Old Fashioned Bean with Ham Soup

    1 lb. dried Great Northern beans, rinsed, drained & picked over
    2 smoked ham hocks, about 2 lbs. or scraps & pieces from leftover ham
    1 lg. onion, chopped
    1 clove garlic, minced
    1 lg. potato, pared & cubed
    2 ribs celery, finely chopped
    1 lg. carrot, shredded
    2 tbsp. fresh parsley, minced
    Pepper
    In large soup pot combine beans and 2 1/2 quarts water. Discard any beans that float to the surface. Bring to a boil, cover. Continue to boil 2 minutes. Remove from heat and allow pot to stand, covered 1 hour. Add ham hocks, onion, garlic; cover and bring to boil. Reduce heat and simmer 2 hours. Add potatoes, celery, carrot and parsley. Cover and continue simmering, at least 1 hour or longer.

    Remove ham hocks, separate meat from fat and bones. Dice meat and return to soup. Discard fat and bones. Season to taste with black pepper. Makes 6 hearty servings.

    Gm Alliea, I too love Bean soup ~  My but the price of ham hocks has really gone up ~  Another good one to use is Fat back or even plain bacon for some nice flavor ~  Have a great day ~  Janie

    Janie, this will be perfect for our soup and salad night with friends coming soon. I don't usually use a recipe but I will this time. hmmm, wonder what kind of wine goes with ham and beansWink

    I am still debating on a couple more soups but this will be one of them. It is definitely a casual night~I might even start up the grill if the wind isn't blowing too hard! I still have several smoked hocks in the freezer as we have hogs butchered at least once a year and this will be a good way to use a couple of them(one of our friends thinks ham and bean soup is gourmet dining!)

    I love this soup but when I make it, I'm the only one at my house who eats it. My kids' babysitter's husband used to make this soup - he added hot sauce to his. Yum!

    Nothing better than old fasioned soups.

    When I was a bride,I found a recipe for bean soup using salt pork.Everyone said the soup was great.Wish I had kept that recipe.Have you seen the price of salt pork ? Geesh !!
