 

    In cast iron dutch oven add the canola oil.  Heat up, then add stew meats, onion and garlic.  Cook til almost done.  Then add remaining ingredients.  Bring to a boil and then turn down to simmer for 3-4 hours, stirring occasionally.  After it’s almost done, taste.  Then decide if you need to add salt & pepper.

    It’s really great served with cornbread.

    cookinnutt I saw on the food network that barefoot contessa an d her friend made chili - she didn't use hamburger either and it looked good....

    This is our favorite beef chili recipe.  It calls for a combination of both ground beef and beef stew meat, but you could easily just double the cubed beef sirloin and omit the ground meat.

    I must admit, I do like the texture of both meats in this chili.  Also, you don't need to use all four cans of beans if you want.  This does make a big pot, but it freezes well, too.

    2 teaspoons oil

    2 onions -- chopped

    3 cloves garlic -- minced

    1 pound lean ground beef

    3/4 pound beef sirloin -- cubed

    1 (14 1/2 ounce) can diced tomatoes

    1 can dark beer

    1 cup strong coffee

    2 (6 ounce) cans tomato paste

    1 can beef broth

    1/4 cup brown sugar

    1/4 cup chili powder

    1 tablespoon cumin

    1 tablespoon cocoa

    1 teaspoon oregano

    1 teaspoon coriander

    1 teaspoon salt

    4 (15 ounce) cans kidney beans -- drained

    4 chili peppers -- jalapenos

    Heat oil.

    Cook onions, garlic and meat until brown.

    Add tomatoes, beer, coffee, tomato paste and beef broth.

    Add spices. Stir in 2 cans of kidney beans and peppers.

    Reduce heat and simmer for 1 1/2 hours.

    Add 2 remaining cans of kidney beans and simmer for another 30 minutes.
